Digestion lab

Title: Food test


Aim: To test food samples for reducing sugar, starch, lipids and protein.
Apparatus and Materials:
Bunsen burner
Test tubes
Beaker
Glucose
Benedict’s solution
Biuret’s reagent
Ethanol
Water Bath
Food Test Samples

Method:
Test for reducing sugar
1.) A sample of food was crushed and placed in a test tube with water.
2.) A test tube of water was also placed on the rack
3.) 2cm3 of Benedict’s solution was added.
4.) Place both test tubes in a water bath
5.) The mixture was shaken and the observation was recorded

Test for Starch


1.) A potato was crushed and placed into a test tube
2.) A test tube of water was also placed on the rack
3.) 4 drops of Iodine solution was added to both test tubes
4.) The mixture was shaken and the observation was recorded

Test for lipids


1.) A sample of food was crushed and placed in a test tube
2.) A test tube of water was also placed on the rack
3.) 2cm3 of ethanol was added
4.) The mixture was shaken vigorously
5.) 2cm3 of water was added
6.) The observation was recorded

Test for protein


1.) A sample of food was crushed and placed in a test tube
2.) A test tube of water was also placed on the rack
3.) An equal volume of potassium hydroxide solution was added
4.) Two drops of biuret reagent was added
5.) The observation was recorded

State the inference and observation seen for each test done. Explain the biochemical reactions
occuring in each test which caused the colour changes seen.
Example:
The test for reducing sugars produced a coloured precipitate with Benedicts solution. In the
Benedict's test, a reducing sugar reacts with the copper ions (Cu2+) in Benedict's reagent,
causing the copper ions to be reduced to cuprous ions (Cu+) which then precipitate out as a
brick-red colored copper(I) oxide, indicating the presence of a reducing sugar.
