INTRODUCTION
Congratulations on your purchase of the FOODTOOLS model CS-2000 Cake Slicer. This machine
was designed to give years of excellent service with a minimum need for maintenance.
The model CS-2000 is an industrial food and baked goods slicer designed to slice round products.
It is capable of slicing a large variety of products at various temperatures while inserting divider
papers. The flexibility of the CS-2000 allows it to slice from 4 to 24 portions, from 0.0"-4.0”
(10.16 cm) to 0.0"-12.0” (30cm) diameter and products as tall as 5.75” (14,6 cm), product
temperatures typically range from 0°F (-18°C) to 25°F (-4°C).
The machine operates on compressed air and standard electrical service. This is a fourth
generation machine that utilizes some of the finest pneumatic and electrical components in the
world. It is constructed of stainless steel, hard anodized aluminum, food grade polyurethane and
UHMW polyethylene. For these reasons, the machine has proven its durability and reliability
in the harsh environments found in bakeries.

MACHINE
OPERATIONS
This section covers the initial running of your first product. This machine will usually arrive
completely adjusted to your specifications with your product in mind. If you need to make any
adjustments please refer to the "Setup and Adjustment" section located on page 18. If you need
further assistance please contact your local FOODTOOLS representative.
Machine Location
This equipment should be located on a flat level surface with the casters locked to unsure safe
operation.
Air Supply Connection
The input for the Main Air Supply is 1/4” NPT female.
Connect an air line to the machine’s air supply connector. Located on the top panel of the
machine.
AIR FITTING
AND
ELECTRICAL
CONNECTION

For maximum machine performance, your air compressor must be capable of a minimum of 8
CFM at 80 PSI. Also be sure the supply hose has a minimum of 1/2” ID. A smaller supply
hose will slow down the cycle time of the machine. Follow the maintenance instructions supplied
with your compressor, especially concerning draining the water from the tank. In damp or humid
climates, we highly recommend that your air compressor be equipped with a refrigerated air dryer.
This will ensure that you will get maximum life from the machines valves and cylinders.
Electrical Connection
The electrical power cord is located in the top left corner of the machine, next to the air fitting
(SEE IMAGE ABOVE). All machines shipped in the U.S. will be supplied with a 110 VAC plug.
Those that ship internationally will ship with the wire bare. It is the receiving facilities duty to
supply a plug that meets or exceeds there parent countries electrical codes.

GROUND OR CERTIFIED GROUND THROUGH THE SUPPLYING ELECTRICAL
COMPANY. FAILURE TO DO SO CAN RESULT IN INJURY OR DEATH.
Main Power Switch
The Main Power Switch is located on the right hand side of the main electrical access door.
This switch when on activates the machine and will supply power to the internal computer
system and valves. Once the switch is activated the machine take 20 seconds to boot to a full
running state.

Emergency Stop
Button
The red emergency stop button is located on the right side of the loading tray. This button will
stop all machine operations and reverse the slicing blade to the up position when pressed. No
machine operations will occur with the emergency stop engaged. To release the emergency stop
lift the button or twist it clockwise to return the machine to a run state.

Cycle Start Push Buttons


The Cycle Start Push Buttons are located on the corners of the loading tray. They are used to
activate the slicing cycle. They are situated in such away that it requires both hands to operate
the machine. This helps to ensure that the operator cannot get any part of there body into the
machine during the slicing process.
To manually rotate the platform press and hold the right start push button, for a minimum of
two seconds. The platform will then rotate the index plate in the slicing position to the loading
position.
NOTE: GUARD AND TABLE ROTATION WILL NOT OCCUR IF THE EMERGENCY STOP
BUTTON IS DEPRESSED OR REAR GUARD DOOR IS OPEN.

The Divider Feeder On/Off switch is located on the left hand side of the electrical access door.
This switch is used to electronically turn on and off the rear feeder and mechanically activate
the vacuum pressure.

Setting Product Height


Located on the top right corner of the machine is the product height adjustment handle. This
handle is used to adjust the distance of the bottom of the feeder to the top of the dial holder. It
is adjusted by rotating the handle clockwise to lower the feeder and counter clockwise to raise
the feeder.
The feeder height should be adjusted to there a minimum distance of 1/2 of an inch between
the top of the cake and the bottom of the feeder system. This will increase cycle speed, reduce
the amount of air required to run the machine and ensure the divider papers insert properly into
the cake.

Installing Product Holders


Your machine was shipped with a set of product holders and cam plates pre installed. For
reference or if you have purchased multiple cam plates and product holders please follow the
instructions below.
Dial holder and cam plate portions must match when installing them on a machine. I.E. if your
product holder is 8 portion the cam plate must be 8 portion as well. Failure to follow this will
result in damage to the product holder.
Installing Product Holders:
1. There are four parts to the product holder setup on a CS-2000.
a. The Index Cam Plate (controls amount of portions)
b. The Index Shield (safety cover)
c. The Product Holder (sized to hold product)
d. The Dial Nut (retains all above part in place)
2. Rotate the dial hub pin so it is in line with the stop pin.
3. Install the cam plate onto the dial pin.
4. Place the index shield over the cam plate.
5. Place the product holder onto the dial hub assembly. Be sure the number of portions on the
cam plate matches with your product holder.
6. Install and tighten the dial nut.
7. Run a test cycle with no product to make sure the machine is properly indexed in the home
position.

