Summer Menu(#67)
Wine #1 - Champagne Devaux Cuvée D

Champagne Devaux Cuvee D is the house style Champagne from The house of Devaux,
Located in the Cotes De Bar Subregion of Champagne.
Cuvee D Brut is a Non-Vintage expression, a blend of majority Pinot Noir(55%), which is at
home in the Cotes de Bar, and Chardonnay(45%) from Cotes de Blanc.
The grapes are vinified by gently pressing and fermentation in mostly steel vats. The
assemblage(blending) is done very carefully using a significant amount of reserve
wines(40%), adding to the complexity of the final product.
The house was founded in the mid 1800s and has been run by women for significant part of
its history, starting in 1846 when Veuve Claude-Joseph Devaux was widowed and took
charge of the business, and ended when Marguerite Marie-Louise, aged 80, passed away in
1951, being the last of the three Champagne Widows.

Nose - Bready, Toasty, Cheesy-leesy, Green Apple
Palate - Crisp, Mineral, tart strawberry, white peach , kumquat
Pairing - Paired with the Strawberry/Ponkh Course, The bubbles of the champagne helping
with the Crunchy character of the course, and Champagne and strawberries being a classic
combination. The leesy and toasty character of the champagne also works well with the
smokiness of the strawberries, and being a Pinot Noir dominant blend, the Champagne also has
a distinct red-fruit character.
#2 - Masumi Kaya Junmai Sake

Masumi is located in Fujimi & Sua in Nagano Prefecture(1000 masl/4000 ft.asl) and
is run by the Miyasaki Family since 1662.

Nagano is in Central Honshu, and has a very hilly and mountainous terrain. It also
has plenty of natural springs for soft water for sake production.

The Kaya is made with Miyama Nishiki, Sankei Nishiki,and Hitokogochi Rice,
polished down to 70%, and is a Junmai Sake, focusing on the savoury, creamy
characteristics of sake.

Kaya refers to the Golden-Brown colour of the rice fields during harvest season.

Wine #3 -2017 Château La Bastide Rougepeyre
Cuvee Prestige
Paired with Pork/Sweet Potato
The wine is a blend of Grenache,Cabernet Franc & Cabernet Sauvignon, sourced from old
vines(35 YO), grown in Clay-Limestone soils with pockets of silex. It is aged for 12 months
in Oak (20% new).
The Winery is situated in Cabardes AOC in Pennautier, near the town of
Carcassonne(10km) and Toulouse in the region of Rousillon in South-Western France, near
the Spanish Border.
The winery takes its name from the countryside estate of Roger Pierre, one of the former
Lords of Cabaret and is still owned by his descendants, Count & Countess Dominique de
Lorgeril (9th Generation).

Wine #4- 2021 Symington Pequeno Dilema
Made by the Symington family, one of Douro top winemaking families, to combat the
question, “Whether the Douro, known for its Ports , make elegant white wines?”
Fermented and aged in French and Hungarian Oak Barriques sur lie, with a lot of
Batonnage for around 12 months.
Grapes harvested from high altitude vineyards in the Cima Corgo subregion of
Douro. Tapadinha Vineyard(580M, Rio Torte Valley) and Choes Vineyard (520M,
Rio Pinhao Valley).
Balanced, well-integrated oak that does not overwhelm the fruit.
Viosinho(Aromatic yet intense and full) for Structure,Arinto for acidity and
freshness(known for its lemon-lime, green apple like fruit), Gouveio (AKA Godello)
for floral and spicy character and minerality. Verdelho(From Madeira) and Alvarinho
(Popular in northern Spain & Portugal) also used in minimal amounts(5%)

Wine #5 - St.Hugo Barossa Shiraz
Barossa Valley is a well known wine-producing region northeast of Adelaide, in South
Australia, also known for Old vines(100 to 120 years) and Shiraz grapes. Having an area of 912
km²

The soil has low-fertility clay loam through to more sandy soils, ranging through grey to brown
to red.The climate ranges from warm on the valley floor to cool at the higher altitudes in the
hills.

Louis Hugo Gramp was born in 1895 in an Australian family that was already in the wine
industry. Creating St.Hugo in 1983, it was made to honor a father and son relationship.

Hugo’s grandfather as an expert in this region started a wine business that would be later
called G Gramp & Sons by Hugo's father Gustav. Planting in the first wines back in 1847

Wine #6 - Reichsgraf von Kesselstatt Piesporter
Goldtröpfchen Riesling
RvK is an estate dating back to 14th Century, set up by the Counts and Knights of Kesselstatt.

It bought over in the 70’s by Guenther Reh and his Daughter Annegret Reh-Gartner, a pioneer at a
time when the industry was still very male-dominated. She led the Winery from 1983 to 2016, till
she passed away, leading them to new heights.

They are situated in the Mittelmosel, and have 50 Ha of Vineyards in the Mosel, Saar & Ruwer.

The grapes are harvested from the Single Vineyard “Goldtröpfchen” (Meaning Golden Droplets).
The soils are based on well drained devonian slate. The vineyards are on steep slopes(30-70%)
alongside the Mosel River.

The Romans were cultivating wines at this site since 371 A.D, and to date there is a Roman Grape
Press on display.
