Fresh Fruit Cobbler

Ingredients

 1 cup sliced fresh peaches


 3/4 cup peeled, cored and sliced apple
 3/4 cup peeled, cored and sliced pear
 1/2 cup blueberries
 1/2 cup pitted and sliced cherries
 1/2 cup pitted and sliced plums
 1 egg

 3/4 cup white sugar


 1/4 cup milk
 1 cup all-purpose flour
 1 teaspoon baking powder
 1/2 teaspoon salt
 1/2 teaspoon vanilla extract
 2 tablespoons butter, melted

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish.
2. Arrange the peaches, apple, pear, blueberries, cherries, and plums in the prepared baking dish. In a
medium bowl, beat egg, sugar, and milk. In a separate bowl, sift together flour, baking powder, and salt; stir
into the egg mixture. Stir in vanilla and melted butter. Cover the fruit with the batter mixture.
3. Bake 30 minutes in the preheated oven. Cobbler should be bubbly and lightly browned. Serve warm.
Banana Pudding

Ingredients

 2/3 cup white sugar


 1/3 cup all-purpose flour
 1/4 teaspoon salt
 3 eggs, beaten
 2 cups milk

 1/2 teaspoon vanilla extract


 2 tablespoons butter, softened
 2 bananas, peeled and sliced
 1/2 (12 ounce) package vanilla wafer cookies

Directions

1. In medium saucepan combine sugar, flour, and salt. Add eggs and stir well. Stir in milk, and cook over low
heat, stirring constantly. When mixture begins to thicken, remove from heat and continue to stir, cooling
slightly. Stir in vanilla and butter until smooth.
2. Layer pudding with bananas and vanilla wafers in a serving dish. Chill at least one hour in refrigerator before
serving.
Eggnog Custard

Ingredients

 1 egg, beaten
 1 cup eggnog

 2 tablespoons white sugar


 2 pinches ground nutmeg

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Fill an 8x8 inch baking dish with 1 inch of water.
2. Beat the egg, eggnog, and sugar together in a bowl. Pour into two small baking dishes. Sprinkle tops with
nutmeg. Place the baking dishes into the dish with the water. Add more water if necessary to reach halfway
up the sides of the baking dishes.
3. Bake in preheated oven until tops are set, 35 to 45 minutes. Cool before serving.
Fruity Gelatin Salad

Ingredients

 7 fluid ounces lemon-lime flavored carbonated beverage


 2 cups miniature marshmallows
 1 (3 ounce) package lime flavored Jell-O® mix
 8 ounces cream cheese

 1 (20 ounce) can crushed pineapple with juice


 3/4 cup chopped pecans
 1 teaspoon mayonnaise
 1 cup frozen whipped topping, thawed

Directions

1. In a non-reactive sauce pan, combine the carbonated beverage and marshmallows; heat until dissolved
stirring constantly. Add gelatin and stir until dissolved.
2. Add cream cheese and blend by hand or with electric mixer until smooth.
3. Add pineapple and juice, nuts, mayonnaise and whipped topping. Pour into 7x11 dish, chill until set.
Cream Cheese Pie

Ingredients

 2 (8 ounce) packages cream cheese, softened


 2 eggs
 1 cup white sugar
 1 teaspoon vanilla extract

 1 cup sour cream


 2 tablespoons white sugar
 1/4 teaspoon vanilla extract
 1 (9 inch) prepared graham cracker crust

Directions

1. Combine cream cheese, eggs, 1 cup sugar, and 1 teaspoon vanilla in the bowl of an electric mixer. Mix on
low speed until smooth. Pour filling into graham cracker crust.
2. Bake at 350 degrees F (175 degrees C) for 35 minutes. Remove pie from oven. Raise oven temperature to
450 degrees F (230 degrees C).
3. In a small bowl, blend sour cream, 2 tablespoons sugar, and 1/4 teaspoon vanilla together. Gently spread
mixture over pie.
4. Bake for five minutes before serving.
