INTRODUCTION
● Adulteration is a legal term meaning that a food product fails to
meet the legal standards.
● Adulterants are the substances or poor quality products added to
food items for economic and technical benefits.
● Food adulteration refers to the act of intentionally debasing the
quality of food by either adding or replacing the food substances
with undeclared alternative components, or by the removal of
some valuable components.
● Milk adulteration is often performed to intentionally degrade the
quality of milk to make profit illegally.
MILK ADULTERATION
IN INDIA
A study by Food Safety and Standards Authority of
India (FSSAI) showed around one-tenth of processed
milk samples have safety issues while over a third
of the samples, even those of major brands, failed
to meet one quality standard or the other.

due to which the relative motion
between the layers is much more
restricted as compared to water. So, a
drop of pure milk flows slowly leaving a
trail behind whereas adulterated milk
flows immediately without leaving a
mark.
STARCH
DETECTION
After the addition of iodine solution,
there is some transfer of charge
between starch and iodine molecules.
This changes the electron arrangement
and hence the spacing between the
energy level. The new spacing absorbs
visible light selectively and gives the
complex intense blue colour.
