This study aimed to determine the acceptability of aratilis fruit as a powdered sweetener: an alternative to
sugar.

The researchers will conduct the study Acceptability Of Aratilis (Muntingia calabura) Fruit As A
Powdered Sweetener: An Alternative To Sugar to know the following:
The research study will only cover the acceptability of Aratilis fruits as a powdered sweetener as
an alternative to sugar using a sample of group of students in Quirino General High School. Aratilis fruits
will be collected in Gundaway Cabarroguis Quirino while the formulation of Aratilis Fruits as powdered
sweetener will be conducted in Quirino General High School using extraction, clarification, boiling,
crystallization and centrifuging.
Researcher. This study will benefit the researcher where it offers new information that may be developed
and used for further research.
Future Researcher. This study can serve as a foundation for future researcher to do more research about
this.
Community. This study will catch the attention of the community. Instead of regular sugar, they will be
able to experience the new version of it.
Entrepreneur. This study will result in a new product that will help the company expand.
Definition of Terms
Aratilis fruits – it is a small and round, similar in size and shape to a blueberry. However, the color of
the fruit is more orange/red when its ripe.
Powdered Sweetener - is a finely ground sugar produced by milling granulated sugar into a
powdered state.
Sugar - a sweet crystalline substance obtained from various plants, especially sugar cane and sugar
beet, consisting essentially of sucrose, and used as a sweetener in food and drink.
Extraction – This extraction method its done by a pressing process using a stone against a
container, squeezing or crushing the raw material, obtaining this way,the juice from the agave piña
peel and the pulp (sugar) from the raw material and the fiber.
Clarification – is the process where maximum removal of suspended and non-sucrose impurities
(e.g., minerals, proteins, polysaccharides) are removed to obtain clarified juice (CJ) with high purity
and low turbidity. Effective clarification results in good sugar quality and high sugar yield.
Boiling – Boiling is the rapid vaporization of a liquid, which occurs when a liquid is heated to its
boiling point
Crystallization – takes place in a vacuum boiling pan. Thick juice or syrup is fed to the vacuum pans
and evaporated until saturated. Seed crystals are added during a strike to grow sugar crystals. The
process is continued until a specified crystal size has been reached.
Centrifugation - the mother liquor is separated from the sugar crystals. The crystals are then
sprayed with a fine jet of water to remove most of the syrup coating and produce raw sugar of high
purity
