CHAPTER I INTRODUCTION

As part of ISUFST's goal, the College of Hospitality

Management wants its students to be devoted to delivering
high-quality education and technical skills, technology
training in order to develop labor that is globally competitive
in the tourism, hotel, and restaurant industries. and in
developing graduates with global competence who can advance the
socio-economic, political, cultural, and moral growth of the
community, as well as potential personnel for the hospitality
sector. The graduates are prepared to competent, committed.
morally and socially responsible hoteliers. restaurateurs,
event and travel professionals in a multi-culturally diverse
environment toward the achievement of quality living.

During the second and fourth year of the program, students

are required to attend an On the Job Training (OJT) in hotels,
resorts, restaurants, and event management companies.

Internships give students insightful knowledge of a broad

industry that includes a variety of industries. Hotel, tourism,
and restaurant industries all provide a variety of training
internships that hospitality interns can select from. However,
many students elect to pursue a career in a more specialized
area of the hospitality business after finishing their
hospitality internship programs, such as event planning or
tourism attraction management. As they continue their studies
and look for employment in the future, many students find that
completing a hospitality internship program can help them select
which area of the hospitality sector they would like to pursue
a career in.

On-the-job Training is part of a college curriculum that

ILOILO STATE UNIVERSITY OF FISHERIES SCIENCE AND TECHNOLOGY
DUMANGAS CAMPUS
College of Hospitality Management

aims to train and orient students about the work and their future
career. It is a type of skill development where a worker learns
how to do the work through hands-on experience. On the Job
Training is one method by which students are exposed with
different work situation designed to give students an
opportunity to experience and a chance to apply the theories
and computation that they have learned from the school. It also
helps the students to acquire relevant knowledge and skills by
performing in actual work setting.

OJT is very important not only to teach students regarding their

chosen career but also to show students the reality about working.
The students will be exposed to the actual work related to the
course that they are taking. It also allows those with no
experience to work and to learn at the same time. On-the-Job
Training helps the trainee to learn more about his chosen field
and practice what he has learned from the school. It helps in
the building up of the trainee's competence. Of course, when
a students is competent enough, he will be able to do things
successfully and. This training develops one's professionalism
in dealing with people. After the training, the trainee will
be able to handle situations properly and he'll be able to know
how to socialize well with his colleagues. He will also be able
to work well with everyone and he'll have a good teamwork. OJT
also enhances the critical thinking abilities and discipline
of the student conducting his training in a company. His ability
to make sound decisions and evaluate pertinent factors will be
improved.

Having a proper On-the-Job Training helps in the

preparation of future professionals for their future jobs. What
the students learned in their On-the-Job Training, even the
little things, can be applied when they are already working.
Students will be trained not only academically but socially as
well. The way they work and communicate with others will not
be a problem for them anymore. Aside from work experience,
On-the-Job Training allows the trainee to get acquainted with
the real professionals and to meet people having different
positions in the company, either high or low. The trainee will
ILOILO STATE UNIVERSITY OF FISHERIES SCIENCE AND TECHNOLOGY
DUMANGAS CAMPUS
College of Hospitality Management

be able to know how to adjust to other people's personalities

and attitudes.

On-the-Job Training requires effort and seriousness. A

trainee should take the OJT seriously as it can be a powerful
tool for a person in preparing for the next chapter of life as
a professional. It can possibly be a source of recommendation
when they take that big lift from being students to career
professionals someday.

CHAPTER III AREA ANALYSIS

FOOD AND BEVERAGE DEPARTMENT

Food and beverage departments liquidate their profits and

losses as well as their sales to determine the foods raw cost.
They can calculate it by adding up their initial purchases and
inventory, then deducting that total from their final inventory.
A group buying organization was coming together, restaurant
portion control was implemented, the First in First out method
was used, they kept their staff informed, and they created a
profitable menu as ways to control and keep down food costs.
They also regularly calculated their inventory and worked with
their food supplies. The cost of the hotel is controlled by the
heads of each department in various parts of the hotel, but
accounting, sales, and marketing departments are in charge of
closing out all sales reports.

Reduced hotel expenses and increased revenue are the goals of

cost control personnel. By offering cheaper rates to guests and
lowering costs, it can also give hotels a competitive advantage
by allowing them to better target budget-conscious tourists.

HOUSEKEEPING DEPARTMENT

A room attendant or hotel housekeeper, to put it simply .

Your main duty in this role is to maintain sanitize, clean rooms
while maintaining a pleasant, professional tone for the
facility ’s visitors. In order to meet with the housekeeping
supervisor for a briefing, room attendants must arrive at work
early enough to report to her. Attendants typically receive a
log listing all the rooms that require cleaning.

Additionally, they must note on these assignment papers

ILOILO STATE UNIVERSITY OF FISHERIES SCIENCE AND TECHNOLOGY

that they have cleaned each room, given the lost and found
department any items that guests may have left behind, and made
sure that the room keys are handled securely. To ensure that
guests have a pleasant and comfortable stay, room attendants
are in charge of cleaning and maintaining guest rooms. They make
certain that every room is hospitable and tidy, and they react
to all inquiries from guests in a friendly and informed way.

A room attendant ’s responsibilities include making beds,

changing towels, and cleaning bathrooms. You ’ll also respond
to guests inquiries and ensure that the rooms are always
well-stocked, clean, and welcoming. Operational ProceduresSOPs
ensure that tasks are done consistently across all rooms. It
could be as simple as how they put on bed linen, tie back the
curtains, or lay out the toiletries. All these small details
are integral to the overall guest experience.Perform the
following sample proper housekeeping procedures for an occupied
room and use the housekeeping SOP checklist to record task
completion:

 Clear the dustbins.

