    1 medium onion, chopped

    1 large clove garlic, minced

    1 cup cauliflower, riced

    1 medium bell pepper, deseeded and diced

    6 eggs, beaten

    ½ cup coconut milk

    Salt and pepper to taste

    1 green onion, thinly sliced
