CORDILLERA ADMINISTRATIVE REGION (CAR)


Gastronomy
The following are the most common and famous delicacies in CAR:
• Abuos – this is a delicacy with ant-eggs as the main ingredient and is also known as ant-egg caviar. This dish
is often served sautéed in garlic or prepared as adobo, though it can be eaten raw (Travelbook, 2011).
• Arabica – it is an organically-grown coffee made of beans from trees that are 50 to 100 years old with no
chemicals used during the harvest (Alcantara, 2008).
• Lechon – this is a whole spit-roasted pig prepared by stuffing it with herbs and vegetables. The pigs are
slowly roasted, usually by hand-turning over hot coals for hours, until its skin becomes crispy and turns
reddish brown, while the inside flesh becomes tender and flavorful (Travel Food and Drink, 2011).
• Etag – it is a salted pork that is kept underground in earthenware jars to age. It is not a dish in itself, as it is
most often used as an ingredient in other viands. It adds a very distinct flavor to meat or vegetable dishes
(Travelbook, 2011).
• Palileng – is a viand made of a river fish abundant in Abra. It is usually cooked with vinegar and salt
(Positively Filipino, 2015).
• Patupat – this is a rice delicacy that is wrapped in palm or banana leaves with a usual shape of a large cube
(Tagalog Lang, 2002).
• Pinikpikan – it is a native delicacy made of chicken that was beaten to death using "saleng", a stick from
the core of pine trees. The chicken’s carcass is cooked without letting the blood out from its body (Cebu
Sandayong, 2011).
• Sinuman – this is a triangular-shaped rice cake that is usually served as dessert.
