Cookies are popular snacks widely consumed by people of all ages. They are traditionally
made from soft wheat and are nutritious and convenient foods with long shelf life. The major
attraction of cookies is the wide variety of types that are possible. When incorporated with mung
beans, the cookies provide one of the best selections among various customers, especially those
belonging to the health-conscious cultural groups. Unlike other cookies, mung bean cookies
contain dense and plant-based nutritional value capable to provide energy across all ages.
The business envisions in addressing malnutrition in which a locally produced and
consumed food is improved by applying food processing techniques that enhance the amount and
availability of desirable nutrients. The enterprise starts its operation at Brgy. Ili Sur, San Juan, La
Union. Residents of the town as well as neighboring towns are the initial target markets. The
product is deemed affordable by customers, even those who belong to the poverty line. Because
La Union is named as the “Surfing Capital of the North” with San Juan as the hotspot of this
recreational activity, other target markets include local and foreign tourists.

This project aims to achieve the following targets:


a. To produce a net income of at least Php 500,000 by the end of its first year of operation.
b. To improve product reliability to enhance customer satisfaction.

What are the processes involved in producing the product?

The following steps in the preparation of mung bean cookies will be observed:
1. Preheat the oven to 375°. Spray the cookie sheet with nonstick spray.
2. Mix the softened butter into the sugar to create the desirable consistency. Crack the
egg and lightly beat the egg yolks and whites before stirring them into the butter-sugar
mix.
3. Measure and mix the vanilla, salt, and baking soda. Mix the batter. Break apart any
remaining clumps and make sure the batter shows consistent color and texture.
4. Add the all-purpose flour and mung bean flour all at once. Mix the batter as little as
possible to avoid forming too much gluten. Stop mixing as soon as there is no more
visible flour on the dough or in the bottom of the bowl. Scoop the batter then use a
tablespoon, at one’s preferred but uniform size, to measure each rounded ball of
dough.
5. Place the rounded balls of dough onto the prepared cookie sheet, leaving enough space
between each one to allow for spreading during baking. Use the back of a spoon to
gently flatten each ball of dough slightly.
6. Place the cookie sheet in the preheated oven and bake for 8-10 minutes, or until the
edges of the cookies are lightly golden brown.
7. Once baked, remove the cookie sheet from the oven and allow the cookies to cool on
the sheet for a few minutes before transferring them to cool completely.
8. Repeat the scooping, flattening, and baking process with the remaining dough until all
the cookies are baked.
9. Once cooled, store and package the cookies in an airtight container.
