Introduction
I CHOSE THIS TOPIC, BECAUSE I
CONSIDER THAT MEXICAN GASTRONOMY
IS THE BEST, AND NOT ONLY BECAUSE I
AM FROM THIS COUNTRY, BUT BECAUSE
OF ITS TRAJECTORY AROUND THE WORLD
AND THE EXCELLENT REVIEWS IT HAS
RECEIVED FROM FOREIGNERS, AS
MEXICAN FOOD IS VERY DIVERSE, AND
MOST OF THEM ARE ORIGINATED FROM
PRE-HISPANIC TIMES, WITH THE
COMBINATION OF DIFFERENT SPICES OR
INGREDIENTS THAT MAKE A WONDERFUL
FLAVOR.

History
Mexican gastronomy also has its origins in pre-
Hispanic times, specifically in the Mayan and Aztec
cultures. And the varieties and delicacies that reign in
our cuisine, previously revolved around the king
ingredient, corn.

The Nahua
These Nahua were
experienced eaters, they
had provisions, owners
of beverages, owners of
edible things (corn,
nopal, maguey, chili,
insects, meats, pulque,
cacao, tomato, quelites,
fruits, flowers, legumes).
Food trade
In Tenochtitlan, it was
necessary to have a market
every day, where all things
could be acquired. It is the one
that dazzled Cortes in
Tlatelolco, and which he
described to the Spanish king
as "as big as twice the (plaza)
of the city of Salamanca, all
surrounded by gates around,
where there are daily more
than sixty thousand souls
buying and selling; where
there are all kinds of goods
that are found in all lands, as
well as maintenance and
provisions.

Enchiladas Verdes
Enchiladas Verdes are a traditional Mexican dish
that originated in central Mexico. This dish
consists of corn tortillas filled with shredded
chicken, covered with a green sauce made of green
chiles, tomatoes and herbs, and sprinkled with
fresh cheese and onion.
The history of Enchiladas Verdes dates back to
pre-Hispanic times, when the Mexica and other
indigenous peoples consumed tortillas stuffed
with chiles. With the arrival of the Spanish,
Mexican cuisine began to fuse with European
ingredients, and enchiladas became a popular dish
throughout the country. Green sauce was
incorporated into enchiladas in colonial times,
when the Spanish introduced tomatoes and other
herbs to Mexico. Over time, the Enchiladas Verdes
recipe evolved and adapted to different tastes and
regions of Mexico, giving rise to regional
variations of the recipe.
Today, Enchiladas Verdes are one of the most
popular dishes in Mexican cuisine, and can be
found in restaurants and homes around the world.
This dish has evolved and has been adapted to
different tastes and preferences, but it remains a
delicious sample of Mexico's rich culinary
tradition.

We all have a unique and favorite dish of
Mexican gastronomy, in my case it was
enchiladas verdes, and it is amazing how
the food that we continue to eat or cook
to this day, had a pre-Hispanic origin, as
it was in the Aztecs.