Feeding Paper
Your CS-2000 is capable of running fully automatic paper feeding. Your machine has been preset
at the factory for the paper you ordered. If you ordered more than one size of paper please follow
the instructions below to make the adjustments for a new type of paper.
If you are experiencing issues feeding paper please see the "Trouble Shooting" section, or the
"Settings and Adjustments" for more in depth adjustment section.
Basic Paper Feeder Adjustment:
1. Grab one sheet of paper from the bundle and insert into the front feeder.
2. Adjust the sidewalls so there is a 1/16 in gap between the wall and the paper. The adjustment
screws are the two black thumb screw located under the wall.
3. Adjust the paper feeder ramp so it is in the center of the paper. The adjustment screw is
located directly under the ramp.
4. Repeat for the other side of the front feeder.
5. Go to the rear of the machine and open the rear guard doors.
6. Adjust the rear feeder scale to the correct paper size. I.E. if your paper is 50x35 the first
number is your overall width. 50 is 5.00 inches wide so adjust your front feeder to fit a
5 inch piece of paper. The second number 35 is the length of the paper. So 35 would be
3.50 inches long, adjust the paper scale back stop so the scale reads 3.5 inches. The scale
is only a reference point you may need to adjust the scale a little forward and back to get
an even fold.
7. Close the rear guard door.
8. Split your bundle of paper in half. Then fan one of the stacks out as shown in the picture
below.
9. Insert the stack into one of the front feeder ramps. If a piece of paper pulls out from the
bottom when you remove your hand, remove it completely from the bottom and throw
away.
10. Repeat the process for the next stack of paper.
11. Make sure the Divider Feeder ON/OFF switch is cycled to ON.
12. With out product press the start buttons and run a test cycle to make sure the paper feeds
properly. If the paper is uneven readjust the paper scale.

Basic Machine
Operation
The basic operation of the FOODTOOLS Model CS-2000 is very simple, but the user should be
familiar with all the safety and operating instructions before using the machine. Ensure that all
setup procedures are followed before beginning the machines operation.

1. Ensure that the correct dial stack has been installed and that the dial nut is fully
tightened.
WARNING: SEVERE BLADE DAMAGE IS POSSIBLE IF THE DIAL NUT IS NOT TIGHTENED
COMPLETELY.
2. Ensure that the electrical power line is attached.
3. Ensure that the air supply to the machine is connected.
4. Turn the electrical power switch “ON”. The indicator light should illuminate.
5. Make sure the rear guard is closed and the Emergency Stop button is released.
6. If you will be using divider inserts, turn the DIVIDER FEEDER selector switch to “ON”.
If you are slicing without inserts, turn the switch to “OFF”.
NOTE: WHEN THE DIVIDER FEEDER SWITCH IS “ON”, YOU WILL BE ABLE TO HEAR
THE VACUUM GENERATOR (WHICH SOUNDS LIKE AN AIR LEAK).
7. With your product loaded into the dial push and hold the two cycle start buttons. The table
will rotate and the guards will close.
8. When the machine completes its cutting cycle and the next product is loaded, push and
hold the start buttons. The guards will open the table will rotate and guards close to begin
slicing the next product.
9. The red emergency stop button can be pressed at any time to stop the machine for any
reason. If the machine is cycling and the emergency stop button is pressed, the blade will
go up and the machine will stop. When you release the emergency stop button and press
the start buttons the machine will abort the current cycle.
10. If a paper jam occurs while running the machine with the DIVIDER SENSOR /VACUUM
in the “ON” position, the machine’s vacuum sensor will detect a weak vacuum and the
machine will stop and the guards will denergize. Once you have cleared the jammed paper
along with the paper that fed, press the start buttons to resume the slicing operation.
NOTE: ADJUST THE SENSITIVITY OF THE VACUUM SENSOR SO THAT THE
MACHINE OPERATES WITH ONE PAPER PER SIDE. SEE SERVICE &
MAINTENANCE, VACUUM ADJUSTMENT.

SECRETS TO
SUCCESSFUL
SLICING
After several years of experience, we have found that the secret to successful slicing is
TEMPERATURE, TEMPERATURE, TEMPERATURE!
There are, essentially, four temperature levels from which to choose:
1. DEEP FROZEN: Essentially a uniform temperature throughout the product from prolonged
exposure at stable subzero temperatures for more than two days.
2. QUICK FROZEN: The result of overnight freezing, where the core temperature of the
product may be 10-20 degrees Fahrenheit warmer than the outer surface as a result of the
freezing process progressing from the outside to the center.
3. PARTIAL THAW: The result of allowing the surface of a deep frozen product to warm to
near room temperature prior to slicing. This procedure has been successfully used to slice
frosted tortes, cakes and pies where the frostings are too brittle to slice cold.
4. REFRIGERATED: Cooled to a level above which the core ingredients become firm.