 Collect and replace used bedroom and bathroom linen.
 Make the bed.
 Vacuum floor carpets and rugs.
 Clean the bathroom and replenish bathroom supplies.

CHAPTER IV EXPERIENCE IN THE DURATION OF TRAINING

I started my On Job Training in century 21 was such a very

exciting experience for us because I felt the essence of being
an HM student My first schedule in century 21 was assigned to
the housekeeping from 1:30 pm to 9:30 pm, at first I'm a little
nervous because it was my first day.

1st & 2nd week

At the first day of duty June 17, 2024 I meet sir Christian D.
Talaman Our Room Attendant then he gave tasked us to do is to
dusting the stairway , ground floor and cleaned the lobby. Next
week of my duty I meet sir Christian Paul Delmo our Room Attendant
he taught us how to do the standard way of making up the bed.
It was really hard at first but as time goes by I was able to
learn the right way of making up the bed.On the first week of
my training period, I was already exposed in cleaning the rooms
and comfort room.

3rd & 4th week

On my third week I was July 1, 2024 in F&B Department. The guests

should be made to feel that they are being cared for and not
that they are an intrusion into the operation. The duties that
ILOILO STATE UNIVERSITY OF FISHERIES SCIENCE AND TECHNOLOGY
DUMANGAS CAMPUS
College of Hospitality Management

I carried out are many and varied according to the particular

food and beverage service area concerned. Before the opening
of the restaurant, we need to prepare for service or what we
called "mise-en-place'. It is the traditional term used for all
the duties that have to be carried out in order to have the room
ready for service. I am responsible for the task that was given
to me. I am easy to get tired, that's why there was a time that
I'm absent because my whole body and my feet really ache. But,
as the day goes by. I learned to adjust.Once the guest's enter,
I greet them and assist them to their table. Sometimes, I take
their orders, but most of the time; I delivered the orders to
the guestroom. The restaurant is located inside the hotel.
Sometimes, I fetch and places plates upon the table and so on,
and help to clear the tables after each course. As a trainee,
I need to be familiarized of all the items on the menu in order
to advise and offer suggestions to customers. How to serve the
dish correctly on the menu. What it's accompaniments are, and
also how to serve various types of drink in the correct glass
and at the right temperature. Days passed, I learned that
punctuality is all important, the knowledge and most importantly
the attitude to costumers.

You must converse with the costumer . the Housekeeping Department

I had learned the standard operating procedure for room make-up
like stocking items at the cart with supplies before room
checking, opening the window, collecting of garbage, stripping
the bed, making up the bed, scrubbing of the bathroom sink toilet
bowl cleaning and drying and amenities set-up. During my training
period i got to know the meaning of hard work. Working with my
co trainees was not so difficult as I got friendly with them.
Working with experienced staff has help me a lot in learning
how to get the maximum work done in short period of time. I learned
a lot throughout this training that I can put to use as soon
as I graduate. My abilities have significantly increased, as
have my communication and guest interaction skills.
Unfortunately, everything has an end. The end of my training
is on July 13 2024 I'm appreciative of the staff's willingness
ILOILO STATE UNIVERSITY OF FISHERIES SCIENCE AND TECHNOLOGY
DUMANGAS CAMPUS
College of Hospitality Management

to impart their expertise on me as well as helpful hints for

making my job easier. After my one week in the Housekeeping
department, I moved on to the F&B Services department,
specifically the coffee shop. I was placed under the guidance
of Sir Christian D. Talaman. who provided valuable insights and
training during my time there. During this period, I also had
the opportunity to assist with room service. Working in the Food
and Beverage Services was a different experience compared to
Housekeeping. It required good communication skills and the
ability to handle customer requests promptly. I learned the
importance of providing excellent customer service, always
wearing my sweetest smile and maintaining an approachable
demeanor. With these qualities, I received more positive
feedback from guests, who appreciated my friendly and helpful
attitude.

Overall, my OJT experience in both the Housekeeping and F&B

Services departments was enriching. I gained valuable practical
skills and improved my interpersonal skills. This experience
confirmed my passion for the hospitality industry and motivated
me to strive for excellence in my future career endeavors.

CHAPTER V OBSERVATION AND IMPRESSION HOTEL REPORT

OBSERVATIONS

My observation on century 21 hotel is that the hotel is

not big but it is clean and the signal is good. all the staff
there will say or greet good morning, good afternoon, good night.
when I'm working on my work, my RA does everything to make me
come true. he is sir Paul Alinsoring, his staff is very kind.
the many lessons I learned and knowledge gained from him and
all the staff. the manager of the century 21 hotel is kind and
not in a mood sometimes. the century 21 hotel is like making
friends there because all the staff treat you like friends or
family, even if they are students, there are times when you are
strict with the word cleanliness, ma’am Elisabeth Layso is
special when it comes to housekeeping, she is very strict, and
I admire that because they want it to be clean and for more guests

to come and for the company to be well named.

IMPRESSIONS
My impression of century 21 Hotel. As a student of
Hospitality Management at ISUFST Dumangas Campus, I learned a
lot and I have improved my abilities in the Hospitality Industry.
The training is very helpful, they provide their information
and accommodations in Hospitality Industry. I become so inspired
by the staff of Century 21 Hotel, how they deal with their trainee,
their proportion, their enjoyment, and their learnings. Some
of them are dealing with us like certainly considered one among
them. I discovered a lot in my whole training. Century 21 Hotel
has been a great experience for me, and I'm grateful to the staff
for giving me hard work while enjoying It. Even though 200 hours
isn't a completely long time, I become nonetheless capable of
the work and training I truly needed. Being a member of the
Century 21 Hotel Family. I recognize how they treat all trainees
with professionalism, kindness, humility, and respect. They gave
me the best experience while training in the hotel.
