INTRODUCTION
Quality food assurance is a system that is meant to ensure that all aspects of
quality in food production meet both internal and external standards and
regulations. The aim of quality assurance (QA) is to increase the customer’s
confidence in a food product and in the corresponding company’s credibility. To
implement quality food assurance, businesses must establish a set of activities
that will ensure all aspects of quality, including product characteristics, portion
size, customer expectations, value for money, and others. These activities may
include maintenance, record-keeping, auditing, and other key processes that will
prevent any defects while food is on the production line. QA is a proactive
process, meaning it prioritizes methods and equipment needed to prevent product
defects. Overall product quality is improved by catching flaws early on and
reducing product inconsistencies or contaminations. This can be achieved with a
good quality management system and taking advantage of data analysis.

STAGES OF PRODUCTION
There are generally three stages in a food factory where quality assurance is
important:
1. Raw Materials Receiving Stage:
The producing of a quality product is possible
only when the raw materials used in it are also of
good quality. Since it is the starting point in the
production, so it is very important to assure the
quality of the raw material before using it in the
process.
Steps for Quality Assurance at Raw Materials Receiving Stage:
• There must be some specifications set and only those received good should be
accepted that meet those specifications.
• The purchase should only be done from licensed suppliers.
• The packaging and temperature of the raw material should be checked to
prevent any spoilage.
• The vehicle used for transportation should also be conditioned for carrying
food products.
• After receiving the raw material should be cleaned, sorted, graded and
sanitized before forwarding it for further processing.
• It should also be stored in desirable storage conditions.

2. Food Processing Stage:


Proper attention is required during the food
processing stage. Various parameters should be
checked for ensuring the production of quality
and safe end product like correct amount of
ingredients, accurate method of preparation,
mixing, processing time, temperature and some
more, specific for the product.

Steps for Quality Assurance at the Food Processing Stage:

• Food samples should be tested at random intervals for color, acidity, moisture,
microbiological test, chemical test, weight and volume.
• The processing equipment should be cleaned and sanitized from time to time.
• To check food safety, spoilage and any other risk Hazard Analysis Critical
Control Points (HACCP) system and ISO 9000 standards can be adopted.
3. Finished Product Stage:
At this stage, it is inspected that how many and
up to what level the specifications have been met
by the final packaged product.

Steps for Quality Assurance at the Finished Product Stage:

• Sampling should be done according to the sampling plan.


• Internal testing should be done before sending for delivery.
• The testing should also be done by independent testing labs.
• The finished product should be passed through sensors to check the presence
of any harmful material.
• Packaging should be done as per the food product’s storage and transportation
requirements.
• The important information should be labelled on the packaging including the
important information a customer should know.

IMPORTANCE OF QUALITY ASSURANCE


IN FOOD SAFETY
1. Ensuring Product Safety:
No-one would buy a food product if they thought it could be dangerous.
Consumers place a high degree of trust in the food products they purchase, relying
on manufacturers and regulatory agencies to ensure the safety and quality of items
available for consumption. Any indication that a food product may pose a health
risk can quickly erode consumer confidence and lead to widespread avoidance of
that product. Consumers are increasingly selective about the quality and safety of
the food they consume, and any perceived lapse in safety measures can have
serious consequences for a brand’s reputation and bottom line. Therefore, it is
crucial for food companies to prioritize and maintain
the highest standards of food safety to retain consumer
trust and loyalty.
2. Maintaining Consistent Product Quality:
People expect a reliable quality of product, and that expectation is the foundation
for brand familiarity and affinity. If consumers
can’t rely on a consistent and predictable quality
from the food they buy, they just won’t choose that
brand again. Consistency in product quality is
crucial for building trust and loyalty among
consumers. When customers know they can
depend on a brand to deliver the same level of
quality every time they make a purchase, they are
more likely to become repeat buyers and even brand advocates. On the other
hand, if a brand fails to meet expectations in terms of quality, it can damage its
reputation and lead to a loss of customer trust. Effective quality assurance
processes are essential for ensuring that products meet the required standards and
specifications.
3. Meeting Compliance Standards:
Food cannot be legally placed upon the market if it
is non-compliant with applicable laws and
regulations. Food safety regulations are in place to
protect consumers from potential health risks and
ensure that products meet certain standards of
quality and hygiene. Failure to comply with these
regulations can result in serious consequences for
food producers, distributors, and retailers, including fines, product recalls, and
enforcement actions. Quality assurance processes play a crucial role in ensuring
that products and services meet the required standards and specifications set by
laws and voluntary assurance schemes.