Some products will slice over a wide range of temperatures, but some may be more sensitive and
require temperature to be carefully controlled to achieve quality slicing. The end goal of product
tempering is to achieve the cleanest slice possible at the warmest temperature. A quality sliced
product is generally defined as one in which the sharp tips of each slice are apparent, with minimal
destruction of the center of the product. Other features are the cleanliness of the cut, through the
product core material, the straightness of each vertical cut, and the minimization of damage to
the crust, crumb or similar coatings on the top, edges, sides or bottom of the product.

SLICING QUALITY
Once your product is sliced, check that the cuts are clean and sharp, and that the slices are even.
See the items below for the adjustments to achieve quality slicing.
Slicing Guidelines
While the following product slicing temperatures prevail for the majority of applications,
individual experimentation may demonstrate the need for a different temperature. This may be
due to your ingredients, production process, freezer capability or other factors.
Contact FOODTOOLS to discuss your specific applications if you are not satisfied with your
slicing results.

Sponge cake, pound cake: ................................................-20° to 0° F (-29° to -18° C)


Combination Ice Cream, Torte Cakes:..............................-20° to 0° F (-29° to -18° C)
Ice Cream Pies & Cakes (solid):.......................................-13° to 0° F (-25° to -18° C)
Layer Cakes, Tortes, some pies: .....................................-10° to 10° F (-24° to -12° C)
Cheesecake, mousse, pies:.................................................10° to 20° F (-12° to -7° C)
Brownies, blondies, some cheesecake:................................. 20° to 35° F (-7° to 2° C)

Generally, a more dense product does not require as low a temperature to slice satisfactorily.
Thus, a cheesecake may be sliced at 25°F and a layer cake may require 5°F. In addition, the
layer cake will require a longer time in the freezer to reach this temperature in the center of the
product. The center of the cake is the core temperature.
Uneven Slices
The two main causes of uneven slices are product movement, and product centering. The
following are the most common causes of this problem:
Product skidding (If the product is skidding, there will normally be two small slices on either
side of the product)
1. If the dial rotation speed is adjusted to fast, the product may skid or spin during the slicing
operation. The solution to this problem is to reduce the dial speed.
2. The product may also skid if the dial fingers are not correctly adjusted. See the “Dial
adjustment” section page 18.
To test for product skid, raise the front guards. Then place a cake into the front product holder.
Insert a toothpick into the right side of the cake next to the left side of a finger. Next push the
“Rotate Dial” push button. As the dial rotates watch the toothpick to see if it moves away from
the finger. If the toothpick moves away from the finger the indexer is set too fast or the fingers
are loose and the product is skidding

The product is spreading:


1. Some spreading of the product is normal, but if it is excessive, this can cause uneven slices.
Proper dial finger adjustment can help reduce spreading.
The product is off center on the dial:
1. If the product is sitting off center on the dial, slices will be uneven. Ensure that all the dial
fingers are adjusted an even distance from the dial edge. Be aware that slices may appear
to be uneven if the product itself is not completely round.
The dial is off center to the blade:
1. The dial center should be directly under the center of the blade, we call this “centrality”.
The centrality should be adjusted only by maintenance personnel. See the “Setup and
Adjustment” section in this manual for making this adjustment.
The blade is deflecting in the product:
1. When the product being sliced is very hard it is possible to get blade deflection which will
cause uneven slicing. Normally this is the case when trying to slice a dense product at a
very low temperature. To prevent this problem let the product warm up or install a thicker
slicing blade on the machine.
NOTE: THE STANDARD BLADE THICKNESS IS .030” (PART # 7108-.030) FOR DENSE
PRODUCTS A THICKER BLADE CAN BE USED . (PART # 7108-.050)

CLEANING
The FOODTOOLS model CS-2000 is designed to work in the harsh environment of a bakery.
Most areas on the machine can be washed down using low pressure spray washing. However, it
is best to take some care in other areas to avoid premature failure of some critical components.
If it is necessary to sanitize the machine, we recommend using a sanitizing solution that will not
harm anodized aluminum. Anodize-safe sanitizing solutions are available. Avoid spraying water
and/or sanitizing solutions directly on the valves and any electrical connectors. After washing,
it is best to dry the machine thoroughly with an air hose and/or towels.

To maintain the appearance of the machine, we highly recommend that the machine be dried
using compressed air or towels after wash down. This will prevent water from spotting the
machines surfaces.

CLEANING.
CAUTION: AVOID SPRAYING DIRECTLY INTO ANY ELECTRICAL CONNECTOR, OR
INSIDE THE MACHINE’S CABINET.
WARNING: THE BLADE IS VERY SHARP, USE CAUTION WHEN CLEANING OR SERVICING
NEAR THE BLADE.
PRE-PRODUCTION
1. Make sure their is no water build up on the machine.
2. Make sure there is no product on the blades.
3. Make sure that the product holder is clean and dry.

PRODUCTION
During production it is important to make sure there is no build up of any product on the main
cutting blades nor on the paper feeder as this will cause the machine to run incorrectly.

