CHAPTER 1

INTRODUCTION

Project Context

Food processing is any process, such as heating, canning, freezing, drying,

grinding, and fermenting, that modifies food from its natural state the second edition

of ensuring global food safety, 2022. The amount of vitamins, minerals, fiber, and

resistant starch in cassava is drastically reduced during the peeling, chopping, and

cooking processes. However, the root must be cooked before ingestion to prevent

negative effects. In comparison to other cooking techniques like roasting or frying,

some earlier research have showed that boiling cassava root preserves more

nutrients. Vitamin C is an exception since it is heat-sensitive and readily dissolves in

water. To enhance the nutritional value, it is therefore recommended to stick to less

processed forms of cassava whenever feasible and choose boiling dishes.

Nowadays, people did not know what Salvaro is. It is a result of numerous types of

junk foods. However, now that some people are aware of it, we introduce this

product called Salvaro with Malunggay. The product ingredients are Shredded

Cassava, maskubado sugar, honey, and malunggay it is a thin biscuits. There are

various regional variations salvaro manufacturing in Mindanao. Some street vendors

in the Philippines are selling Salvaro, also known as ‘’Nilalako” (Go somewhere else

to sell it) (Poti et al., 2015)..

Two of the plentiful vegetable plants and root crops in the Philippines are malunggay

(Moringa oleifera) and cassava (Manihot esculenta). Because of the hot, tropical climate in

which they flourish. These two are well-known for their beneficial effects on health and other

purposes. Since malunggay trees are frequently found in many backyards, they are very
accessible. In many nations, it is also one of the useful tropical trees. The most used portion

of the tree is thought to be its leaves, which are used to make herbal medicines. For the

birds, its leaves are a very important source of food. The abundance of vital, disease-

preventing nutrients found in moringga leaves is reported in the Bulletin of Environment

Pharmacology and Life Sciences from 2012. It contains a substance called pterygospermin,

which is antibacterial or antimicrobian. It is utilized for a variety of reasons because of its

health advantages. In addition to being used medicinally, it is also a component of food.

Malunggay leaves are frequently used in Filipino and Maldivian cuisine, as well as to some

extent in Indian cuisine. In the Philippines, it is used to prepare healthy soups, chicken

dishes, a very popular pasta sauce made with malunggay leaves and extra virgin olive oil,

and polvoron, a milky powdered snack. On the other hand, cassava can be grown in areas

that are prone to drought or in the acidic soils that are common in Asian nations. Like

In the Philippines, cassava, also known as balanghoy or kamoteng kahoy, is

one of the most significant agricultural crops. Cassava is grown and harvested by

more than 200,000 farmers for use as food, fuel, and a variety of other things.

Cassava chips have an effortless crunch and flavor that don't require a lot of oil,

making them a healthy alternative to traditional potato chips. Cassava is frequently

used in Filipino cooking as an ingredient of homemade treats because of its flavor

and texture. It is grated and blended to make kakanin (rice cakes) such bibingka,

suman, and cassava cake. To make nilupak, it is boiled and mashed, then combined

with sweetened milk and butter (mashed cassava). Additionally, neighboring Asian

nations have created their own delicious cuisines using intolerance is on the rise,

increasing the demand for gluten-free products. Anyone who has ever tried to

eliminate wheat and gluten from their diet knows what challenge it can be to find

replacement foods that are satisfying and actually taste good. When made into a
snack food, the delicate flavor and crunchy cassava chips make this a welcome

alternative. These gluten-free chips also have 40% less fat than the average potato

chips, making cassava chips a snack that even the most diet conscious can afford

to indulge in on occasion. Nutritionally speaking. Cassava contains significant

amounts of calcium, phosphorus and vitamin C. It is purported to have anti –

inflammatory and anti-viral properties and was used medicinally by the Native

American Indians in a number of ways. Today it is sometimes used to teat arthritis,

stomach disorders and even diabetes. Cassava chips is have a texture that

crunchier than potato chips, and you can mix with a lot of various spice, like

barbecue powder, or just sprinkle of salt, but In traditional ways, you can mix it with

chili and in Indonesia, also known as Keripik Singkong Balado, which is traditional

snack Sumatera Barat. (Chibundle 2019).


PURPOSE AND DESCRIPTION

This research focuses on the food Salvaro with (Moringa oleifera L.) to re-

establish this traditional snack in local markets.

Salvaro with Malunggay (Moringa oleifera L.) are crackers that are

characterized by being flat and oral in shape. Additionally, these biscuits are indeed

very thin and also very crispy. They are made to be more unique and distinct from

other delicacies and products of Mindanao.

Salvaro is made from cassava that is peeled, then dried under the sun, after

drying it is fried, it is one of the famous snacks during our childhood, and then it is

healthy because it is made from cassava and horseradish. It helps our body become

healthy and improve our motor skill, this food is really rare now, in fact this favorite

snacks back when I was an Elementary student, the objective of this study.
OBJECTIVES OF THE STUDY

The main purpose of the study focuses on the food Salvaro is to bring back

this traditional snack in local markets. This Salvaro was enhanced with Horseradish

to make it nutritious and affordable snack for the students of Tagum National Trade

School.

The health issues can be address. Students are expected to experience

malnutrition’s in the future as a result of losing or gaining weight beyond the normal

weights , the researcher conducted a study in order to addressed health issues.

