Dish Name Double Choclate Sponge Ingredients for 3800 gms batter Qty Unit Description 0.75 Kgs. Flour 0.6 Kgs. Eggs 0.2 Kgs. Cocoa 0.7 Kgs. Sugar 0.2 Kgs. Chocolate 0.02 Kgs. Baking soda 0.02 Kgs. Baking powder 0.9 Litres Milk 0.4 Kgs. Butter Method whisk the eggs and sugar till it reaches ribbon stage Combine butter, chocolate and milk and melt over a double boiler sift flour, cocoa powder, baking soda and baking powder and fold into the egg mixture Fold in the melted butter and chcolate mix spread on a lined tray and bake in the oven for 20 mins at 180 celcius
