4C – Semester VIII
Assignment brief
Culinary arts are an experience which affects every aspect of human life. It touches every act,
influences every routine process of life. Architecture at micro and macro level has always been
affected by the aspects of food requirements of human lives. Settlements started on flowing
roads with a food stall on road site which in extension led to grow into a colony and then town.
Streetscapes, squares, corners have been shaped according to food spaces available around.
Right from the space required growing and store the food to space required for eating that
deliciously prepared dish dictates the design and architecture around. Material of construction,
surface treatment, inclusion of daylight and heat, ventilation requirement, water supply
services are majorly influenced by the process of culinary arts practices followed at that place.

This assignment intends to study specific cases to understand how culinary arts have affected
different streetscape of the Pune city.

Assignment 1

Write an article about how culinary arts have affected the architectural spaces, services,
construction materials, volumetric ratio, lighting and ventilation

Submission format – A4 size, landscape article (include sketches and photos)

Assignment 2

a. Case study of a culinary art explaining its architectural requirements in urban area.
Provide photos and comments on following points –
1. Name of traditional culinary art
2. Storage requirement
3. Preparation process space requirement
4. After preparation storage requirements
5. Day lighting and ventilation requirements
6. Water supply / storage requirements
7. Surface material and texture requirement

Submission format – A4 size, landscape (include sketches and photos with detailed
write up for every photo)
Assignment 3

b. Group case study of street scape affected by street culinary art practices
1. Brief information of the street and area
2. History of the area emphasizing on approximate start of the culinary art practices on
that street
3. Different types of culinary arts practiced on the street and their space requirements.
- Provide free hand proportionate sketches and photos with dimensions and space
requirement for the said practice.
- (standing and vending space, siting/ standing space required for eating,
covered / open space, water requirement etc)
4. Plan of street depicting foot path, street, separators (if any) side walls (if any), street
lighting and furniture, outline sizes of buildings immediately adjacent to the
footpath etc ( provide levels, dimensions as required)

6. Show step wise plan of the street from last few decades how the spaces were

pollution, garbage piling etc…
8. Submission format – A3 size, landscape sheets (include sketches and photos)
Sample assignment 1

- Case study of a culinary art explaining its architectural requirements in urban


area. Provide photos and comments on following points –
Name of traditional culinary art – Papad Making
Storage requirement – Grain and flour storage, cool Dry area, shaded space, well
ventilated, requires plinth, low sun light
Preparation process space requirement - 1.2 to 1.5 sqm space required per person
After preparation storage requirements – Large flat well ventilated areas exposed to
direct sunlight and large shaded areas exposed to reflected sun light.
Day lighting and ventilation requirements – Requires well ventilated areas with low
moisture, ample day light and shaded spaces
Water supply / storage requirements – very low amount water supply needed.
