228.43. Hair Restraints.

and unwrapped single-service and single-use articles. Employees may only wear sun visors, if they are
also wearing hairnets.

§228.40. Jewelry Prohibition. Except for a plain ring such as a wedding band, while preparing food, food
employees MAY NOT wear jewelry including medical information jewelry on their arms and hands. [35].

(f) Outside receptacles.
(1) Receptacles and waste handling units for refuse, recyclables, and returnables used with materials
containing food residue and used outside the food establishment shall be designed and constructed to
have tight-fitting lids, doors, or covers.
(2) Receptacles and waste handling units for refuse and recyclables such as an on-site compactor shall
be installed so that accumulation of debris and insect and rodent attraction and harborage are minimized
and effective cleaning is facilitated around and, if the unit is not installed flush with the base pad, under
the unit.
(o) Using drain plugs. Drains in receptacles and waste handling units for refuse, recyclables, and
returnables shall have drain plugs in place.
NOTE: DUMPSTER LIDS SHALL REMAIN CLOSED WHEN NOT IN USE.
A receptacle shall be provided in each area of the food establishment or premises where refuse is
generated or commonly discarded, or where recyclables or returnables are placed. - — -

be kept covered:
(1) inside the food establishment if the receptacles and units:
(A) contain food residue and are not in continuous use; [44] or (B) after they are filled; [44] and

(a) Cleanability. Except as specified under subsection (d) of this section, and except for antislip floor
coverings or applications that may be used for safety reasons, the floors, floor coverings, walls, wall
coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily
cleanable, and light in color
(b) Floors, walls, and ceilings, utility lines.
(1) Utility service lines and pipes may not be unnecessarily exposed.
(2) Exposed utility service lines and pipes shall be installed so they do not obstruct or prevent cleaning of
the floors, walls, or ceilings.

(a) Repairing. The physical facilities shall be maintained in good repair.
(b) Cleaning, frequency and restrictions.
(1) The physical facilities shall be cleaned as often as necessary to keep them clean.
(2) Except for cleaning that is necessary due to a spill or other accident cleaning shall be done during
periods when the least amount of food is exposed such as after closing.

§228.186. Premises, Buildings, Systems, Rooms, Fixtures, Equipment, Devices, and Materials.
(f) Drying mops. After use, mops shall be placed in a position that allows them to air-dry without soiling
walls, equipment, or supplies.

Storing maintenance tools. Maintenance tools such as brooms, mops, vacuum cleaners, and similar items
shall be:
(1) stored so they do not contaminate food, equipment, utensils, linens, and single-service and single-use

§ 10.02.008(e), the regulatory authority shall treat the inspection report as a public document and shall
make it available for disclosure to a person who requests it as provided in law.
For the purposes of chapter 437, Texas Health and Safety Code, the department adopts the retail food
establishment inspection report form as specified in the following figure. Every food service
establishment in the city except temporary food service establishments and retail food establishments,
shall;
Display at the entrance of the food establishment, a placard approved by the regulatory authority stating
the sanitary condition received at the time of the most recent inspection of the establishment.
Immediately following each inspection of a food service establishment, the regulatory authority shall
issue an appropriate notice in accordance with § 10.02.008(j).(1) post the following items in a location in
the food establishment that is conspicuous to consumers and in public view:
1. The most recent inspection report
2. The Certified Food Manager certificate
3. Current permit
4. The most recent inspection scorecard
