5. Student’s Key Observations

The main observations were the production process of the Wai Wai instant noodles and
Cheese ball.

5.1 Production process of Instant Noodles

Firstly all the ingredients are mixed through the machine to form dough. With the help of
roller the dough is converted into slices. Again the slices will be cut into final slices into 2
folds.Souping causes development of color in outer and inner surface of noodles. It is mixed
along with chicken extract. About 10 gram of soup is absorbed by single cut cake.

Then frying of noodles is carried out by dipping them in hot palm oil. The noodles are made
crispy during this process. The hot noodles are cooled for some minutes into the cooling
section. Now the seasoning packet is placed on the noodle which contains chili powder, taste
enhancer and palmolein with onion flavor.

Along with seasoning it is packed in the metallic plastic with the help of roller packing
machine. The packets of noodles are now placed into the carton. Each carton contains 30
packs of noodle. The above process is completed within 8-10 minutes.
5.2 Production process of Kwiks Cheese balls
The cheese extrusion is generally made from corn grit and rice grit. About 150 kg and 17 kg
of corn and rice grit are mixed properly to form a mixed grit with some amount of water. The
mixture is loaded into the top of extruding machine. The dough puffs up and is cut to the
desired shape. Cheese ball still contains moisture so it must be dried. Cheese ball that are
dried are sent to the flavor coating section which is cheese seasoning. After the final coating,
it is dried before they are packaged. Cheese balls are finally packed into the wrapper.