POST PRODUCTION

1. Wipe blades down with hot soapy water and a towel.
2. If there is any product build up on the blade use a plastic scraper to clean.

2. Once cleaned make sure to check the filters on the rear paper feeders for any clogs. It’s
also good to blow compressed air into the air lines to make sure that they stay clear and
don’t affect the vacuum.
NOTE: MACHINE COULD BE WASH DOWN WITH SOAPY WATER. WE DON’T
RECOMMEND USING ANY CHLORINE BASED SOLUTIONS. IT WILL CAUSE
DAMAGE TO THE ANODIZED ALUMINUM.

SETUP AND
ADJUSTMENT
This section will take you through the steps on adjusting some of the major components of the
machine. If more help is required please contact your local FOODTOOLS representative.

Round Dial Holder


The round dial holder has three jobs. The first and probably the most obvious is to hold the cake
in place. The second is to index the cake into the correct portions specified by you. The third is
to hold the cake in the exact center of the machine.
It holds it in the center by the use of the fingers mounted in the center of each cut. These fingers
are adjustable by a set screw located in the bottom of the dial. The fingers can and will go out
of adjustment due to improper handling of the dial and wear and tear. To replace or adjust the
fingers when they are out of adjustment please follow the instructions below.
To adjust the dial fingers:
1 Loosen the set screws located on the underside of the dial with an 1/8 in Allen key.
2. Slide the fingers in or out as needed. Make sure the fingers are all spaced an equal distance
from the dial edge. An easy way to do this is to use a dial indicator or metal ruler.
3. Retighten the set screws, making sure not to over tighten.
NOTE: IT IS IMPORTANT THAT THE DIAL FINGERS ARE EQUALLY SPACED AND
MAKE CONTACT WITH THE PRODUCT. FAILURE TO DO SO WILL RESULT IN
UNEVEN PORTIONS

Blade Reversal Clamp Block


The reversal clamp block is located on the main power cylinder rod. This block controls the
reversal point of the slicing blade. One hydraulic shock absorber is mounted to the clamp block.
The shock absorber smooths out the cutting action, especially when slicing very hard and/or
frozen products.
To adjust the reversal block:
1. With the round product dial installed on the platform and a plastic or cardboard cutting
board in place, move the platform into the slicing position.
2. Release the blade up lock valve by depressing the Blade Up Lock Valve Release button,
located on front left hand side of the electrical access door. This should allow the blade to
move down and touch the cutting boards.
3. Open one of the side stainless steel panels to access the blade reversal clamp blocks.
4. Loosen the reversal clamp block screw with a 1/4” hex wrench. Once the clamp has been
loosened, it should be free to move up and down on the cylinder shaft.
5. Pull down on the blade frame to make sure the blade is against the cutting board.
6. Slide the clamp block down against the top of the cylinders. Make sure the shock absorber
is completely compressed.
7. Securely tighten the clamp screw on the block.
8. If the product is not being cut completely through, move the reversal clamp up slightly on
the cylinder shaft before tightening the clamp screw.

High Pressure Regulator


The High Pressure Regulator controls the entering pressure into the machine. This pressure
effects all valves, cylinders and regulators down stream. The preset factory pressure is set to 80
PSI, do not exceed more than 100 PSI.
To adjust the High Pressure Regulator:
1. Lift up on the black cap and rotate. A clockwise rotation will increase the pressure counter
clockwise will decrease it.

Blade Up Pressure

The Blade Up Pressure Regulator is used to control air pressure to the cylinder that operates
the slicing blade during the return stroke. It is located directly to the left of the High Pressure
Regulator.

Machine Regulator
The Machine Regulator is used to control air pressure to the majority of machine components.
This regulator controls the guards, platform rotation, index plates and all other components
besides the blade cylinder.
To adjust the Machine Pressure Regulator:
1. Lift up on the black cap and rotate. A clockwise rotation will increase the pressure counter
clockwise will decrease it.
WARNING: DO NOT SET THE REGULATOR PRESSURE HIGHER THAN 80 PSI, DOING SO

Index Bypass
Selector Switch
Located inside the electrical access door on the left side of the main electrical box. The Index
Bypass Selector Switch can be used to disable one of the product index plates while allowing
to other to function normally. The switch should remain in the "NORMAL" position unless one
of the index plates has failed and needs repair.

Changing the
Slicing Blade
Under normal use you will get years out of the supplied Slicing Blade and should not require
any maintenance other than cleaning. We offer two types of blade sharpening, one for paper and
one for slicing without paper. The paper blade has been sharpened so the blade itself wont slice
the paper as its being inserted into the cake. The non paper blade or Full Sharp is designed to
maximize the cylinder strength and power through a frozen cake with out paper.
If at some point the blade becomes damaged or you have difficulties feeding paper a new blade
may be necessary. Please follow the instructions below to replace it.
1. Remove the air from the machine.
2. Remove the front and rear divider feeders. Loosen the four knobs on the outside edge of
the feeders. For the rear unscrew the two bulk head connectors from the side wall. Lift to
remove.
3. From the rear of the machine loosen the nut of the left side of the blade with a 1/2 in
wrench.
4. Using a 1/4 in Allen key from the front of the machine remove the bolts from the blade
clamps. Remove the left/right blade clamps and the five bolts in the top of teh frame.
5. Remove the blade from dowel pins and install new one.
6. Replace all of the blade clamps and snug all of the bolts.
7. Now back off all of the blade clamp bolts a 1/4 of a turn.
8. Move to the rear of the machine again and tighten the nut on the left side of the blade. The
nut should feel snug and the blade edge should be straight.
9. Completely tighten all blade clamp bolts.
10. Reinstall both front and rear feeders.
11. Test machine with dry cycle.

