Breakfast

Best Brunch

2 c. milk 1 Brown 1 lb of sausage (set aside to cool)

2 c. grated cheddar cheese


6 slices of bread cut in cubes 2 Beat 6 eggs

1 lb of sausage 3 Add 2 c. milk, 2 c. grated cheddar cheese, 6 slices of bread cut


in cubes, and the cooled sausage
6 eggs

4 Put in a 13x9 in. glass dish

5 Cover & refrigerate overnight

6 Bake uncovered in a 13x9 pan at 350° for 45 min

Main Dishes

Spaghetti & Meat Sauce

1/2 lb ground round 1 Sauté ground round, chopped onions, garlic, and salad oil.

1 c. chopped onions
2 cloves of garlic 2 Add crushed tomatoes, tomato paste, water, oregano, basil,
sugar, bay leaf, salt, pepper, Montreal steak seasoning, and
4 T salad oil whole mushrooms.

1 - 28 oz can crushed tomatoes


1 - 6 oz tomato paste
3 Simmer 1/2 hr to 45 min.

1 cup water 4 Take out 2 cups for meatless sauce - add 1/2 lb browned ground
round to remaining sauce.
1 t. oregano
1/2 t. basil
2 t. sugar
1 - bay leaf
1/2 t. salt
1/8 t. pepper
1/2 t. mortified steak seasoning
2 jars of whole mushrooms

Meatloaf

2 1/2 lbs ground chuck (or 85% lean) 1 Bake in small black roaster pan (let steam escape by putting
something under lid)
chopped onions
1 tsp pepper
2 Bake at 350°F for 1 1/2 hours, drain
1 cup bread crumbs or oatmeal
1 cup ketchup 3 Remove lid, turn oven down to 300°F

1 egg
4 Bake 15 minutes longer

Goulash

1-2 lb pk turkey 1 Add 1 - 29 oz t sauce

1 lg. gr. pepper or 2 med.


1 lg. onion - sliced thin 2 Add 1 - 29 oz seasoned diced tomatoes

3 Add 1 - heaping T mexene

4 Add 1 - 12 oz bag cooked noodles

Tuna Potato Caserole

Sliced Potatoes - cooked & drained 1 Make sauce

3 T butter
1/4 c flour 2 Layer in casserole

2 T mustard
4 c milk
1 t salt
1/8 t pepper
1 can tuna
1 c thinly sliced onion

Turkey Tetrazzini

8 oz pk spaghetti - cooked 1 Remove from heat

3 T margarine
1 small onion 2 Add 1/4 c. fresh grated parmesan

1/4 c. flour 3 Add 2 c. chopped cubed turkey

2 3/4 c. milk
4 1/2 oz jar mushrooms 4 Bake at 350 for about 20 minutes

1 top instant chicken bouillon


5 Remove from heat

1 t. salt
1/4 c. fresh grated parmesan 6 Put spaghetti - sauce - 1/4 c. fresh parmesan & turkey in 2 qt
bowl
2 c. chopped cubed turkey
7 Microwave on high until bubbly & thickened

Swiss Steak

4-1 lb each round steaks (used 4 lbs top 1 300° oven for 3 hours

sirloin boneless also was really good)


1/2 c. flour 2 thicken gravy & pour over steak

1 T oil
3 cups of peeled tomatoes (juice from
2-16 oz cans of tomatoes plus 1/2 can of
the tomatoes chopped)
1 cup beef stock
2 large onions
1 clove garlic

Chicken Pot Pie

You can also add frozen peas. Add to pie crust or fill puff pastry.

4 pieces of chicken breasts 1 Cook chicken breasts in chicken broth.

3 diced carrots
1 bunch of broccoli 2 Cook diced carrots, broccoli, diced potatoes, and diced celery in
chicken broth just until crunchy.
6 diced potatoes
2 stalks of celery diced 3 Add cooked frozen peas.

