Design a hydrocooling unit that can cool fruits and vegetables from 25ºC to 5ºC at a rate of 20,000 kg/h
under the following conditions: The unit is a ood type hydrocooling unit that will cool the products as
they are placed into the pool lled with water. The products will be dropped into the pool lled with water
at one end and picked up at the other end. The channel can be as wide as 3 m and as high as 90 cm. The
water is to be circulated and cooled by the evaporator section of a refrigeration system. The refrigerant
temperature inside the coils is to be –2ºC, and the water temperature is not to drop below 1ºC and not to
exceed 6ºC. Assuming reasonable values for the average product density, speci c heat, and porosity (the
fraction of air volume in a box), recommend reasonable values for the quantities related to the heat
transfer aspects of the hydrocooler for more effective cooling of products. (a) Find how long the fruits and
vegetables (select slab, cylindrical, and spherical ones) need to remain in the cooling pool (use transient
heat transfer analysis), (b) calculate the length of the cooling pool, (c) calculate the ow velocity of water
through the channel, (d) calculate the velocity of the crate (wooden box) and thus the fruits and vegetables
through the channel, (e) calculate the refrigeration capacity of the refrigeration system and heat transfer
for all components, and (f ) select the type of heat exchanger for the evaporator and the surface area on
the water side, and (g) make all heat exchanger calculations, and discuss the results from the
environmental impact point of view.
