Rate of hydrolysis:
Stock starch solution is 8mg/ml and we used 25 ml, so 25x8 = 200mg starch
at time 0

pH3: As we can see on the graph, it is a horizontal line on the axis of x, which
means the rate is 0

pH4: The % transmission reached 75% at 5 min which means (75%


transmission = 200mg x 0.75 = 150 mg starch hydrolysed) 150 mg was
hydrolyzed in 5 minutes, therefore the rate is 30 mg/min

pH5: The % transmission reached 73% at 5 min which means (73%


transmission = 200mg x 0.73 = 146 mg starch hydrolysed) 146 mg was
hydrolyzed in 5 minutes, therefore the rate is 29.2 mg/min

pH6: The % transmission reached 62% at 5 min which means (62%


transmission = 200mg x 0.62 = 124 mg starch hydrolysed) 124 mg was
hydrolyzed in 5 minutes, therefore the rate is 24.8 mg/min

pH7: The % transmission reached 17% at 25 min which means (17%


transmission = 200mg x 0.17 = 34 mg starch hydrolysed) 34 mg was
hydrolyzed in 25 minutes, therefore the rate is 1.36 mg/min
