Couple of thoughts, though.


1) Add wine and broth separately and let them cook down a bit (like making bolognese) 2) add a
Tablespoon of sugar to the tomatoes (heresy, I know) 3) Simmer for more than a few hours 4) add
the dried herbs toward the end Good Luck. We'd starve to death without meat sauce.

This makes a huge difference. The flavor changes so much over the time it's simmering that
you need to add more spices at the end to get it just right.

I like to add brown sugar instead of white. Also I find a dash of balsamic vinegar adds a nice
sweetness

A few suggestions....
-First and foremost, use ground Italian sausage, not ground beef. Pork has so much more flavor
and it really shows through in spaghetti. I can't stress this enough.
-Try adding some bay leaves and using fresh instead of dry herbs. The flavors in a spaghetti are
already so strong that you need fresh herbs in order for the flavors to show through. And in my
opinion, one should go crazy on basil.
-Canned tomatoes can be really hit and miss. If they aren't very sweet from the can, try just a
dash of sugar to boost the flavor of the tomatoes.
-This is a personal preference thing so I'm definitely not knocking it if it's something you really
like, but the idea of carrot and celery in a spaghetti sounds a little off to me. Personally, I use
green bell peppers, onions, and mushroom. And butt loads of garlic obviously. I also add a single
serrano pepper for a little bit of heat.
These are just the things I like that I think make a good sauce to my tastes, but everyone is
different. This is definitely how I would make "my" spaghetti sauce and it's perfect for me. I'd
also like to add that in the future I will definitely be deglazing my pan with red wine for my next
batch. I really need to be cooking with red wine more.