Setting Dial Centrality


To maintain even portion sizes the dial must be centered under the cutting blade. If you notice
your portion sizes becoming uneven you may need to adjust the dial centrality. This is one of a few
causes of uneven portions for more information please see the "Trouble Shooting" section.
The CS-2000 has two planes of adjustment, in and out as well as side to side. You will need to
adjust both to achieve proper centrality beginning with the side to side.
How to adjust the Dial Centrality (Side to Side):
1. Turn off the main power to the machine.
2. Next mark a center line on the bottom of the blade. See "Setting Divider Centrality".
3. Rotate the indexer by hand until it hits the hard stop. There will be an increase in resistance
at the end of rotation as you compress the snubber.
4. With the centrality adjustment tool (PN: 1912) installed in place of the dial nut check that
the tip of the tool lines up with the center line mark that you made.
5. To adjust the indexer loosen the snubber lock nut and rotate the snubber to the desired
position. Tighten the lock nut and recheck the rotation adjustment.
6. Repeat the above for both indexers.

How to adjust the Dial Centrality (In and Out):


1. Place a marking compound on the dial. I.E. a cardboard base or anything that will leave a
mark when the blade drops on it. We use putty in the factory, its cheap, food safe, leaves
a very visible mark and is cheaper than a cake.
2. Press the cycle starts buttons to run a cycle.
3. Check the center of the marking compound. If it is a perfect star pattern the centrality is
good, if there are gaps in the center the centrality is off and you should proceed to the next
step.

5. Loosen the four platform centrality screws (7/16 wrench) on the sides of the index plate
and adjust in or out.
6. Tighten the four screws.
7. Retest with new marking compound. Continue to adjust until your pattern is as close to the
"Good Pattern" as possible. We find most people are satisfied if the center cut is within a
1/16th of an inch
8. Once the desired pattern is achieved retighten the platform centrality screw.

Index Plate Speed


Control Valves
The Index Plate Speed Control Valves are located on the front of each indexer. These valves
control how fast the product dial will rotate during the machine cycle. Adjusting the valves
clockwise will reduce rotation speed, adjusting them counter clockwise will increase rotation
speed. Each indexer has its own adjustment valve.
To make adjustments, first raise the guard doors. With the front guard doors open, push the
“Rotate Dial” button. This will cause the indexer closest to the front of the machine to rotate one
full cycle. If the index speed is set too fast, it can cause the product to slip, resulting in uneven
slices, (and can cause the index mechanism to malfunction). A correct adjustment is achieved
when the product rotates quickly into position, but does not pound as it comes to a stop.

Located on the front edge of the platform assembly is a zerk style grease fitting. This fitting
lubricates the dial hub bearing, indexer axle bushing and prevents water from entering the drive
clutch. Grease should be applied once a month, or after a heavy wash down. Rotate the dial hub
clockwise as the grease is applied.

1. Disconnect machine air supply and Electrical Power.
2. Unscrew the electrical connection located on the lower right hand side of the Index

are self sealing when disconnected.

Drag Tension Screw


Adjustment
The STOP PIN DRAG ROD, terminates at the STOP PIN DRAG BLOCK. The DRAG BLOCK
is a clamp which regulates how easily the DRAG ROD can move. The DRAG BLOCK tension
is adjusted by rotating the DRAG TENSION SCREW. This adjustment is sensitive and should
be made in small rotational increments, (1/8 of a turn at a time). It should take approximately
2 LBS. of force to slide the STOP PIN ASSEMBLY. This is controlled entirely by the DRAG
TENSION SCREW.
To determine whether the stop pin assembly is out of adjustment:
1. Push DRIVE RACK, back about 1 inch.
2. Push STOP PIN ASSEMBLY back and forth. It should move smoothly with about 2 lb.
of force. If it moves too easily, STOP PIN, could engage in the same hole of the INDEX
CAM PLATE. If it takes too much pressure to move STOP PIN ASSEMBLY, there will be
a noticeable delay between when dial rotates into position and when blade moves down.

Divider Insert Stripper


Adjustment
The red rubber divider insert strippers are located in the front paper feeder area of the machine.
The strippers should be set to allow only one paper divider insert to be fed at a time. Turning
the black finger knob clockwise will raise the stripper while counter clockwise will lower the
stripper. Proper adjustment can be made by sliding one divider insert back and forth under the
stripper and lowering the stripper until it is just barely touching the divider insert. Adjusted
properly, there should be a slight drag on the divider insert, but it should feed freely, while two
divider inserts should not feed at all. The strippers require periodic adjustment and ultimately
may require replacement, (if they can no longer be adjusted to obtain proper feeding).

