White pasta

Penne 1 cup
Capsicum red and yellow 1/2 each
Chicken sausage 4-5
Sweet corn 1/4 cup

Chopped garlic 3-4 cloves

Salt
1. Boil pasta pasta with teaspoon of salt till al dente take it out pour water to stop cooking
2. Boil chicken sausage until cooked and chop it up.
3. Boil sweet corn till cooked.
4. Meantime chop your onions (long slices), capsicum (long slices) , garlic (chop fine)
5. In a pan add oil or butter and fry chopped gralic lightly and add sausage and onions half
teaspoon oregaon and half teaspoon chill falkes and half teaspoon of pepper cook till onions
are soft then add corn add capsicum and a little salt and cook for a minute don't want the
capsicum to loose it's crunch. Add oilves.
6. For sauce heat 3 tablespoons of butter and add 2 tablespoons of maida and keep stirring
until flour is cooked but should not change colour.
7. Add 2 cups of milk while continuously stirring to avoid any lumps.
8. When it comes to a boil add 3 torn up cheese slices.Add half teaspoon oregaon and half
teaspoon chill falkes and half teaspoon of pepper.
9. Add veggies to the sauce and stir.
10. Finally add in the boiled pasta. Add salt to taste.

Onion chutney (serves 3)

Ingredients
2 Onions red large
1 large tomato
4-5 dried red chill
4 pinches of tamarind pulp
1 small handful roasted channa dhal
Salt to taste
Curry leaves
Mustard seeds
Jaggery (optional)
Vegetable oil/sunflower oil
Steps:
1. Heat up the oil (4-5 tablespoons of oil)
2. Add chill and tamarind pulp to hot oil and fry
3. Add onions and a little salt and fry untill light brown and channa dal
4. Add tomatoes and channa and cook for 3-4mins
5. Grind together with 3-4 ice cubes in a mixer
6. Heat a little oil and fry curry leaves and mustard seeds
7. Mix a teaspoon of jaggery in a little hot water and add to chutney

Poori masala
Onion 2 chopped long slices
Potatoes 3 chopped small cubes
Green chillies 3 chopped
Ginger chopped
Red chillies 3
Turmeric
Hing
Mustard seeds 1/4 teaspoon
Cumin seeds 1/4 teaspoon
Channa dal 1 pinch
Urud dal 1 pinch
Oil
Curry leaves
1. Peel and cut potatoes into small chunks place in a pot and cover with water and boil till
cooked (10-15 min)
2. Cut onions into long slices
3. Heat the oil and add the red chillies, mustard seeds,cumin seeds, channa dal first (cause
it is bigger) then urud dal and a pinch of hingh and chopped ginger
4. Add onions with some tumeric and some salt fry untill cooked soft but not brown
5. Add chopped green chillies and Curry leaves
6. Add boiled green peas (optional)
7. Finally add the boiled potatoes and stir well mashing slightly but not too much. Add a little
water if dry. Add more salt to taste.

1.Mix a little water and form a hard dough.
2.Add a little oil and knead for 15 mins.
3.Rest dough for 15 mins.
4.Roll into thin rounds and deep fry. You can cut rounds with a large round lid or plate.
5.Tap on to to puff up and fry on both sides.

• Cut 2 tomatoes and crush garlic and put in a pot of water (4-5 teacups)
• Add salt to taste
• Boil for 30-35 mins
• Add pepper and half a lime
• Add curry leaves and coriander

Pepper chicken curry

• Ingredients (serves 4)
• Garlic (2-3 large cloves)
• Ginger (1/ large piece)
• Green chili (3-4 long ones)
• Onions (2 large)
• Tomatoes(2 large)
• Chicken (1 kg curry cut)
• Pepper
• Turmeric
• Salt
• Chili powder
• Coriander powder
• Garam masala
• Curry leaves
• Cooking oil
•
• Directions
• Cut onions, tomatoes,slit the green chilies, peel & crush ginger & garlic
• In a large pan heat some oil (2tbsp)
• Parallel heat a girdle with oil and shallow fry the chicken (does not have to cook
completely just the outside)
• Add crushed ginger & garlic an fry
• Add some curry leaves & slit green chilies & fry
• Add in onions (chop either long which will cook slowly, or finely which will cook faster)
• Add a pinch of salt and fry until onions become translucent
• Add a 1/4 spoon of turmeric, large spoon of chili powder, spoon of coriander powder &
a pinch of garam masala and little salt (dont add if chicken already marinated in
salt/chili mix)
• Add in tomatoes and a little extra oil
• Cook until whole mix comes together & important to keep stirring so that bottom does
not burn (do not add water at this point). This will take up to 10 mins or cook until
tomatoes disintegrate nicely and oil begins to rise.
• Add a lot of pepper
• Add in the chicken pieces from the pan
• Pour enough water into the pan in which you fried the chicken and mix the frying oil
water and masala well and pour this water into the larger pan with rest of mix.
• This recipe does not need much water.
• Close and cook for 5-10
• Add some curry leaves and coriander and serve

Instructions
masala stuffing recipe:
firstly, in a large bowl mash boiled potatoes.
furthermore, add cooked chikpea.
also add cumin powder, chilli powder, chaat masala, aamchur powder and salt.
mix well and mash completely.
finally, masala is ready for stuffing.
pani for pani puri recipe:
firstly, in a blender jar take fistful of coriander leaves and mint leaves.
to that add ginger and green chilli.
add little water and blend.
furthermore, filter it using a sieve.
add a cup more water to extract the juice from mint and coriander.
then add tamarind juice.
also add cumin powder, chaat masala and salt.
give a good mix and pani is ready.
pani puri assembling recipe:
firstly, take puri and make a hole at the centre with the help of thumb.
furthermore, stuff a tsp of prepared masala .
followed by finely chopped onions and sev.
then add a tsp of tamarind chutney.
after that add pani into the puri.
finally, serve pani puri along with chopped onions.

