Introduction

Filipino delicacies, whether enjoyed as appetizers or snacks, hold a


special place in the hearts and palates of Filipinos. They represent
cultural values, are a symbol of Filipino hospitality, and are an artistic
expression of food preparation rather than just being a means of sating
appetites or stuffing the stomach. As a comfort food and a connection
to their cultural roots, these sugary delights will always play an
important role in Filipino cuisine (Cruz, 2018).

Background of the Study
Polvoron, a Filipino delicacy with Spanish roots, is a sweet, crumbly treat with cultural
significance. It is a common treat during celebrations and symbolizes joy, unity, and the
sweetness of life’s moment. Polvoron contains high cholesterol and glucose content due to
its tremendous amount of sugar (Soriano 2020), resulting in health problems for some
Filipinos (Doblon-Merilles 2019). The incorporation of rice bran and squash into polvoron
production presents a promising venture, as they are readily available and cost-effective.
This approach benefits local farmers and contributes to the economic and health well-
being of society. However, traditional polvoron recipes prioritize flavor and texture over
nutritional value, leading to nutrient deficiencies, weight gain, and increased risk of chronic
diseases.