4. Protecting Brand Reputation:


Your brand is the face of your business, and any negative
incidents related to product quality can have a serious
detrimental impact on your reputation. Customers expect
consistent quality and safety when purchasing your products,
and failure to meet these expectations can result in loss of
trust and loyalty. Implementing effective quality assurance

exceed industry standards. Quality or safety incidents can tarnish a brand’s
reputation and erode consumer trust. It is far preferable to maintain a positive

long-term success of your food

competitive market, consumers are
becoming increasingly concerned about the
safety and quality of the food they
consume. They want to know that the
products they’re purchasing aren’t only safe to eat but also meet their
expectations in terms of taste, nutritional value, and ethical sourcing. One of the
most effective ways to enhance customer trust is by implementing rigorous
quality assurance processes. This involves ensuring that all ingredients and raw
materials used in the production of your food products are of the highest quality
and meet strict safety standards. It also involves regularly testing and monitoring
your products throughout the manufacturing process to identify and address any
potential issues before they reach the market.

6. Driving Business Growth:

Compliance with voluntary assurance


schemes can create commercial opportunities,
since many food manufacturers will only
approve suppliers who are able to evidence the
effectiveness of their assurance systems
through a valid certificate. This effectively
necessitates the implementation of a range of
quality assurance processes that are required for compliance. Having a valid
certificate from a recognized voluntary assurance scheme can give suppliers a
competitive edge in the market, as it demonstrates their commitment to
maintaining high standards of quality and safety. Overall, participating in
voluntary assurance schemes not only opens up commercial opportunities but
also helps suppliers build trust and credibility with their customers. Certification
serves as a tangible validation of a company’s commitment to meeting industry
standards and regulations, which can be crucial for gaining access to certain
markets or securing partnerships with other businesses.
KEY STANDARDS AND REGULATIONS OF

Food safety standards are crucial frameworks developed to ensure the production,
handling, and distribution of food products are safe for consumption. These
standards help businesses mitigate risks, prevent contamination, and comply with
legal and regulatory requirements. Here are some key standards and their
relevance to food safety:

1. ISO 22000:

An international standard for food safety management


systems. It provides a framework to manage food safety
risks throughout the supply chain, ensuring safe food
production, storage, and handling. It harmonizes various
national food safety standards, making it easier for
businesses to operate globally while ensuring food safety.

2. HACCP (Hazard Analysis and Critical Control Points):

A preventive approach to food safety that identifies,


evaluates, and controls potential hazards in the food
production process. HACCP ensures that critical points in
the process where contamination or safety risks could
occur are monitored and controlled. It reduces the
likelihood of contamination, helping companies focus on

processing requirements. It is recognized globally,
providing food businesses with a reliable

4. GFSI (Global Food Safety Initiative) Standards:

A collection of internationally recognized standards for


food safety, including schemes like BRC (British Retail
Consortium) and IFS (International Food Standard).
GFSI standards ensure that food safety practices are
maintained from production to retail. It is recognized
worldwide; these standards help companies manage
food safety in complex supply chains.

5. ISO 9001 (Quality Management System):

A standard for quality management systems that helps


businesses ensure customer satisfaction. It indirectly
impacts food safety by ensuring quality processes are
in place, which helps in preventing food safety issues.
It improves operational efficiency, ensuring
consistency in food production and reducing the risk
of unsafe products.

6. Good Manufacturing Practices (GMP):

Guidelines that ensure products are consistently produced and


controlled according to quality standards. In the food industry,
GMP ensures proper hygiene, equipment maintenance, and
production processes, reducing contamination risks. It
provides the foundation for producing safe, high-quality food,
and it is often required for regulatory compliance.

Common quality assurance practices and procedures in food safety ensure that
food products meet safety, quality, and regulatory standards. Key quality
assurance practices include:

1. Understand the Food Safety Hazards:


The first step to ensuring food safety is to identify and assess the potential hazards
that can affect the quality and safety of food products. These hazards can be
biological, chemical, physical, or allergenic, and they can occur at any stage of
the food production, processing, distribution, or consumption. You need to
understand the sources, characteristics, and effects of these hazards, and how they
can be prevented, controlled, or eliminated.

2. Implement a Food Safety Management System:

A food safety management system is a


systematic approach to managing food safety
risks and ensuring compliance with food
safety regulations and standards. It involves
establishing food safety policies, objectives,
procedures, and records, and applying the
principles of hazard analysis and critical
control points (HACCP). HACCP is a

controlling the critical points where food safety hazards can be reduced or

involve rigorous testing, monitoring, and documentation at every stage of
production, from sourcing raw materials to packaging and distribution.

maintain freshness as they move throughout the supply chain. Effective quality
assurance processes hold a fundamental importance for food manufacturers.