Maringa , Maskubado Sugar and Honey , was developed.

indicates the ingredients that were used .The process is defined as a procedure of

making salvaro with maringa .and lastly, output is referred to the product of the

study, the maringa, maskubado sugar, Vegetable oil, honey toppings.


SCOPE AND DELIMITATION

This study focuses on the food Salvaro to bring back this traditional snack in

local markets. This Salvaro was enhanced with Horseradish to make it nutritious. In

this certain enhancement will help the people who eats to strengthening their

immune system, better calcium absorption and improved motor skills.

This research aim to make the Salvaro product be recognize again by the

consumer and intended to help the producer to make profit and the buyers to eat a

healthy snacks rather than unhealthy snacks. Salvaro was slowly forgotten in

addition the vendors are affected especially those people who sell local snacks in

their small-town because of the newly discover or develop food snacks. Students in

Tagum National Trade School will be covered as part of our respondents for making

the Salvaro with Horseradish to be popular.

REVIEW OF RELATED LITERATURE

The investigation carried out because no healthy snack that has high protein

content is currently available in the market (Cook 1989, Söğüt and Öztürk 2018).

However, there is abundance of fried foods that have high carbohydrate and

saturated fat content, which is detrimental to health. For these reasons, in the

present investigation an attempt was taken to develop a healthy snack that contains

teberinto (Moringa oleifera) that, when combined with the carbohydrates and

cassava root (Manihot esculenta), can be viewed as a food with a high nutritional

value. It can thus help to combat undernourishment, since teberinto can provide a

high protein content, while also helping in the treatment of various diseases, such as

asthma, goiter, diabetes, and anemia, among others Popooland Obembe, 2013;

Leone et al.,2015).

Moringa oleifera is the cheapest and credible alternative to not only providing

good nutrition, but also to cure and prevent a lot of diseases (Paliwal et al.,2011).

Actually, the great interesting M. oleifera is related to its multipurpose uses and its

ability to guarantee a good yield, where other crops cannot, in countries where

people are mostly at risk of suffering from nutritional deficiencies (Leone et al, 2015).

Indeed, its cultivation is localized in develop ting countries where different parts of

the plant are utilized. Some international initiatives such as the Moringa Network,

Moringa initiative, and Moringa News have been stablished to improve the

production, uses especially for human nutrition, and to develop the marketing

process and value addition. In Benin, The Hunger-Project ( an international NGO)

promotes the pecies during the campaign to health and nutrition improvement. In

many countries (e.g.Ghana, Benin, etc.) there is a National Association of Moringa


which aims to organize people, including producers, consumers, processors, and

researchers to speak on a common platform on issues of Moringa inorder to

influence policy on promotions, production, consumption and marketing of the

products. There is increasing number of literature reviews on the,species of which

one of the best and recent is performed by Leoneet al, (2015) has addressed

cultivation, genetic, ethnopharmacology, phytochemistryand pharmacology of the

Malunggay (Moringa oleifera L.), a vegetable plant and Cassava (Manihot

esculenta), a root crop, are two of the abundant vegetable plants and root crops in

the Philippines. It is because they grow in hot tropical climate. These two are known

for their nutritional values and other practical uses. Malunggay tree is very

accessible since it is often found in manybackyards. It is also one of the useful

tropical trees in many countries. Itsleaves are consider as the most used part of the

tree, which serve as herbal medicine . Its leaves are extremely valuable source of

nutrition for people of alleges. According to the Bulletin of Environment

Pharmacology and Life Sciences (2012), Moringga leaves contain affluence of

essential, disease preventing nutrients. They even contain all of the amino acids

which is unusual for a plant .While an article from the website named Dr. Health

Benefits (2016) points that, many people cultivate malunggay tree and take its

leaves to heal the illness such as headache, diabetes, allergy and eye strain. It

contains compound pterygospermin and it is known as antimicrobacterial, or

antibacterial. Because of its health benefits, it is used in different purposes. Aside

from medicinal purposes, it is added as one of the ingredients in cooking. Culinary

usage of malunggay leaves is popular in Philippines and Maldives and tosome

extent in India also. In Philippines, it is included in making healthy soups , chicken


recipes and for preparing a very popular pasta sauce by using malunggay leaves

and olive oil and for making polvoron, a milky powdered snack (iFood, n.d.).On the

other hand, cassava can be grown in drought-prone locations, or in acid soils that

can be found in Asian countries. It is accessible and non-seasonal like malunggay.

B such as folic acid, pyridoxine and nicotinic acid, and vitamins C, D and E (Mbikay,

2012). Each ounce of Malunggay contains seven times the Vitamin C found in

oranges, four times the Vitamin A of carrots, three times the iron of spinach, four

times as much calcium as milk and three times the potassium of bananas.

be combined appropriately to ensure that they complement each other in the sensory

and acceptability properties. The investigation was carried out because no healthy

snack that has a high protein content is currently available in the market, when

combined with the carbohydrates and cassava root (mohinot esculenta ), can be

viewed as a food with high nutritional value. In the other hand Moringa oleifera is the

cheapest and crediblealternative to not only providing good nutrition, but also to cure

and prevent a lot of diseases and Moringa News have been stablish to improve to

PROCEDURE:

1. First wash the cassava

2. Second peel the cassava