Adjustment Knob
The backstop adjustment knob is located in the rear paper feeder area of the machine. This
adjustment determines how far back the divider insert will be pulled under the blade. The backstop
adjustment knob should be adjusted whenever paper size is changed. The adjustment knob can
be rotated clockwise for longer paper and counterclockwise for shorter paper. An adjustment
scale is located next to the backstop adjustment knob. This scale will give a good approximate
setting, but some fine tuning may be necessary to get an exact fold.

Divider Insert Shuttle


Speed Control
The speed control valve for the divider insert shuttle are located in the rear paper feeder area of
the machine. The valve is mounted on the front of the air cylinder that drives the shuttle. The
valve is factory set at 1/4 open for maximum divider insert shuttle speed. The shuttle speed can
be adjusted by loosening the locknut on the valve and rotating the adjustment knob. The speed
control valve regulates the shuttle return speed. Rotating the valve adjustment knob clockwise
will reduce the divider insert shuttle speed while counterclockwise will increase the divider
insert shuttle speed.
NOTE: THE SHUTTLE SPEED VALVE IS PRESET AT THE FACTORY FOR MAXIMUM
PERFORMANCE. INCREASING THE VALVE SPEED WILL INCREASE PAPER
MISFEEDS AND DECREASE PART LIFE.

Removing the
Paper Feeders
Removal of the paper feeders may be necessary for cleaning or maintenance.
How to remove the paper feeders:
1. Loosen the eight hand knobs which secure the feeders to the machine. There are 4 knobs
on the front of the feeder and 4 knobs at the rear of the feeder.

2. Remove the two quick connect fittings located at the rear of the feeders . To remove the
quick connect fittings, turn the outer knurled nut counter clockwise.
3. Lift the feeders out of the machine.
Reverse the above process to reinstall the paper feeders. It may be necessary to push down on
the top of the paper feeders, to insure they are correctly positioned on the feeder locating studs,
before tightening the hand knobs.

Paper Feeder Adjustment


To remove the paper feeders first disconnect the electrical and pneumatic quick disconnects.
Then loosen the black plastic knobs and lift the feeder up and out of the machine. The paper
feeders both have two main adjustments. First they can be adjusted side to side, which controls
the paper centrality. (Typically a one time adjustment) Second, they can be adjusted in and out
which controls the blade spacing.
1. Turn off the main electrical power and lower the blade using the blade release button.
2. To adjust centrality remove the front paper feeder and mark a center line down the middle
of the blade.
WARNING: THE BLADE IS VERY SHARP, USE CAUTION WHEN CLEANING OR SERVICING
NEAR THE BLADE.
3. Reinstall the front paper feeder and loosen the side mounting bolts. Adjust the center of
the feeder so it lines up with the center line mark on the blade.
Turn on the main power switch to raise the blade. Adjust the rear paper feeder so that it lines up
with the front paper feeder. The slots that the suction cups travel in should be used as a reference
when aligning the rear paper feeder.
To adjust the blade spacing. Turn off the main power switch. Tap the blade release lever to
allow the blade to drift down to the top of the dial. Using a .010” feeler gauge (approximately
four divider inserts folded in half) measure the gap between the blade and the paper feeder. The
feeler gauge should move up and down and from left to right with slight resistance. If too tight,
loosen the 4 bolts on feeder bottom and move the feeder away from blade. If too loose, move
it toward the blade. Repeat this procedure on rear divider insert feeder.

Sticky Stop Pin


Locate the Stop Pin, and the Stop Pin Bushing. If the Stop Pin does not move up and down
freely, it is likely due to sticky food or grime build up between these two surfaces.
To free the Stop Pin Assembly:
1. Saturate the exposed area of the Stop Pin with soapy water..
2. Push the Stop Pin down and allow it to spring up several times while saturating it with
soapy water.
This should flush out the sticky material. The Stop Pin Assembly is designed to be lubrication
free, this procedure is used to clean the Stop Pin without having to remove any parts. This can
be done as often as necessary. If needed add a few drops of mineral oil to the pin, though this
may indicate the pin internals are wearing and may need replacing.

Vacuum Adjustment
Located inside the main electrical box is the electronic vacuum sensor. This component will
normally not require any adjustment but the following information is provided as a reference.
The power to the machine must be turned on to set the vacuum sensor.

Setting the Vacuum Waste Gate:
With the machine power and the air pressure to the machine turned on and the divider selector
on, open the rear door on the machine and place a divider insert paper over each sets of suction
cups (make sure that the paper is being held securely by the vacuum.)
Back at the vacuum sensor, adjust the vacuum waste gate (this is the small adjustable needle
valve attached to the vacuum sensor.) until the display on the vacuum sensor reads -7.50 (the
display should be colored green once this is set.) Remove the divider paper from the suction
cups (the display should now turn red.)

