CHAPTER I:

INTRODUCTION

Name of the Product: YESquash Tart

 YESquash Tart is a baked dish consisting of a filling over a pastry base with an open top not covered with

pastry. It is usually shortcrust pastry. The filling is a mxture of YEMA(sweet custard confectionary) and

SQUASH(Puree). A dessert perfect in any occassions.

Raw Material: Squash(main Ingredient)

 Squash or “kalabasa” is a viny, creeping and trailing crop producing fruit and considered to be one of the most

delicious vegetables. It is the most commonly and regularly grown among the cucurbits because it is a rich

source of vitamin A, phosphorus and calcium. The young and tender shoots make good vegetable salads.

 Classifications:

Scientific name: Cucurbita moschata

Common names: English common names include Squash,winter squash, zucchini, butternut, pumpkin,

gourd, cushaw and marrow.

South African common names: leputshe (Setswana), botterskorsie (Afrikaans),

Family name: Cucurbitaceae

 ORIGIN AND DISTRIBUTION

Cucurbita were originally domesticated in Mexico, South America, and the eastern U.S. C. maxima and

especially C. fi cifolia are more cold tolerant than the other species and are thought to have been domesticated in the

tropical highlands of North and South America. MAJOR PRODUCTION AREAS IN SOUTH AFRICA Butternut

(Cucurbit moschata) is an important summer crop grown by smallholder irrigation farmers in South Africa and is a

type of winter squash. Butternut squashes are increasing in popularity because production and keeping quality are

good and sunburn is not a major problem. The harvested fruit is hardy and can be left on the land for a month or two.

It has a sweet, nutty taste similar to that of a pumpkin. It has yellow skin and orange fl eshy pulp. When ripe, it turns

increasingly deep orange, and becomes sweeter and richer. It grows on a vine. South Africa Squash is mainly grown

in the Mpumalanga Highveld, Mpumalanga Lowveld, and Gauteng (in the Vaal region).

 Number of yields/Production:

1. The United States grew 4.6 million cwt of squash for fresh market and processing in 2016 valued at $149

million. The average price for squash in 2016 was $32.70 per cwt.The 2016 crop was planted on 37,400 acres and

36,300 acres of that was able to be harvested. Squash had an average of 1,615 cwt per acre in 2016. California leads

the nation in the value of squash production followed by Florida, Georgia, and Michigan.

2. Squash is commonly grown in the Philippines throughout the year. In 2009,with a production value of

$43,441 at a volume of 247,759 metric tons (BAS, 2009)

It is commercially cultivated in Ilocos Region, Cagayan Valley, Southern Tagalog and Bicol Region. The

provinces producing semi-commercial scale are Davao, Leyte, Nueva Ecija and Batangas.

 Facts about Squash:

1. Squashes are one of the oldest known crops–10,000 years. The earliest plant grown in mexico.

2. The name  "Squash" comes from the Narragansett Native American word 'askutasquash', which means

"eaten raw or uncooked."

3. One of the first published recipes for pumpkin pie (Pompkin Pudding) was in Amelia Simmons’ 1796

cookbook, American cookery. This is the first cookbook to be written by an American and published in the

United States.

4. Presidents Washington and Jefferson grew squash in their gardens.

5. Squashes are a good source of minerals, carotenes and vitamin A, with moderate quantities of vitamins B and

C. Summer squash is high in water content, thus low in calories.

6. Philippines ranked 16th in the world production of squash together with pumpkins and gourds.

7. Squash can be grown in both the wet and dry season. It has been reported that environment can have a

marked influence on development and quality of the fruit.

8. Cucurbits are good rotational crops with other vegetables. Because they are usually grown for autumn

harvest, they can be planted in late May or early June, and therefore fit in well in a planting schedule.

9. Botanically , squash is a fruit. Use as vegetable when in cooking.

10. As a verb, squash means to compress or mash.

OBJECTIVES:

 To reach new level of quality of product which effectively increase customer satisfaction.

 To expand our knowledge and skills through a series of hands-on in creating and cooking a new food.

 To enabling us to practice a different processes involved in building a new product.

CHAPTER III:

PRODUCT DESCRIPTION

Our main ingredient is Squash or “kalabasa” (Cucurbita moschata Duch), belonging to family Cucurbitaceae, is

viny, creeping and trailing crop producing fruits and considered to be one of the most delicious vegetables. It is the

most commonly and regularly grown among the cucurbits due to its rich source of Vitamins A and C, phosphorus,

calcium and iron. It can reach a length of 4 meters or more and flowers throughout the year. Adventitious roots are

also commonly formed at its nodes. The leaves are broadly rounded and heart shaped. Flowers are erect, yellow to

deep orange in color, about 12 cm long.

*NUTRIENTS- Squash has very low calories. Phytochemicals is also present in squash. Coumarins and flavonoids

are two of the phytochemicals present in squash. It is also rich in beta-carotene. Summer squash turns out to be the

primary food source of alpha-carotene and beta-carotene. For lutein, zeaxanthin and betacryptoxanthin (three other

health-supportive carotenoids) summer squash also comes out among the top three food sources in several studies.

These antioxidants are especially helpful in protection of the eyes, including protection against age-related macular

degeneration and cataracts. If possible, the skin should not be peeled off and the rind should not be removed when

cooked. Many valuable antioxidant nutrients are found in skin and seeds of squash. Since the skin of this food is

particularly antioxidant-rich, it's worth leaving the skin intact.

Ingredient : Tart Shell- Buttery, Crispy, Crumbly tart crust that goes well with any filling.

*FLOUR, POWDERED SUGAR, BUTTER, SALT, EGG, VANILLA EXTRACT.

Ingredient: Yema Squash- combination of condenced milk and squash puree.

*Tart Shell

2 cups of flour Pinch of salt


1/2 powdered sugar 1 large egg
1/cup butter 1 tsp. Vanilla extract

 Standardized Procedure:

1. Put butter in a mixing bowl and beat using e.beater until creamy. Add vanilla extract and mix it well.

2. Add the powdered sugar and mix well. After its done add the flour, salt, and egg. Beat it until it mixed.

3. Knead it to form a dough and wrap it with plastic wrap and refrigerate for atleast 1 hour.

4. With a sharp knife, trim the edges of the pastry to fit the tart pan. Cover pan with plastic wrap and place in the

refrigerator until firm aboiut 30 mins.

5. To bake the crust; preheat the oven to 375/190 degree celcius and place rack in the center. Bake crust for 20

mins., until foil no longer sticks to the dough. Transfer crust to a wire rack and remove weights and foil.

*Yema Squash

1 1/2 can condenced milk 2 tsp of butter


1 egg yolk, pinch of salt 1/3 cup squash puree
Procedure:

In a bowl, combine C.milk,eggyolk,squash,salt. Whisk until well blended. In a wide non stick pan ,heat

butter until slightly melted and still warm. Add the milk mixture, stir to combine and cook for about 15

minutes,stirring regularly is required untill mixture thickens like a spreadable paste.
