are one of the most important vegetables in our year-round garden. Not only are they an easy-to-grow, low-maintenance crop, but theyre also cold tolerant and may be stored right in the soil where theyre grown for a winter-long harvest of sweet, crisp roots. In fact, as temperatures take a nosedive, in late fall, their flavor improves as the starches in the roots convert to sugar. In terms of yield per square foot, carrots are also tops. Because they can be grown so close together and take up so little space, carrots supply a big harvest from a small plot. But perhaps the most important reason to grow carrots is their taste. Watch them closely, though, because birds like them, too. Unlike most other berries (including elderberries), which last for only a few days, these store well in the refrigerator up to 2 weeks.
great for this purpose; most garden-supply stores and catalogs sell them. Gooseberries resemble small kiwifruits in texture and flavor. Different cultivars vary widely in size, color, and sweetness. When fully ripe, the berries are soft, and many are delicious right off the bush. Some people prefer to pick when slightly underripe for tart sauce and pies. Gooseberries 10/7/11 will continue to ripen off the bush if you pick them 3:42 PM before theyre fully flavored. Expect 5 to 10 pounds per mature bush. The red currant is a bit tart, and thus is best when cooked, although as a boy I liked to eat them fresh off the bush. Red currants are high in pectin (until they become overripe), which makes them ideal for jelly making. Use a mixture of ripe and half-ripe red currants for jelly recipes with no added pectin; ripe ones are good for jam. Use slightly overripe ones in juice and wine. The same is true for black currants; the dead-ripe ones are best for juice. Red currant jelly has long been a gourmet treat accompanying meat dishes as well as desserts. Black currant jelly and jam are just as tasty. Ill never forget
With all currants, fruits are produced on flexible stems called strigs. look for cultivars with fruits produced in large clusters; they make for easiest picking.
The red, white, and pink currants ripen fairly uniformly, so wait until about 3 weeks after they begin to color to harvest. Pick a whole strig (stem), being careful not to damage the fruit spurs. Or use the tines of a fork to strip currants from the stem. Black currants dont ripen uniformly along a single strig, so pick berries individually as theyre ready. Avoid picking wet currants, or spread them on a towel to dry before storing, as the fruits mold easily. Expect to harvest 3 to 10 pounds of currants per bush. Thorny cultivars of gooseberries can be a bit tricky to pick. Try wearing a leather glove on one hand to hold up the branches while you pick with the other hand. Long-sleeved rose gloves are
one effective way to strip currants from their strigs is to use the tines of a fork.

dissolved. Add the garlic and dill and let cool to room temperature. into quarters or eighths, depending on the thickness of the cucumber. Pack in as many of the cucumbers as you can fit. Carefully pour in the completely cooled brine. You may not need it all; set aside any extra in a covered jar. Fill the jar to the very top with brine or weight the cucumbers so they are completely submerged in the brine.

the gas bubbles. The lactic acid that is produced gives the fermented pickles a distinct sharp flavor, mellower than the acetic acid in the vinegar that flavors other types of pickles. The lactic acid is also a preservative. is fuzzy looking and should be removed promptly. It is most likely to appear on the walls of the crock and can be removed with a paper towel. If your equipment is cleaned properly before use, and you take care to keep the vegetables submerged in the brine and to keep air excluded from the crock or jar, yeast and molds shouldnt present much of a problem. If growth does happen, dont freak out. once youve removed any colonies of yeast or mold by skimming off, taste your pickle. As long as the pickle tastes good and isnt slimy in texture, it is safe to eat. You will know when a ferment has gone bad. trust yourself.
Storage
It is a rare batch of fermented pickles that exists without a little yeast action. Mold is less common, but still happens on occasion. Yeast is indicated by a whitish foam that forms on the surface of the brine. It should be skimmed off daily thats why you check to prevent softening the pickles or developing off flavors. Mold
Fermentation will be complete in 3 days to 4 weeks. After 4 weeks, all fermented pickles should be stored in the refrigerator. The uSDA recommends canning fully fermented pickles for long-term storage, but this destroys the crisp texture of the pickle. If fermentation went well, you can refrigerate the pickles in the original brine. Alternatively, make up fresh brine, add fresh herbs and spices, and put the pickles in the fresh brine before refrigerating.