1 cup cooked frozen peas


4 Melt 1 stick of margarine.
1 stick of margarine
1 tablespoon flour 5 Add 1 tablespoon flour.

1 cup chicken broth


6 Add 1 cup chicken broth.
1 tablespoon soy sauce
1 pint of half & half 7 Add 1 tablespoon soy sauce.

8 Add 1 pint of half & half.

9 Stir sauce into vegetables.

10 Add cubed chicken.

Sloppy Joe’s

2 1/2 lbs. hamburger


1 medium chopped onion
1/2 chopped green pepper
1 teaspoon mustard
2 tablespoons sugar
1 teaspoon vinegar
2 teaspoons Worcestershire
1 3/4 cup ketchup
1/4 cup water

Lasagne

1 1/4 lb ground beef - Brown 1 Add then simmer 1/2 hr

1 clove garlic - minced


1 T basil 2 Use clear pyrex dish

1 t salt 3 Use 3 noodles

1 1/2 lb tomatoes (stewed)


1 - 12 oz tomato paste 4 1/4 of the ricotta

1/2 c. water or a little more


5 1/4 of the mozzarella

3 cups ricotta
1/2 c. parmesan cheese 6 3 noodles

2 T parsley flakes
7 1/4 of the ricotta

2 beaten eggs
1 t salt 8 1/4 of the mozzarella

1/2 t pepper
9 Bake 375 for 45 minutes
mozzarella - 1 lb grated

Chicken Broccoli Caserole

2 whole chicken breasts (4 pieces) 1 Mix together 1 can cream of chicken soup, 1/2 cup mayonnaise,
1/2 teaspoon lemon juice, and 1/2 cup grated cheddar cheese.
cooked and cut into cubes
1 large package frozen chopped broccoli
2 Add to cooked broccoli and chicken.
(don't overcook) then drain
1 can cream of chicken soup 3 Top with 1/2 bread crumbs with 2 tablespoons melted butter and
1/2 cup shredded cheddar cheese.
1/2 cup mayonnaise
1/2 teaspoon lemon juice
1/2 cup grated cheddar cheese

Spaghetti & Meatballs

1 c. chopped onion 1 Saute onion and garlic in salad oil.

2 cloves of garlic
4 T. salad oil 2 Add water, tomato sauce, tomato paste, oregano, basil, bay leaf,
sugar, salt, and pepper.
2 1/2 c. water
29 oz. tomato sauce 3 Simmer on mid heat for 1/2 hr.

12 oz. tomato paste


4 Add meatballs and simmer 1 hr. or simmer sauce 1 1/2 hrs. Add
1 lb. browned ground beef.
1 t. oregano
1/2 t. basil
1 bay leaf
5 Soak bread in water. Squeeze out moisture.

2 t. sugar 6 Combine with remaining ingredients mixing well.

1/2 t. salt
1/8 t. pepper
7 Form into 12 meatballs.

4 slices dry bread 8 Bake about 30 mins. in 350° oven. Add to sauce.

1 1/2 lbs. gr. beef


2 eggs 9 To dry out bread - put in a 250° oven.

1/2 c. romano cheese


2 T. parsley
1 clove garlic (minced)
1 t. oregano
1 t. salt
dash pepper

Mashed Potatoes

half whole milk 1 Cook whole

half heavy cream


2 cloves of garlic 2 Cover with half whole milk, half heavy cream, 2 cloves of garlic,
thyme, 1 big bay leaf

Scalloped Potatoes

Enough potatoes to fill dish about 2/3 1 Preheat oven to 350°F.

1 can cream of mushroom soup 2 Layer potatoes in a large, greased Pyrex bowl.

2 cans milk 3 Mix cream of mushroom soup and milk together.

1/2 stick of margarine


1 3/4 lb Butterball smoked fully cooked 4 Pour mixture over potatoes.

turkey breast (optional)


5 Dot with margarine.

6 Bake at 350°F for 1 1/2 hours.

Green Bean Caserole

1 cup milk 1 Add 1 cup milk slowly to 2 cans of mushroom soup. Heat until
warm.
2 cans of mushroom soup
20 oz pkg frozen french style green
2 Combine 20 oz pkg frozen french style green beans (cooked &
drained), 1 can drained mushrooms & soup. Carefully mix.

1 can drained mushrooms
1/2 can french fried onion rings
3 Add 1/2 can french fried onion rings. Sprinkle with 1/2 cup grated
cheddar.

