Introduction:
Linens are fabric goods, such as tablecloths, napkins and slip cloths.
Linen is a material made from fibers of the flax plant. Originally, many items
such as bed sheets and tablecloths were made of linen. Today, the term linen
has come to be applied to all related products even though most are made of
cotton, various synthetic materials or blends. The main linen items normally
found in a restaurant are; tablecloths, slip cloths buffet cloths, trolley and
sideboard cloths, and waiter’s cloths or service cloths.
On the other hand, furnitures used in any food and beverage service
must be well chosen according to the needs of the event and the establishment.
Its arrangement must take into consideration the flow of traffic of guests and
service staff. The appearance and atmosphere of the area must be flexible
enough to suit various occasions.
Hence, this lesson discusses the types of linens and furnitures used in
foodservice and their relative functions/uses.
Specific Objectives:
At the end of the lesson, the students are expected to:
a. Differentiate furnitures and linens used in foodservice; and
b. Discuss their uses/functions.

Presentation of Contents:
To learn the types of linens used in the foodservice and their relative
functions and uses. Let’s read the following:
1. Tablecloth
Table cloths made from cotton or linen are not only more absorbent but
also last longer. The fibers do not pill or pile as easy as synthetic table linens
and they do not become shiny when exposed to an iron’s heat. Egyptian cotton
and Irish linen are considered the finest materials for table linen because of
their long and durable fibers. White is the most popular color for table linens
because it’s considered formal. Table linens in off white or ivory are also
acceptable. A damask (woven) or embroidered pattern is a perfect acceptable
tablecloth.

2. Silencer
It is used primarily as a cover to line your table, protect against
scratches and dings from serving plates and silverwares.
3. Napkin
A napkin, table napkin or serviette is a square cloth or paper used at the table
for wiping the mouth or hands while eating. It is usually small folded.
Normally, the napkin is folded and placed on the left of the table setting,
outside the outermost fork. In more formal restaurant setting, it may be folded
into intricate shapes and displayed on the empty plate. A napkin may also be
held together in a bundle, by a napkin ring. On the other hand, paper napkiins
placed in holders are also widely used and accepted.

4. Placemats
Placemats are used primarily to prevent the flatware from moving
while the guests are eating. This also adds as an accent to the table setting. Its
size depends on the function but normally it is 14” x 20”.
5. Table Runner

Instead of covering the entire table, a table runner covers only the
middle section, “running” the length of the table. It is used to “dress up” a
dining table and comes in a variety of patterns and sizes designed for different
lengths.
6. Table Skirting
Table skirting, as the name implies, is a skirt for a table. Table skirts
consist of two components: the cloth table topper and a skirt that fasten to the
table edge with clips, Velcro or snaps. Traditional table skirting uses pins and
preferred fabric texture and color.
Standard tablecloths are not sufficient for over-sized banquet tables –
they shift, wrinkle and are rarely a proper fit. There is a table skirting solution
for every table and occasion. Various table skirting designs are suitable for
wedding receptions, business conferences or holiday celebrations.
Table skirting is an elegant way to present a table setup, such as a head
table, convention table or registration table. One can choose from a variety of
fabrics and style to skirt a table, any size length or width is possible.

3. Banquet Chairs
Are light stackable chairs used in a
variety of functions.
4. Tiffany Chairs
Also known as the Chiavarina, is a
wooden chair of Ligurian design.
Nowadays, this chair is already made
of metal.

6. Gueridon Trolley
It is simply a piece of equipment on
which food is served or prepared in
the dining environment. This kind of
furniture originated in France towards
the middle of the 17th century.
Varieties of small occasional tables
are now called gueridons in French.
The term may also refer to a cart used
in French service for the preparation
of dish alongside the dining table at
which it will be served.

7. Cocktail Table
It is generally synonymous with
coffee table. It is usually a useful
table placed either in front of or to the
side of seating areas like couches and
chairs, onto which you can place a
drink, alcoholic or otherwise. The
cocktail table comes in variety of
sizes, materials and styles and
choosing one usually means looking
for something that fits well with the
function or event.
8. Chair Trolley
It is designed to do most of the work
on stacking of chairs forward by just
wheeling the prong underneath and
tip the load back. The rear castor not
only carries the weight of the load,
but also provides an excellent
leverage point to tip back the stack of
chairs.

11. Tray Trolley
This trolley is use in other hospitals
and other areas where several trays of
orders are to be served
simultaneously to several individuals.
It will save lot of time if the foods are
in trays and trolleys as they can be
served all at one time
