Every now on then popular artists, singers, and basketball players from other countries visit the Philippines, and
whenever they are asked about their experience in the country, they always say something in common. (Know what
that is?) They all say I had this wonderful chicken dish. Whats it called again? Adobo? Insert foreign accent-
Why so? There is no one answer to that for sure. But whats sure is that the Filipinos are good cooks, and that their
dishes can satisfy almost any kind of taste bud. But what is so special about Adobo? Aside from its popularity, is
there any particular reason why people love it? (HA! Great question!) But Im afraid theres also no one answer for
that. However, I can try and show you whats in it (Oh gods, please not MSG!). Maybe to give you a hint for the
answer.
Ingredients
1 kg Pork cubes
1/2 cup Soy sauce
1/2 cup whole garlic cloves
1/2 cup Vinegar
1/2 tbsp whole peppercorn
2 tbsp oil
1/4 cup brown sugar
1 liter water
6 pcs bay leaf
Procedure
Marinade pork in soy sauce, vinegar, garlic, bay leaf and
pepper for 30-45 minutes.
Drain the pork and set aside.
Heat 2 tbsp of oil in pan on high flame.
Saute pork and add the brown sugar.
Wait till pork turns brown or until sugar caramelizes.
Add in the marinade and water. Boil for 5-8 minutes.
Lower the heat and simmer (about 30-40 minute