Raw mango perukku

Fenugreek seeds
Mustard seeds

Aesfotida powder
How to make
1. Wash mangoes well and Cut them into small pieces removing the seeds
2. In a kadai heat oil (sufficient to coat all the mango pieces)
3. Add half a teaspoon fenugreek seeds. When they start to brown add mustard seeds. They will
immediately start popping
4. Immediately add half teaspoon Aesfotida powder stir and quickly add chilly powder 2 teaspoons
and salt 1 teaspoon. Stir well and off the stove.
5. Immediately add the two cups of cut pieces of mangoes and stir well till all the pieces are well
coated. Cover and leave for 3 to 4 hours.
6. Pickle is ready to be eaten
7. This has to be consumed in a day or two if not refrigerated. Else for a week
8. Usually made in kerala for weddings and during the raw mango season for immediate
consumption

Cauliflower Pattani Masala

1. Cut cauliflower into small pieces and wash with turmeric, salt and hot water.
2. In a pan heat 1-2 tbsp oil, once hot add 1/2 tea spoon mustard seeds once hot.
3. Add 2 slit green chillies, 2 dried red chillies and 2-3 sprigs of curry leaves and saute.
4. Add 1 cup onion finely chopped. (one large onion).
5. Add 4 minced cloves of garlic.
6. Add 1 teaspoon salt.
7. Saute till onions are light brown.
8. Add 1/2 teaspoon turmeric powder, and 1/2 teaspoon chilli powder.
9. Add 1/4 teaspoon asafoetida.
10. Add 2 tomatoes finely chopped. Cook till tomatoes are mushy (by cooking on low flame with lid closed for
2-3 minutes). And then mash.
11. Add 1/4 cup water and mix well.
12. Add cauliflower and 1.5 cup of peas. Mix well.
13. Cover with a lid and cook on medium flame for 10-15 mins. Stir every 5 mins.
14. Switch off flame and garnish with 2 tablespoons finely chopped coriander leaves.

Ingredients:
2 tbsp vegetable oil
• 1 onion peeled and diced
• 1 clove of garlic - peeled and minced
• 1 red bell pepper deseeded and finely chopped
• 2/3 cup (115g) frozen peas
• 1/2 tbsp sesame oil
• 300 g cauliflower - about 1 large head, grated/riced2 eggs
• 2 tbsp dark soy sauce
• 1/4 tsp salt
• 1 tsp lemon juice
To Serve:
• 1/2 bunch of spring onions/scallions chopped
Instructions
1. Add the oil to a large wok. Add the onion and cook, stirring regularly on medium heat for 5
minutes until the onion starts to turn soft and translucent.
2. Add in the chopped red bell pepper, garlic and peas. Cook for a further 2 minutes, stirring
regularly.
3. Now add the sesame oil and the grated/riced cauliflower and turn up the heat to high.
4. Use a spatula to toss everything together and to ensure the cauliflower doesn't stick to the
bottom of the pan.
5. Once the cauliflower rice is hot (this will take about 3-4 minutes), push the cauliflower over to the
side of the pan and crack the two eggs in the space. Add a little splash of the soy sauce to the eggs.
6. Making sure the part of the wok with the eggs in is over the heat, fry the eggs, giving a mix with
the spatula until the egg starts to cook and look scrambled, but is still a little runny.
7. Now mix the egg into the cauliflower rice.
8. Pour in the remaining soy sauce and sprinkle on the salt and mix it all together.
9. Add the lemon juice, stir and taste. Add a little more lemon juice if required.
10. Divide between 2 bowls. Top with spring onions (scallions).

Vegetable stir fry

Steps:
1. Blanche in salt water carrot, broccoli and French beans and baby corn for 2-3 mins in boiling
water.
2. Take out of water and place in cold water then strain
3. Roast 1 tbsp sesame in a pan and remove
4. Add 1tbps sesame oil
5. Add to the oil 1 tbsp garlic, 1 tbsp ginger and 1 large green chilli roughly chopped
6. Add chopped onions. Sauté on medium flame so garlic and ginger don't burn
7. Add the capsicums and cabbage
8. Saute on high flame 1 min
9. Add blanche vegetables and saute 1 mims
10. Add 1/2 teaspoon white pepper powder, 1 tbsp soya sauce, 1 teaspoon salt
11. Add 1 TSP green chilli sauce, 1/2 teaspoon vinegar or lemon juice
12. Add spring onions and toss
