Handling AeroWhip® Foam Stabilizers in


Non-Dairy and Vegetable Toppings
AeroWhip® foam stabilizers are the most effective stabilizers on the market today for providing nat-
ural, cream-like texture, significantly improving foam stiffness, stability, overrun, and controlling syneresis.
To help ensure success with your formulation we recommend reviewing these handling guidelines.
Good dispersion and hydration are keys to success with any food hydrocolloid. Many customers prefer
to use their existing processing to hydrate AeroWhip foam stabilizers. It is important to remember that
AeroWhip foam stabilizers are insoluble above 40°C which means that high temperatures may help dis-
perse the stabilizer and low temperatures will accelerate hydration. During normal processing most stabiliz-
ers, including AeroWhip products, actually precipitate and re-hydrate upon cooling – this does not cause
problems with homogenization or other processing steps. Please select the situation which best matches
your plant capabilities:

Dry blend ingredients, add to cool water, raise temperature, add hot oil (preferred method)
In this method the stabilizer is fully hydrated for 20-30 minutes in ambient/cool water before raising
the solution temperature and adding hot oil. Cooler solution temperatures will accelerate hydration. When
the solution temperature exceeds 40°C the AeroWhip will precipitate as an extremely fine particle which will
quickly re-hydrate on cooling. If your plant does not have high shear mixing equipment such as a Liquiverter,
it is recommended that you choose a highly dispersible grade such as AeroWhip 621 EZ or 631 EZ.

Add AeroWhip foam stabilizers to a portion of hot water to disperse, then add cool water to hydrate
(“hot/cold” method eliminates lumping)
AeroWhip foam stabilizers may be dispersed in a portion of hot water (>50°C for a maximum of 5
minutes) then cool water and remaining dry ingredients are added to this aqueous phase and mixed for a
minimum of 20 minutes until fully hydrated. The temperature of the entire solution is then raised and hot
oil added. The use of the “hot/cold” method eliminates any risk of lumping.

This method uses hot water to disperse the ingredients. Mixing AeroWhip for greater than 10 minutes at
temperatures >40°C is not recommended. In this process most stabilizers are hydrated only after homogeniza-
tion and cooling. Fine grind AeroWhip types are ideal in this situation – AeroWhip 610X and 630X. Gentle
agitation in the finished product hold tank is recommended for up to 1 hour to fully hydrate the stabilizer.

This method uses hot oil to disperse the ingredients and hot water to form the emulsion. In this process
most stabilizers are hydrated only after homogenization and cooling. Fine grind and lower molecular
weight AeroWhip® types are preferred for this method – AeroWhip 605, 610, and 610X are recommended.
