This study aims to determine the acceptability of banana heart, oregano, and annatto as vegan rolls. Specifically, it will evaluate the taste, texture, and aroma. Three treatments using different amounts of banana heart will be tested with three replications each using a completely randomized design. Participants will use a hedonic scale to rate the vegan rolls. The data will then be analyzed using ANOVA to determine if there are significant differences among the treatments. If successful, the vegan roll product could be made available commercially and provide an income source for students.

CHAPTER I

INTRODUCTION

Background of the Study

A well-balanced vegetarian diet is currently popular since it is suitable

for all life phases, including children, adolescents, pregnant and breastfeeding

mothers, the elderly, and competitive athletes.

Foods derived from animals include meat, milk, and eggs, while foods

derived from plants include cabbage, tofu, soy sauce, and other items.

Banana blossom, commonly referred to as a "banana heart," is a fleshy,

purple-skinned flower with a tear-shaped structure that develops at the end of

a cluster of banana fruits.

As natural food preservatives, oregano extract (OE) and essential oil

(OEO) have demonstrated potential. Another advantage of oregano food

preservation is that it is now being studied for its beneficial impact on

gastrointestinal health.

Bixa orellana, a tropical plant of significant agroindustrial significance,

yields annatto from the thin, resinous aril section of its seeds. The primary

annatto colorants, bicin and norbicin, give food matrixes a red to yellow hue.

Furthermore, working students may gain from this product, particularly

now that food is becoming more and more costly. They can use this product to

launch a small business and earn money while supporting their parents

financially.
Statement of the Study
This study will determine the acceptability of Banana heart (Musa

acuminata), Oregano (Oregano vulgare), and Annatto (Bixa orellana) as Vegan

Roll.

Specially, this will answer the following question:

1. What is the acceptability of Banana heart (Musa acuminata), Oregano

(Oregano vulgare), and Annatto (Bixa orellana) as Vegan Roll in terms

of:

1.1 Taste

1.2 Texture

1.3 Aroma

2. Is there a significant difference among the treatment employed?

Hypothesis of the Study

HA: Banana heart (Musa acuminata), Oregano (Oregano vulgare), and

Annatto (Bixa orellana) is potential as a Vegan Roll

HO: Banana heart (Musa acuminata), Oregano (Oregano vulgare), and

Annatto (Bixa orellana) is not potential as a Vegan Roll

Banana Heart (Musa acuminata), Oregano (Oregano vulgare), and

Annatto (Bixa orellana) is the cause, input, or what is being done during the

experiment.

‘The Procedure: Step – Prepare all the ingredients – small Banana Heart

(Musa acuminata), 2g of Oregano (Oregano vulgare) and Annatto (Bixa

orellana), 1g of garlic, soy sauce, pepper and sugar, and 2g of salt and

seasonings. Step – Cut and Minced – cut the small Banana Heart (Musa

acuminata) into pieces. Minced the garlic. Step – Stir up – In a cooking pan,

simmer it with cooking oil then put all the garlic, once the garlic is golden brown,

put all the ingredients and wait until it is cooked and dry. Step – Wrap – Once

it is already cooked, set aside to cool it down. Once it is ready you can now

wrap it using a spring roll wrapper. Step – Frying – In a Frying pan, pour 1/8

cup of oil. Start frying the product in a medium heat. Make sure that both sides

are golden brown. Step – Serve – Serve the product in a clean plate and enjoy.’

Significance of the Study

The research is made with the aim to provide information and knowledge

regarding to those students who wanted to start a small business to support

their everyday allowance.

It will significantly contribute to the following:

Food Sellers/Vendors. This study may be helpful for the food sellers,

to give them another idea to sell and save at the same time.

Working Students. This study will give them an idea to start a small

business.

Researchers. This study will help the researchers acquire more

knowledge. In addition, researchers can teach consumers the method of

making Banana heart (Musa acuminata), Oregano (Oregano vulgare), and

Annatto (Bixa orellana) as Vegan Roll.

Future Researchers. For those who may be interested in this field or

knowledge, the result of the study is likely to influence their further scholarly

research and a chance to investigate and increase new learning.

Scope and Limitations of the Study

The scope of this research study will only focus on making Banana heart

(Musa acuminata), Oregano (Oregano vulgare), and Annatto (Bixa orellana) as

Vegan Roll. The target is to asses taste, texture, and aroma of Banana heart

(Musa acuminata), Oregano (Oregano vulgare), and Annatto (Bixa orellana) as

Vegan Roll.

Operational Definition of Terms

In order to have an easy better understanding for the readers, the

researchers defined the following according on how it is used in this study.

Bixa orellana or annatto it is for adding the color of the product.

Musa acuminata or banana heart it is the main product of this study to

make the Vegan Roll.

Oregano vulgare or oregano this is to add more flavor to the product.

It can also be the alternative medicine to the product.

Smell it is the odor or scent of the product.

Taste it is the sensation of flavor perceived in the mouth and throat on

contact with a substance.

Texture it is the consistency of the product, whether the product is rough

or smooth.

METHODOLOGY

Materials

In this study, the researchers used some kitchen tools to help them

create the product they want to present, these are the following; Frying pan,

knife, cutting board, spatula, measuring cups and spoons, and whisk.

Experimental Treatments and Design

Completely Randomizes Design (CRD) consist of three (3) treatments,

replicated three (3) times.

T1 – 200g of Banana Heart (Musa acuminata). 2g of Oregano (Oregano

vulgare) and Annatto (Bixa orellana), 1g of garlic, soy sauce, pepper and sugar,

and 2g of salt and seasonings.

T2 – 250g of Banana Heart (Musa acuminata). 2g of Oregano (Oregano

vulgare) and Annatto (Bixa orellana), 1g of garlic, soy sauce, pepper and sugar,

and 2g of salt and seasonings.

T3 – 300g of Banana Heart (Musa acuminata). 2g of Oregano (Oregano

vulgare) and Annatto (Bixa orellana), 1g of garlic, soy sauce, pepper and sugar,

and 2g of salt and seasonings.

Acquisition of Materials

The Banana Heart (Musa acuminata), Oregano (Oregano vulgare) and

Annatto (Bixa orellana) were acquired at the researchers’ backyard.

Procedures

Preparation of Ingredients

The following ingredients were prepared by the researchers: Banana

Heart (Musa acuminata), Oregano (Oregano vulgare), Annatto (Bixa orellana),

garlic, soy sauce, sugar, salt, pepper, and seasonings.

Cut and Minced

Cut the small Banana Heart (Musa acuminata) into pieces, then put the

slices in a container with water and salt. Minced the garlic.

Stir up

In a cooking pan, simmer it with cooking oil then put all the garlic, once

the garlic is golden brown, put all the ingredients and wait until it is cooked and

dry.

Wrap

Once it is already cooked, set aside to cool it down. Once it is ready you

can now wrap it using a spring roll wrapper.

Frying

In a Frying pan, pour 1/8 cup of oil. Start frying the product in a medium

heat. Make sure that both sides are golden brown.

Serve

Serve the product in a clean plate and enjoy.’ is constant and unchanged

Data Gathering Procedure

Once the study on the product has been completed successfully and it

has been shown that there are no negative effects, it will be put to the test so

that others may evaluate its flavor and any other peculiar or odd elements they

may discover. As a result, once all the tasks have been completed, the

researchers will know what needs to be improved and the product may then be

made available to every family. Data will be gathered through Taste test utilizing

Hedonic Scale for ratings.

Data Analysis

Data will be subjected to anova.