Vacuum Filters
The Vacuum Filters accumulate small particals of paper from the day to day use of the
system. Checking and cleaning the Vacuum Filters once a month will increase paper feeding
reliability.
How to check and clean Vacuum Filters:
1. Open the rear guard doors.
2. Find the two white delron cylinders located near the paper feeder plugs. (see below)
3. Note, on each cylinder there is a cap. Using a finger nail or small screw driver pull the cap
off the cylinder.
WARNING: DO NOT REMOVE THE CAP BY PULLING ON THE BRASS FITTINGS. DOING
SO WILL DAMAGE THE CYLINDERS.
4. Unscrew the filter trap from the cap.
5. With a light bristle brush knock off any large particulant.
6. Finish by blowing the filter off from the inside out.
7. Reinstall by follwing the proceedure in reverse

Water Trap Bowl
The Water Trap Bowl is located on the bottom of the main pressure regulator. The Water Trap
Bowl has an automatic drain system built in, and will normally not require any attention.
However, it is a good idea to periodically check the level in the bowl to see that the automatic
drain is functioning properly. If you would like to manually drain the bowl follow the instructions
below.
1. Located the water trap on the main high pressure regulator mounted to the valve sub
plate.
2. Turn the main air pressure to the machine off and disconnect the air line.
3. Grab the water trap and with light pressure push up and rotate clockwise simultaneously
to remove.

4. Now you can clean the silica filter and the trap screen.
5. To reinstall repeat the steps in reverse starting with step 3.
WARNING: TAKE CAUTION WHEN REINSTALLING THE TRAP TO NOT DAMAGE THE O-
RING. FAILURE TO DO SO CAN RESULT IN A LARGE AIR LEAK.

This troubleshooting guide is organized to identify a symptom and then give the possible causes.
In the event that there are more than one possible cause, the solutions will be listed in order
from “most likely the problem” to “least likely the problem”.
Divider Insert Does Not Feed
Divider insert does not feed under blade:
1. Check divider insert stripper adjustment. Proper adjustment is made by sliding one divider
insert back and forth under the stripper and lowering the stripper until it is just touching
the divider insert and applying a slight drag on the divider insert. Another way is to raise
the stripper and slide two sheets under the stripper. Lower stripper down until it applies a
fair amount of drag on sheets as you are pulling them out. After you have pulled them out,
you should not be able to reinsert two sheets, but will be able to insert one sheet under the
stripper.
2. Check divider insert guides. After loading inserts into the feeder magazine, loosen the
two nylon screws underneath the front paper feeder. Set the side guide clearance between
the divider inserts and the side guide at 1/16 inch to prevent binding on the divider while
feeding.
3. Check condition of suction cups. Remove cups and inspect for holes. Stretch them apart
and see if any tears are apparent. If there are any holes or imperfections, replace the cup.
If the cup is flattened out, replace cup.
4. Check stack of divider inserts. If the leading edge of the divider is wrinkled or has food
material on it, it will not feed. Replace divider inserts. In some cases you may have to reduce
the amount of inserts in the front divider insert feeder as there is a relationship between
the weight of the dividers in the front and the suction of the divider feeder suction cups.
5. Check suction cup filters and lines. Remove filter elements and wash and blow out. Blow
out lines from filter housing to suction cups with compressed air. Make sure all four ports
are clean and dry. Inspect lines for any cracks.
6. Check speed on cylinder of divider feeder shuttle Sometimes reducing speed will improve
the feeding of the divider inserts. Generally this will be true on longer divider inserts
7. Check the divider feeders alignment. Make sure the front feeder is level to the rear feeder
and that it is aligned from left to right. Make sure both feeders are down on hold down
knob post.
8. Check the motion of the rear feeder. There are four distinct motions during the feeding
process. You MUST HAVE all four.
a. DOWN: When the divider cylinder begins to move, the divider delivery plate pivots
down on the guide rollers.
b. FORWARD: After it pivots down, the divider delivery plate moves forward under
the blade to the front feeder.
c. UP: When the cylinder is all the way forward, it reverses. The reversal action pivots
the divider delivery plate up against the dividers. Suction is created at the surface of
the suction cup to divider.
d. BACK: After divider delivery plate is up and has picked up divider inserts, it feeds
the divider under the blade and positions to for insertion into the cake mechanically
(by the blade).
NOTE: THE REAR DIVIDER INSERT FEEDER MUST MOVE SMOOTHLY AND BE
FREE OF ANY BINDING. THIS MAY REQUIRE REMOVAL, DISASSEMBLY AND
CLEANING.

