Research Title: The Benefits of Banana Chips in Physical health and

Mental Health of Grade-12 ABM Students of Tuy Senior High School

Abstract: A healthy diet essential for good health and nutrition. Eating a variety

of food and consuming less salt, sugars and saturated and industrially produced

trans-fats are essential for healthy diet. This study shows and promotes the

benefits of Banana Chips in Physical Health of some students in Tuy SHS.

Banana Chips contains potassium which manages blood pressure level, I ounce

of chips contain 2.2 grams of fiber which can helps in maintaining a healthy

digestive system and also a four ounce serving contains. It also providea

magnesium, Vitamin A, Iron, Phosporus, and Potassium in small qualities. Like

must foods, this snack supplies your body with energy.

Chapter 1

INTRODUCTION

Banana is one of the important tropical fruits in Malaysia. It is a

monocotyledon and belongs to the family Musaceae (Rowe, 1981). Most

people consume it by raw, steamed or boiled. However, banana is easily ripe

and it becomes a huge waste to the food industry. One of the method to

process banana is to make banana chips. Banana chips are processed using

deep-fried or dried slices of bananas. The chips can be covered with sugar or

honey and have a sweet taste, or they can be fried in oil and spices and have

a salty or spicy taste. Usually, the chips are produced from under ripe

banana, of which slices are deep-fried in palm oil or coconut oil, which are dry

(like potato chips). If ripe bananas are used they come out oily. They are used

for dessert, not for dry chips. Visual colour is the major quality with criterion

for determining the commercial quality with respect to consumers’

preferences and cost of the chips (Abdullah, 2014). Packaging and storage

condition are the most important quality control factors for chips preservation.

Storage stability depends on packaging. Good packaging and storage

condition extend the storage duration of chips.

Oil uptake during frying is also need to be considered during frying

because the fat content of a product will also affect its flavour, odour and

general organoleptic properties. The frying oil not only act as heat transfer

medium, because they are heated to high temperatures approximately 170-

180° C, it will start to degrade through hydrolysis and oxidation of fatty acids.

The breakdown products themselves give rise to flavour and can further react

with carbohydrates, proteins and their decomposition products to produce

taste traditionally associated with fried food. One of the alternative used to

reduce fat content in chips is by doing a pre-treatment before frying. The aim

of the project was to determine the benefits and effe of banana chips to the

physical health of students. Besides that, the moisture content of banana

chips before and after frying, the taste of this, and the effectiveness of this to

physical health.

Bananas are most commonly known for being a good source of

potassium, but as per the U.S. Department of Agriculture's MyPlate

guidelines, their nutritional worth doesn’t end there. In fact, this fruit is packed

with a plethora of vitamins and minerals that are essential to your health,

making them one of the world’s most appealing superfoods.

Bananas are the unsung heroes of the fruit world. These glorious golden

crops are affordable, transportable, and if they’re Chiquita, adorable. Dan

Koeppel, author of Banana: The Fate of the Fruit That Changed the World,

calls bananas “one of the most intriguing organisms on earth.” (1) Unlike

highly industrialized foods, such as eggs and meat, bananas are a miracle of

biology and are the fourth most-valuable food crop globally.

OBJECTIVES

The primary objective of this research is to determine the

potential health benefits of bananas in Grade 12 ABM students in Tuy

Senior High School. Also, this research aims to discover how many 12

ABM student eat or even know about the said product. This research will

discover the health benefits of bananas, such as improving health and

promoting regularity.

SCOPE AND LIMITATIONS

In this study, we will gather statistics about the potential health

benefits of bananas in Grade 12 ABM students in Tuy Senior High School.

Random representatives from different section of ABM are the respondent

of the research. This study will also conduct a questionnaire about the

physical benefits of banana chips that will discuss in the questionnaire.

People nowadays uses different cooking in a certain food particularly in

banana. The findings of this study will have implication to the present buyers,

community, business owners, future buyers and future researchers.

To the Present buyers- The study will help the present buyers of milk tea to

learn more about the product specifically, its advantages and dis advantages to

their bodies. So that they will be aware of what will happen to them.

To the Community- This study will help the community to raise some activities

or protects regarding the health benefits of drinking milk tea.

To the Business owners- This study will be beneficial to the management so

they can improve the way they run the business.

To the Future buyers- This study will help the future buyers to be

knowledgeable enough about the product and become aware of its effects to

their bodies.

To the Future researcher- This study may serve as reference with similar study

about Milk Tea.

country. Banana normally has a short shelf life and start deteriorating just after

overcome these problems, the processing of banana must be encouraged. Very

small portion of total bananas production undergo industrial processing. Plantain

and unripe banana are cooked as vegetable, chips, snacks, powder etc.,

whereas, mature dessert banana is eaten raw. Characterizing bananas, their

processed products and processed consumption forms is necessary to enhance

its processing. This will enable niche markets for this major crop, undifferentiated

product flows of which are in competition on the world-wide market, to be

structured on an objective qualitative basis. This will improve the market

efficiency and income to the farmers on one hand and generate employment on

the other hand. This review discusses usefulness of banana fruits, peel, leaves,

and prospects of using these materials in industry.

