INTRODUCTION
About Gokul Shirgaon

The Dairy was established on 16th March 1963. Gokul stated with the capacity of 700 litre
per day but at present Gokul has modern 7 lakh liters per day capacity dairy plant. Their
products include Milk, Shrikhand, Ghee, Table Butter, Skimmed Milk Powder & Desi
Butter.
After reaching Gokul Dairy, we met Mr, Patil who is currently working and well known
person of plant. He told us the brief history of Gokul, current production capacity,
financials and future scalability plans of dairy.
Dairy procure 50 % buffalo milk and 50 % cow milk from 450 societies. After
processing the milk 80 % liquid milk is sold and rest 20 % milk is used to produce
Shrikhand, Ghee, Table Butter, Skimmed Milk Powder & Desi Butter.
During processing, milk is heated at 78 °C for 15 seconds and then chilled at 4 °C.
Current capacity of plant is – they can produce 42 tonnes butter per day, 40 tonnes
milk powder per day and 6 tonnes ghee per day.
Milk can be stored for 4-7 days in plant.
80 % water needs to remove to produce milk powder.
During summer milk production is low so they use milk powder to fulfill the
demand of milk. 10 litres of milk can be made from 1 Kg of milk powder.
For packaging the milk, they use plastic pouch. Unused or discarded milk pouch is
sent for recycling.
All the dairy equipment is cleaned by chemicals and detergent to avoid the
contamination in milk.
Main problem is they need approximately 1.3 litre of water to process 1 litre of
milk.
There is loss of 2-3 % of fat and cream when they clean the dairy equipment.
Farmers are paid on the basis of quantity of fat in milk which they give it to Gokul
Societies.
Generated scrap material in plant is sold kabadiwalas in Kolhapur.

The travelling Part from Department Of Technology, Shivaji University to
Gokul Dairy was done and successfully organised by the Electronics & Tele-
communication Branch Team Under the guidance of Dr. S.B Chavan Sir
(HOD) lead by Mr. A A Shirolkar sir incorporated with Ms. Pooja Mane
Ma’am & Ms. Rasal Ma’am. It was a full day Industrial Visit.
The schedule of dairy plant is fixed and completely upto the mark based on
the amount of milk to be processed. According to the data collected, 80% of
Milk is used for making liquid based product , that is Pasteurized milk that
would be supply futher into the market. According to Mr. Patil 200000 plus
pouches of milk is supplied in mumbai region, Followed by 150000 pouches
in Pune to Satara region.
The Milk Is Collected From 12 Talukas and then been brought up by the
transport system which has been alotted a particular time frame to deliver the

milk to the plant.
The milk collection area is called the & “dairy dock” and milk cans with
a capacity of 40 liters are used to transport the milk. The cans are labeled with
red and blue colors, with red indicating buffalo milk and blue indicating cow
milk. The empty cans are washed with 90°C water before reuse. The dairy
collects milk from 12 talukas in Kolhapur district and neighboring districts.
Technology:
Pastesurization : Pasturization is a process by which milk is
heated to a specific temperature for a set period of time to kills
harmful bacteria that can lead to diseases like as listeriosis, typhoid
fever, tuberculosis, diphtheria and brucellosis. Research shows no
meaningful difference in the nutrient content of pasteurized and
unpasteurized milk, despite claims to the contrary.
While pasteurization has helped provide safe, nutrient-rich milk and
cheese for more 120 years, some people continue to believe that raw
milk is a safe healthier alternative. Here are some common myths
and proven facts about milk and pasteurization from foodsafety.gov:
Raw milk DOES NOT kill dangerous pathogens by itself.
Pasteurizing milk DOES NOT cause lactose intolerance and allergic
reactions. Both raw milk and pasteurized milk can cause allergic
reactions in people sensitive to milk proteins.
Pasteurization DOES NOT reduce milk's nutritional value.
Pasteurization DOES NOT mean that it is safe to leave milk out of
the refrigerator for extended time,particularly after it has been
opened.
Pasteurization DOES kill harmful bacteria
Pasteurization DOES save lives.

"dairy dog" is open only from 7 a.m. to 11 a.m..

Milko Tester :
Milko Tester is a device which electronically
determines the Fat % rapidly in milk. Milko Testers, Auto SNF
Indicators & Milk Analyzers are used at primary Dairy Cooperative
Societies (DCSs) in villages. The milk supplied by producer is
tested before acceptance and payment is made on the basis of milk
quality. This helps to good quality milk at primary dairy cooperative
as well as at Union level. The transparent process results in
strengthening faith of milk producer on Village Society and Union.
Our Union provides Milko Testers, Auto SNF Indicators &
Milk Analyzers to the DCSs on subsidized rate. Also we provide
required Chemical, Sachet powder & Cleaning solution on
subsidized rate. During the year 2021-22, we have distributed 287
Eco Ultra milk analyzer Machines , 212 ltrascan Kurian Machines,
12 Aceteroca machines, 77 Akashganga milk analyzer machines to
468 DCSs.
