My name is Kim Murphy, and I will be your coach during this challenge!
I’m a best-selling author, plant-based health coach, and the founder of Simply Plant Based
Kitchen, where I love to help people transition to a whole food plant-based lifestyle that supports
their health & wellness goals.
I know what it’s like to struggle with health and weight and feel like nothing works. I also know what
it’s like to KNOW what to do, but not know HOW to make it work in my life. I can’t wait to give you
the short-cut to success and my hard-fought secrets that I’ve learned over several years of
transitioning to a fully plant-based diet.
During this 5-day challenge, you’re going to learn so much about not only WHAT to eat but HOW to
slowly transition to a plant-based lifestyle that you ENJOY! Because let’s face it, if you don’t enjoy it,
you’re not going to stick with it! And I don’t want this to be another temporary fad or yo-yo diet for
you; I want this to be a new way of life that makes you feel AMAZING so that you’ll want to keep it
going!
Our challenge officially kicks off on Monday, October 28th, and each day, there will be a live
masterclass training session AND a live cooking demo, so you can start taking small steps to
incorporate more healthy recipes into your routine. Don't worry; there will be replays of each day’s
classes available for 24 hours, but I encourage you to show up live as much as possible because I'll
be giving away prizes to live attendees!
I'll be teaching you the step-by-step process I’ve taken thousands of people through to help them
transform their health & lives by eating a plant-based diet.
This workbook is designed to accompany our challenge and support your plant-based journey.
The zoom link will be the same for all sessions and will be emailed out and posted in the FB Challenge
community.
There will be daily prizes for those who show up for the live sessions and the best action-takers in the private
community! You've got to show up & participate to have a chance to win! You will get out of this challenge
only what you put into it.

I earned my Certificate in Plant-Based Nutrition from eCornell and the T. Colin Campbell
Center for Nutrition Studies and my health coaching certification from the Institute of
Integrative Nutrition and have coached thousands of clients to make dramatic
improvements in their health through my program Plant Powered Life.
I live in Cedar Park, TX with my wonderful husband Shawn, and amazing boys Mason &
Hayden. We have two rambunctious huskies, Daphnis & Chloe, and two cuddly lap cats
Marshmallow & Cocoa.
Fun fact: I was a high school band & colorguard director for 17 years and actually taught
with my husband for most of those years!

saving time, & meal prep for each of the recipes we prepare. Use the following grocery shopping list to have
all your ingredients on hand so you’ll have what you need before we start cooking on Monday, Oct 28.

FRESH PRODUCE:
2/3 cups chopped apples
1 large sweet potato
1/2 cup chopped onion
3 tablespoons + 3 teaspoons minced garlic
1/4 cup + 3 tablespoons fresh cilantro
1/4 cup + 3 tablespoons lemon juice
8 cups spring mix or other dark leafy greens (about 16-20 ounces)
1 medium cucumber
1/2 cup red onion, chopped
1 pint cherry or grape tomatoes
1/3 cup mashed banana (about 1 very ripe banana)
extra sliced banana (optional overnight oats toppings)
1 jalapeno, sliced (optional enchiladas toppings)
FROZEN FOODS:
1/2 cup frozen corn kernels
6 Ezekiel brand tortillas found in freezer section (or other oil-free whole grain tortillas)
4 cups frozen cauliflower florets (or fresh)
1/2 cup frozen chopped onion (or fresh)
GRAINS:
1/2 cup Old Fashioned Oats
1 cup dry quinoa (white or tri-color)
16-20 corn tortillas
PANTRY STAPLES:
1 cup cooked black beans, low-sodium
2 - 15 ounce cans of chickpeas, low sodium
5 cups vegetable broth, low-sodium
8 ounces Butler soy curls (find at Natural Grocer’s or Amazon here - https://amzn.to/3YWv6Om) (for soy-
free, you can use mushrooms, black beans, zucchini, or any of your favorite veggies for the enchiladas)

1 tablespoon tahini (find it near peanut butter usually) (omit if allergic)
1/2 cup cashews, unsalted (for nut-free - 1 cup extra cauliflower, cooked potato or white beans)
chopped walnuts (optional mug cake add-ins)
chopped walnuts, pecans, sliced almonds, dates, and/or raisins (optional overnight oats toppings)
BAKING INGREDIENTS:
1 1/2 teaspoons pure vanilla extract
3 teaspoons date syrup or pure maple syrup
1/2 teaspoon + 1 pinch ground cinnamon
pinch ground nutmeg
1/2 teaspoon smoked paprika
1/2 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon ground coriander
2 teaspoons dried oregano
1 teaspoon dried parsley
1/3 teaspoon salt
1/4 teaspoon black pepper
2-4 tablespoons of chickpea flour (or other whole-grain flour)
1/4 cup whole wheat flour (or oat flour for gluten-free)
1 tablespoon unsweetened apple sauce
1/2 teaspoon baking powder
