This document provides a decision tree to help determine if a step in a process is a critical control point (CCP). It asks questions to establish if preventive measures exist for identified hazards, if the step eliminates or reduces hazards, and if contamination could occur or increase to unacceptable levels. If control at the step is necessary for safety or a subsequent step won't mitigate hazards, then it is deemed a CCP. The tree is to be used by a HACCP team leader and requires approval from the managing director of the company.
