Many universities around the world are proud to have long histories and strong traditions. However, very
few universities can claim to be among the oldest in the world.
Nalanda University, in Bihar, India, was established around 600 BC. It was most likely the world's first
university. In the past, scholars came from Europe, China, and all over India to learn about science,
medicine, the Buddhist religion, and other subjects. The university is in ruins now, but at one time it was
an impressive school with temples, classrooms, libraries, and dormitories.
According to the Guinness Book of World Records, the University of AI-Karaouine in Fes, Morocco, is
the oldest surviving university in the world. It was probably founded in 859 and became a famous place
to study natural sciences. The first university in Europe is definitely the University of Bologna, in Italy.
It was one of the few universities in Europe that were not influenced by religion. Professors were
forbidden from teaching outside the university, and so students came from all over Europe to study with
its famous teachers.

Many of you know that I really love my grandmother’s cooking. My grandmother,
Silvia, is 91 and she lives in a small village near Turin, in Italy. It’s a really beautiful
place. I go there three times a year, and I love spending time with my grandmother in
her kitchen. It’s pretty small, but it has everything you need.
My grandmother’s area of Italy is the home of the Slow Food organization. Slow
Food believe that local food and traditional cooking are very important. Their ideas
are popular – they now have a college in the Italian town of Pollenzo, and offices in
many different countries, including Germany, France, and Japan.
Their ideas are important to my grandmother, too. She makes a lot of pasta dishes, but
today, I’m sharing her recipe for a soup called ribollita. At this time of year, I love
eating lots of green vegetables. That’s why this is one of my favorite winter dishes. It
takes a long time to make – it’s a good recipe for a cold day when you don’t want to
go outside. I hope you enjoy it!

You need:
2 onions about a pound of green vegetables
1 carrot 2 liters of water
1 potato a hard Italian cheese, like Parmesan
a can of tomatoes 4 pieces of bread
a can of beans
First, cut all the vegetables into small pieces. Then, cook the onions and carrots for
about 30 minutes. When they are soft, add the tomatoes, the potato, and the Parmesan

My village was never a big village, nor was it particularly successful or well-known. It
was a place where simple people worked on their land, tending citrus groves and running