1/2 cup grated cheddar


2/3 can french fried onion rings 4 Bake at 350° for 20 min.

5 Top with remaining onion rings. Bake 5 min longer.

Au Gratin Potatoes

Batches (tripling) and bake in aluminum roasting pan for 1 1/2 hrs at 350°.

1/2 lb. box of frozen hash browns 1 Put potatoes (hash browns) in bowl and thaw completely.

1/2 c. chopped onion


1 stick melted margarine 2 Brown onions in margarine. Pour over hash browns that have
been broken up.
1-8 oz. carton sour cream
1 can cream of chicken soup 3 Mix sour cream and chicken soup together. Add cheese.

8 oz. cheddar cheese (grated)


4 Mix into hash browns.

5 Bake at 350° for 1 hr.

Spaghetti Salad

Use McCormick Salad Supreme Seasoning instead of Durkee.

1 lb. spaghetti 1 Mix seasoned salt with dressing.

16 oz Italian dressing
Durkee salad seasoning with cheese or 2 Add to spaghetti and vegetables.

12 oz. macaroni (4 cups of uncooked 1 Preheat oven to 400°F.

Coffee Cake

1/2 c. oil 1 Combine oil, beaten eggs, and milk.

2 beaten eggs
1 c. milk 2 Sift flour, sugar, and baking powder.

3 c. flour 3 Add dry ingredients to milk mixture.

1 1/2 c. sugar
4 t. baking powder 4 Put in a 13x9 in pan.

1/2 c. sugar
5 Sprinkle with a mixture of sugar, brown sugar, and cinnamon.

1 T. brown sugar
1 t. cinnamon 6 Bake 25 min. at 375°.

Elaine’s Eclair Cake

1 stick margarine - cut in pieces 1 Bring water and margarine to a boil.

1 cup water
1 cup flour 2 Remove from heat.

4 eggs 3 Add 1 cup flour all at once.

2 large boxes instant vanilla pudding


3 cups milk 4 Beat in 4 eggs, 1 at a time.

1 - 8oz package softened cream cheese


5 Spread on greased 13x9 inch pan (grease with Crisco on the
bottom and part way up sides).
8oz cool whip
Nestle semi-sweet chocolate
6 Bake 30 minutes at 400°F.

7 Beat until creamy 2 large boxes instant vanilla pudding and 3


cups of milk.

8 Add 1 - 8oz package softened cream cheese.

9 Spread over cooled crust.

10 Top with 8oz cool whip.

11 Refrigerate at least 2-3 hours.

12 Drizzle Nestle semi-sweet chocolate over the top.

Carrot Cake

1 1/4 cups canola oil 1 Sift together flour, cinnamon, baking powder and salt.

2 cups flour
1 1/2 teaspoons cinnamon 2 Lightly beaten the eggs.

1 teaspoon baking powder


1 teaspoon salt
2 cups sugar
4 large eggs, lightly beaten
4 cups carrots

Pumpkin Torte

1 1/2 c. graham cracker crumbs 1 Mix graham cracker crumbs, sugar, butter, and cinnamon
together and press into a 9 1/2 x 13 pan (use 3/4 cup for large
1/3 c. sugar glass dish).
1/2 c. butter
3/4 t. cinnamon 2 Cream cream cheese and sugar well and add eggs and milk.

8 oz. cream cheese (room temperature)


3/4 c. sugar
3 Pour over graham cracker crust and bake 20 min. in 350 oven.

2 eggs 4 Mix pumpkin, egg yolks, sugar, cinnamon, salt, and nutmeg in a
saucepan and cook over boiling water. Remove from heat.
1/2 c. milk
2 c. pumpkin (or 1-15 oz. can)
5 Dissolve 1 envelope Knox gelatin in 1/4 c. cold water and add to
above pumpkin mixture. Cool completely.
3 egg yolks
1/2 c. sugar
6 Beat 3 egg whites until stiff (no mixer) and add 1/4 c. sugar. Fold
into pumpkin mixture and pour over cream cheese layer.
1 1/2 tsp. cinnamon
1/2 tsp. salt
1/4 - 1/2 tsp. nutmeg
7 Set in refrigerator for a little while. Spread 9 oz. cool whip over
pumpkin layer.

