RESEARCH A.Selection Of Product
Lumpiang keso, a Filipino deep-fried appetizer, is made of a
chunk of cheese wrapped in a thin egg crêpe. Cheese turon, cheese lumpia, and cheese sticks are other names for it. It's usually served with a dipping sauce, heated and crispy.
Our team found this to be an inspiration. We created
Hameese, a product based on Lumpiang Keso from the Philippines. The name Hameese is derived from the product's constituents of ham and cheese, which are then combined to make the word. We come up with the idea of rolling cheese on flour with ham, dipped in egg, and rolled again in breadcrumbs before frying, as cheese is rolled on a wrapper in lumpiang keso. B. Theoretical Background
The proposed business was supported by the history of
Filipino Cheese Sticks that originated from the Philippines. Cheese sticks, also known as Lumpiang keso, are a deep-fried Filipino appetizer consisting of a stick of cheese wrapped in a thin egg crêpe. It is also known as cheese turon or cheese lumpia (Monkbot, 2021).
Cheese Sticks or Lumpiang keso is made by wrapping the
cheese with other components of your choice in the thin egg crêpe. It is a popular finger food snack for everyone that can be served at parties, as merienda, or as sumsuman. These are really irresistible since they are golden, crunchy, and loaded with melty cheese (Manalo, 2020). The dish is easy to modify, and variants may use other types of cheese like cream cheese, mozzarella cheese, cheddar cheese, etc (Monkbot 2021). Since Lumpiang keso is easy to make, as a result, a lot of people doing DIY or "Do it yourself" at their home. Some people use Lumpiang Keso, or cheese sticks, as their second source of income or sideline.
There are two ways of preparing Lumpiang Keso. These are
the deep-fried method and the baked method. According to Manalo (2020), the best results come from deep-frying, but if you’d like to cut some calories, bake the Lumpiang Keso instead.
In making a Lumpiang Keso, the essential ingredients are
cheese and lumpia wrapper. Since we want to innovate with this food, we use breadcrumbs instead of lumpia wrappers and also processed filled cheese rather than other cheeses to make it cheaper and more affordable. We also added ham to make it more flavorful and special. In order to put together the cheese, ham, and breadcrumbs, we will be using eggs.
A large egg has 72 calories per 50 grams, 6 grams of
high-quality protein, 5 grams of fat, 1.6 grams of saturated fat, along with iron, vitamins, and minerals (Streit & Cafasso, 2021).
Bread crumbs are made up of crumbled bread of varying
degrees of dryness. It provides 395 calories per 100 grams, 13 grams of high-quality protein, 5 grams of fat, as well as iron, calcium, magnesium, and cobalamin (USDA, NA).
Processed filled cheese provides 90 calories per 30 grams, 7
grams of fat, and 3 grams of high-quality protein (MyFitnessPal, NA). Processed Ham provides 70 calories per 55 grams, 2 grams of fat, and 8 grams of protein (Nutritionix, 2020). C. Product Development
This business proposal introduces our own style of
lumpiang-keso, an all time favorite appetizer of Filipinos. The proponents come up with a proposition to innovate the lumpiang keso. The product is known for its cheese filling inside the lumpia wrapper, as to add spice to the usual product, the proponents used cheese Eden and added sweet ham to its inside. This idea presents a savoring dish as it compliments the buttery taste of cheese and sweet ham not to mention. As an extension of it's uniqueness, add-on flavors such as barbecue powder and cheese powder are implemented.
Starting the process with preparing all the ingredients, the
proponents begin cutting the 160 grams Eden cheese vertically into small sized. Afterwards, dip the cheese into the flour. Dip it to the beaten egg, next to breadcrumbs that is already mixed with pepper and salt and repeat the process to achieve a crunchy layer. After finishing all the cheese, they put it in the freezer for 30 mins - 1 hour. In later time, the proponents fry the product and let it dry on tissue to eradicate the excess oil. Succeeding all the steps, sprinkle the chosen powder on the hameese sticks on a cup. D. Prototyping
The proposed business's proponents had come up with a
way to reinvent the traditional lumpiang keso delicacy, which is offered as a snack in most Filipino households. It is common knowledge in the Philippines that lumpiang keso has only one filling. However, in order for the product to acquire market attention, our staff added proponents by combining cheese with ham, dipping it in flour, then in eggs, rolling it in bread crumbs, and deep frying it. To draw clients' attention to the product, we placed it in a cup like fries and sprinkled it with cheese/barbeque powder. E. General Statement of Viability
