Baked Vanilla Pear Oatmeal 1/2 cup sugar 1 vanilla bean, split lengthwise 2 1/2 cups old-fashioned rolled

oats 1 teaspoon baking powder 1/2 teaspoon sea salt 1/4 teaspoon nutmeg 2 cups milk 1 egg 2 tablespoons butter, melted and cooled 2 cups thin-sliced pears Preheat the oven to 375 degrees. Grease an 8-inch square baking dish. Melt the butter and set aside to cool. Split the vanilla bean and rub the pod and any vanilla seeds that get on your fingers into the sugar. Save the empty pod for later use. In a medium bowl, combine the oats, baking powder, sea salt, and nutmeg. In a small bowl, whisk together the butter, milk, sugar, and egg. Spoon half of the oat mixture into the baking dish, and then half of the sliced pears. Add the remaining oat mixture and arrange the remaining pear slices on the top, pushing them into the oats a bit. Pour in the milk mixture and place in oven. Bake for 35 45 minutes, or until the oatmeal is a light golden brown along the edges, and the center has set up. Cool for 10 or 15 minutes, slice, and serve.