1 envelope Knox gelatin


1/4 c. cold water
3 egg whites
1/4 c. sugar
9 oz. cool whip

Banana Cake

1 yellow cake mix 1 Mix until moistened, then mix until smooth (2 min. med. speed
on portable mixer)
3/4 c. water
3 medium bananas mashed
2 Bake at 350° for 35-40 min
1 t. b. soda
3 eggs
2/3 c. oil

Brownies

insert toothpick about 3 in.

1 c. butter (2 sticks) 1 Preheat oven to 375°F.

6 oz. unsweetened choc. (Nestle)


2 1/2 c. sugar 2 In small saucepan combine butter & chocolate. Cook over low
heat, stirring constantly until choc. is melted & mixture is smooth.
5 eggs Remove from heat; cool 10 min.

2 t. vanilla
1 1/2 c. flour
3 In large mixer bowl beat sugar, eggs & vanilla (use mixer). Stir in
chocolate. Gradually stir in flour.

4 Pour into greased 13 x 9 in. baking pan.

5 Bake @ 375°F for 30-35 min. #1 Bake for 29 min.

Oatmeal Cookies

1 c. shortening 1 Cream shortening, br. sugar, and sugar.

1 c. br. sugar
1 c. sugar 2 Add eggs and vanilla to creamed mixture and beat well.

2 eggs 3 Mix flour and soda, then add to creamed mixture.

1 t. vanilla
1 1/2 c. flour 4 Stir in quick cooking oats.

1 t. soda
5 Roll into balls using a rounded tablespoon of dough.

3 c. quick cooking oats


6 Put 9 balls to a cookie sheet.

7 Bake on middle rack of oven at 375° for about 14 minutes.

3/4 c sugar
3/4 c dark brown sugar
2 large eggs
1/2 t vanilla
2 c flour
1 tsp vanilla

Judy’s Cheesecake

(Thank you pie filling for topping)

2-8 oz cream cheese, softened 1 Beat cream cheese to soften.

2 cups powdered sugar


2 1/2 cups cool whip 2 Beat in powdered sugar.

1 tsp vanilla 3 Add cool whip and vanilla and beat until creamy.

4 Spread into baked graham cracker crust and top with cherries or
blueberries.

Tammy’s Lemon Lime Birthday Cake

1 pkg lime jello (4 oz size) 1 Dissolve jello in 3/4 cup boiling water.

1 Duncan Hines Lemon Supreme cake


mix 2 Add 3/4 cup cold water. Set aside at room temperature.

1 envelope dream whip (1/2 cup) 3 Bake cake as directed in a 13x9 pan.

1 pkg lemon instant pudding (large)


1 1/2 cups cold milk 4 Cool cake 20-25 min. Poke holes through top of cake with
toothpick.

5 Pour jello into holes.

6 Refrigerate while preparing topping.

7 In a chilled deep bowl blend dream whip, pudding mix, and milk.

8 Top the cake with the topping.

Soups and Salads

Country Vegetable Soup

Replace 7 c water and 4 c V-8 with 8 cups of water and 8 cups of V-8 (use low sodium V-8 46 oz bottle).

8 oz pkg kluski noodles 1 Cook onions and garlic in oil.

6 T oil
1 c onion (chopped) 2 Add water, V-8, and tomatoes with liquid.

1 clove garlic (chopped) 3 Add cabbage, carrots, and bay leaf.

6 c water
4 c V-8 4 Cook for 15 minutes.

2 qts water
5 Add cooked peas and parsley.

1-16 oz can tomatoes (chopped)


3-4 cups shredded cabbage 6 Add kluski noodles and cook until noodles are done.

4 large carrots (thinly sliced)


1 bay leaf
1 c cooked peas
1 T parsley
8 oz kluski noodles

Parisienne Soup

Yield: enough to fill large dutch oven pan

46 oz chicken broth + 3 cups 1 Cook vegetables in broth.

1 bunch fresh broccoli


1 head cauliflower 2 Cook until vegetables are done.

3 carrots, diced 3 Melt 1 1/2 sticks margarine.

3 large potatoes
1/2 cup chopped onion 4 Stir in 3/4 cup of flour.
