HOW TO MAKE CREPES

Here is how to make crepes step by step:

 1.
In a mixing bowl, combine your crepe mix with the amount of water recommended on
the packaging.

 2.
Whisk the mix and water together until you have a smooth batter that is free of
lumps. There will be some foam that forms on the surface.
 3.
Refrigerate the batter until the foam subsides.

 4.
Preheat your crepe maker to the proper temperature. The ideal temperature for
cooking crepes is approximately 400 degrees Fahrenheit.
 5.
Pour your batter onto the crepe maker. It should be thin enough that it spreads out a
bit naturally. Be ready to spread your batter quickly, as the high temperature of your
crepe maker will start to cook the batter instantly.

 6.
Remove your crepe batter spreader from its warm water bath. Soaking your
spreader in warm water will help you to spread the batter evenly.
 7.
Hold your crepe spreader at a low angle in order to create an even distribution of
your batter.

 8.
Pressing lightly, spread your batter in a circle by turning your crepe spreader around
the pan. Make sure that your crepe does not have any holes or thin spots.
 9.
Once the crepe appears golden brown on the underside, flip it over.

 10.
Add your favorite fillings to one half of the crepe. Be careful to leave enough space
along the edge to prevent the fillings from falling onto your crepe maker.
 11.
Using an offset spatula, fold the empty half of the crepe over the half with your
fillings.

 12.
To serve, fold the crepe in half again so that it is triangular in shape and top with
powdered sugar for garnish.

Because of their thin batter and quick cooking method, making crepes can be a
tricky technique to master. Now that you've read how to make crepes step by step,
you can add this pastry to your menu. Try offering classic fillings, or let guests
choose their own filling combinations for a crowd-pleasing option at your restaurant,
cafe, or concession stand.