Quality of plant-based food materials and its prediction during intermittent drying

In most drying processes, several physical, chemical and nutritional

modifications take place in food products. Innovative drying techniques such as

intermittent drying can enhance the quality of dehydrated products effectively and

efficiently. Intermittent drying is a technique where drying conditions are changed

through varying the drying air temperature, humidity, velocity, pressure, or even

mode of heat input. This drying technique has been successfully applied to

overcome the problems of conventional drying systems such as longer time

consumption, case hardening, lower energy efficiency and poor-quality attributes.

However, as the effect of intermittent drying on food quality is not yet well

understood, a comprehensive study of quality change during intermittent drying is

crucial. The main aim of this paper is to present a thorough review of the

potential effect of intermittent drying methods on physical, chemical, nutritional,

and stability characteristics of plant-based food material. It is found that

application of intermittency using different drying systems has a significant effect

on product quality and its stability. In addition, a comprehensive review on

existing models of physio/biochemical kinetics for food drying is presented.

Finally, the paper is concluded with the discussion of the current challenges and

future directions of intermittent drying for producing high-quality dried food

products.

Banana chips are a sweet treat made by frying thin slices of underripe

bananas (Musa acuminata) and drizzling them with sugar or honey. Some home

cooks also make banana chips by baking or dehydrating banana slices.While raw

bananas can provide healthy nutrients (such as fiber, potassium, vitamin B6, and

vitamin C), banana chips don't provide significant vitamins or minerals because a

single serving is relatively small and uses only a small part of the whole banana.

Since banana chips can be rich in fat and sugar, this snack should be consumed

in moderation.While a whole raw banana can provide certain health benefits,

you're not likely to gain these benefits when you consume a single serving of

banana chips. If you consume enough fried banana chips to get the same

vitamins and minerals provided by a whole banana, you'll also end up consuming

METHDOLOGY

This chapter will present will present the methods of research used,

research locale, respondent of the study, research instruments, data gathering

techniques, statistical of data and questionnaire.

Research Method

Research method In this study, the researcher will be descriptive quantitative

method to describe the benefits of banana chips to physical health of grade 12

ABM students population, situation or phenomenon. This study will use

convenient random survey approach to the respondents which is randomly

selected in grade 12 ABM students. Survey is more frequently use to collect

descriptive data. The descriptive analysis is set to be quantitative because it uses

descriptive statistics where in the data comes from the survey. Survey is being

used to indicate the average score and variability of score for the sample. The

researchers conduct a survey to answer the questions: What are the nutrients

How long have you been eating banana chips? The researcher search their

subjects through simple random sampling. In this simple random sapling, each

person has an equal chance of being a respondent in the survey.

Research Locale

This study will conducted in Tuy Senior Highschool, Luna St. Tuy

Batangas. It is a public senior highschool that courses is base in k-12 curriculum.

The study have 5 questionnaire to respondents answered to determine the

benefits of banana chips in physical health among grade 12 ABM students in Tuy

Senior Highschool.

Respondent of the Study

In conducting a survey, the researcher should have a respondents that will

answer their questionnaire to determine the benefits of banana chips on their

physical health. The participant of this study are the so students of grade 12 ABM

students senior highschool who are randomly selected.

Research Instruments

The researcher designed a questionnaire/survey for the data gathering

process to get qualitative and quantitative data. The primary aim of the

questionnaire is to determine the nutrients that we can get in eating banana

chips. This research will use a survey response scale and more often

questionnaire. A survey response scale is an orderly arrangement of different

survey response options. Example (5- like very much, 4- somewhat like, 3-

neither like or dislike, 2- somewhat dislike, 1- dislike very much). A more often

questionnaire asks questions and provides several possible answer. In the

survey conducted by the researcher they include the question "What are the

nutrients that we can get in eating banana chips?"

Data Gathering Procedure

A approved questionnaire our permission to conduct a survey interview will be

forwarded to the grade 12 ABM students of Tuy Senior Highschool. Upon

approval a survey questionnaire will be distributed to 30 random students of

grade 12 ABM of Tuy Senior Highschool through online platform. The respondent

will be given an informed content from prior to data gathering will follow using the

demographic profile sheet.

Sample Technique

Purpose random sapling was utilized in this study it is no probability sampling

method which also designed to avoid biases and subjectivity

SUMMARY, CONCLUSION, AND RECOMMENDATIONS

Summary

The main purpose of this study is to determine the benefits of banana chips to

the physical health of grade 12-ABM students of Tuy Senior High School. In this

study, you will know, how the student often eating banana chips. Also this study

will help you to know the level of frequency of effectivenes of purchasing banana

chips. And in this study, you will know the advantages of banana chips over other

appetizers.

The researcher gathered (30) respondents who studying at Tuy Senior High

School. The respondents were selected through random sampling technique and

the researchers used descriptive method of quantitative research. After the

approval of questionnaire the researcher immediately conduct survey to

respondents. The researcher used survey questionnaire.

1. The research process help the researcher on how banana chips The

survey that the group administered helped tremendously with the study.

By using this process the group was able to identify potential health

benefits of banana chips.

2. Based on the gathered data researcher discovered that all respondent are

prefer to purchase banana chips. They also prefer taste, price, images

and packaging of the product.

3. After conducting the said research, we therefore conclude that banana chips

gives various benefits to the health of students preparably Grade 12- ABM

Students. From data interpreted by the researcher strongly agreed that

banana chips is somewhat popular among them. After doing this research,

the researcher finally can say that banana chips can be a start-up business

because of its availability and benefits.

Recommendation

The following recommendations are offered based on the findings and

conclusion of the study.
