12 STEPS OF SEQUENCE OF SERVICE

1. SMILE & GREET THE GUEST


"Good Evening Sir/Madam welcome to _________"
Greet within 10 seconds, Smile, Eye Contact, Seek Guest Name

"How are you?" or How are you this morning/ afternoon/this evening?"

"May I have your Name Please?"

2. CHECK IF GUEST HAS RESERVATION


Have you made any reservations for your lunch / dinner today Mr./ Mrs. Jones ? Yes, we do have your table ready, would you like to have a pre-dinner drink first at the Pool Bar? We have a new cocktail menu.

3. SEAT THE GUEST


We have your table ready for you please let me know if you are happy with this table?
Offer chair assistance, Ladies & Older People First Serve Cold/Hot Towel

Where would you like to sit, Inside or Outside?

Would you like the same table as yesterday (if available) or would you like to sit somewhere else afternoon/evening?.

4. SUGGEST & SERVE APERITIFS


WATER Would you like to have STILL or SPARKLING WATER?
Remove used cold/hot towels

"SPIRITS Would you like a single or a double ____?

5. TAKE THE FOOD ORDER


Would you like to try our Soup of the Day XXX? How would you like your steak to be cooked?
Serve from the right hand side, ladies first unless there are children. Ensure you have checked the order in POS before sending to the kitchen

Sir / Madam, may I repeat your order Sir / Madam, you have ordered XXX as a starter and for main course the XXX.

6. SERVE THE WINE & OTHER BEVERAGES


"Sir/Madam you odered the (NAME), (GRAPE), (YEAR)" (Pour small amount for the host to try) "Please can you taste the wine
Serve from the right hand side, ladies first, host last

8. SERVE THE FOOD

Serve from the right hand side, ladies first, host last. Use position numbers and announce the food to the actual guest not to the whole table.

9. CLEAR PLATES
Do not Stack Plates Call away 2nd course when guests are through first course Remove SnP, Cutleries, BnB Plates etc.

10. OFFER DESSERTS


Would you like some dessert this evening?
If no dessert suggest liqueur coffees or after dinner cocktails. Provide Toothpicks.

11. SERVE DESSERTS & UPSELL COFFEE/LIQUEUR COFFEES

Provide Toothpicks.

12. PRESENT THE BILL & BID FAREWELL


Thank you for having dinner with us, enjoy the rest of your evening.

Only provide the bill upon do not ask. Verify signature if paying by credit card. Ensure you bid or your colleague bid farewell to the guest.
