Mashed Potato

This recipe makes mashed potatoes for 50 servings. MASHED POTATO

Ingredients
Measures
50 servings
select all ingredients
 2 1/2 kilos of yellow potatoes, peeled
and cut into pieces
 Salt
 6 tablespoons unsalted butter, at
room temperature
 2 garlic cloves, peeled and minced
 1 1/2 cups of whole milk
 1/2 cups chives, chopped
black pepper.
Preparation
 Put the potatoes in a large pot and add water to cover the potatoes.
 Add salt to the water and bring to a boil over medium heat. Once it
boils, reduce the heat and cover. Let cook for about 30 minutes until
the potatoes are soft.
 Strain the potatoes and leave them only with a little water.
 While the potatoes finish cooking, melt 2 tablespoons of the butter
and add the garlic. Sauté until opaque, 1-2 minutes. (Don't let it
brown)
 Put the milk in a small pot and over medium-low heat, wait for it to
boil.
 Return the potatoes to the pot and bring to a simmer. Mash with a
potato masher and add 3/4 cup of the hot milk, 4 tablespoons of the
butter, the cooked garlic, and the minced chives. remove.
 Add the rest of the milk and a little of the liquid that you reserved
from the water in which the potatoes were cooked. Stir until they
have the desired consistency.
 If necessary, add more liquid and season with salt and pepper.