Insert Not Folding


Divider insert not folding properly:
1. Check backstop setting. If you are using 4 inch long dividers. Set backstop at 4 inches.
This may require some fine adjustment. Dry cycle machine until satisfied with the fold.
2. Check blade gap. This is the distance between the front and rear feeder units. Generally,
the closer the better. The procedure for setting is as follows:
a. Turn off the main power switch.
b. Tap the blade release lever to allow blade to drift down to the top of the dial.
c. Using a .010” feeler gauge (approximately two divider inserts folded in half) measure
the gap between the blade and the paper feeder. The feeler gauge should move up
and down and from left to right with slight resistance. If too tight, loosen the 4 bolts
on feeder bottom and move feeder away from blade. If too loose, move toward the
blade. Repeat this procedure on rear divider insert feeder.
3. Roughen the cutting edge of the blade with a file by filing straight across the cutting edge
of the blade. This will prevent the dividers from slipping over the blade edge as they are
being inserted.
NOTE: A PROPERLY SET MACHINE WILL SNAP THE DIVIDER OFF THE SUCTION
CUPS WHEN THE BLADE DROPS WITH NO DELAY. THE DIVIDER SHOULD
NOT ‘HANG’ ON THE SUCTION CUPS AT ALL.
Insert Pulling Out
Divider insert pulling out of product on blade up cycle:
1. Check length of divider insert. It may be too short, allowing blade to get contaminated by
the product. This will cause the next fed divider insert to stick to the blade and pull out. A
properly sized divider insert should extend out the side and top of the product a minimum
of 1/16 of an inch.
2. Check temperature of product. A product that is too cold will cause the blade to freeze up
and moisture will then condense on the blade which may cause the divider insert to stick
to the blade. Applying clear packaging tape may help to eliminate this problem.
3. Check blade gap between bottom of blade and top of dial. If the blade comes too close to
the dial, it could slice through causing the divider to pull out.
4. Check height adjustment. If product contacts feeders it will leave food material on it which
will contaminate blade and cause next divider to stick and pull up.
Insert Not Placed
Completely Into Product
Divider insert appears to be inserted halfway into product:
1. Check temperature of product. A product which is too cold will cause the blade to slice
through the divider insert while slicing the product. This results in the blade getting
contaminated and sticking to the next fed divider insert and pulling it out of the product.
2. Check blade edge. It may be too sharp. If so, dull the edge slightly.
3. Check blade gap between bottom of blade and top of dial. If the blade comes too close to
dial, it could slice through causing divider to pull out.
4. Check height adjustment. If product contacts feeders it will leave food material on it, which
will contaminate the blade and cause the next divider to pull up

Insert Folds Into Next Slice


Divider insert folds over into next slice:
1. Divider insert is too long causing it to be folded over to the next slice by the blade. This
typically begins near the center of the product as the divider inserts are very close together
at the center.

2. Check the height adjustment. If the divider insert feeders are too close to the product and
the divider inserts do not clear the feeder, they could get folded over during indexing. A
proper height setting should be about 1/2 inch above the divider insert.
Insert Tears
Divider tears on insertion.
1. Check blade edge. It may be too sharp. If so, dull the edge slightly.
2. Feeders are misaligned or the blade gap is too close. See Paper Feeder Adjustment page
30.
Safety Relay Fault Detected
This machine is equipped with a Safety Relay connected to the front and rear machine guards
and the machines emergency stop switch. This relay is also monitored by the machines PLC
controller. If the PLC detects a problem with the Safety Relay, the machine will stop operation
and the air pressure to the machine will be shut down. To show this fault, the output O/5 on the
main PLC controller will flash. If this fault occurs, contact FoodTools immediately.

LIMITED
WARRANTY
FOODTOOLS, warrants to and for the sole benefit of the original purchaser of the equipment,
that such equipment is free from defects in material and workmanship under normal and proper
use, operation and maintenance. This warranty shall remain in effect for a period of one year
after delivery of the equipment to the original purchaser. Notice of any claimed defect must
be promptly given by the original purchaser to FOODTOOLS, and the claimed defective part
or the equipment returned to FOODTOOLS, prepaid. Notice must further include consent to
FOODTOOLS, to inspect the equipment or part to determine that it is defective and that it has
only been subject to ordinary use and service.
If a valid warranty claim is made during the above warranty period, FOODTOOLS shall provide
the parts required to repair or replace as FOODTOOLS, shall elect, the defective part or the
equipment. The installation and freight cost of the replacement parts or equipment shall be at
the expense of the owner.
This warranty does not cover damage through accident or misuse. Ultrasonic blades that are
damaged through contact with non-food products are not covered by this warranty.
FOODTOOLS, WARRANTY IS LIMITED TO REPLACING ANY EQUIPMENT THAT IS
PROVEN TO BE DEFECTIVE, AND FoodTools, INC. IN NO EVENT SHALL HAVE ANY
LIABILITY FOR PAYING INCIDENTAL OR CONSEQUENTIAL DAMAGES, INCLUDING,
WITHOUT LIMITATION, DAMAGES ARISING FROM PERSONAL OR BODILY
INJURY OR DEATH, OR DAMAGES TO, OR LOSS OF USE OF, ANY PROPERTY. NOT
WITHSTANDING ANY OF THESE TERMS AND CONDITIONS, THE WARRANTIES SET
FORTH SHALL APPLY IN CONNECTION WITH ANY SALE OF THE EQUIPMENT BY
FoodTools, INC. AND ARE IN LIEU OF ALL OTHER WARRANTIES EXPRESSED OR
IMPLIED, INCLUDING WARRANTIES OF MERCHANTABILITY AND FITNESS FOR A
PARTICULAR PURPOSE.
FOODTOOLS, makes no warranty concerning the compliance of the equipment with any local,
