Ingredients:
2 teaspoons coconut oil
2 breakfast sausages, discard casing
1 medium onion, chopped
1 large clove garlic, minced
1 cup cauliflower, riced
4 button mushrooms, sliced
1 medium bell pepper, deseeded and diced
6 eggs, beaten
½ cup coconut milk
Salt and pepper to taste
1 green onion, thinly sliced
Directions:
1. Spread the cauliflower over the bottom of a heatproof dish.
2. Set your Instant Pot to SAUTÉ. Heat the coconut oil.
