Caractère represents the fusion of two of the

most prestigious culinary cultures in the world,


namely the French and the Italian one.
The menu changes constantly as it uses only
seasonal products, offers traditional dishes such
as Pithivier or Risotto, alongside dishes created
by the vision of Chef Emily Roux and Diego Ferrari
and like Celeriac Cacio e Pepe.

The wine list reflects the same ideology as the


menu, focusing on wines of Italian and French
heritage, with a particular eye to sustainability.
Theselection created by Marco Nardi reflects his
passion for wine made "as it once was",
without chemical additives and with the least
possible intervention

First created for Count Camillo Negroni
in 1919 at Florence’s Café Cesconi, the
Negroni cocktail was actually predated
by the Milano-Torino, a mix of bitter,
Barry Campari and sweet vermouth that
evolved into the Americano with the
addition of soda water. Legend has it
that around 1920, at the Count’s
favourite Florentine bar, he requested
something stronger; the soda was
replaced with Gin, and the Negroni
Cocktail was born.

The history of PIWI grape varieties dates back to crosses
between different species of Vitis developed in France
between 1880 and 1935.
Piwi varieties are:
The result of crossing grape varieties resistant to fungal
diseases with traditional varieties
PIWI stands for: “Pilzwiderstandsfähige Reben”, which
translates quite literally to “fungus-resistant”. These grape
varieties show particularly strong resistance to the vine

While large Champagne houses such
as Mumm, Moët et Chandon and Veuve
Clicquot may use grapes from as
many as 80 different vineyards in

consistent house style, Grower
Champagnes tend to be more terroir-
focused, sourced from a single
vineyard or closely located
vineyards around a village, and
made with grapes which vary with
each vintage. Today there are over
19,000 independent growers in the
Champagne region, accounting for

Domaine de la Grange des Pères


Having worked at Coche-Dury, with Gérard Chave in
Hermitage, and Eloi Dürrbach at Domaine Trévallon in
Provence, Laurent Vaillé had the pedigree to head out on
his own. He sourced cuttings from the latter two
producers, and in 1989 planted 9 hectares of red grapes,
with just a single hectare of white grapes, on a hillside
just down the road from Mas du Daumas Gassac. Here, he
worked the vineyards according to organic and biodynamic
principles, without being certified, and made a single red
from Syrah and Mourvèdre, with smaller proportions of
Cabernet Sauvignon and Counoise, and a single white from
Roussanne, Marsanne and Chardonnay. Laurent passed away at
the age of 57 in 2021. Already incredibly soughtafter, his
final vintages have become like gold dust.

Aging Barolo in French barrels was the first
innovation brought to Piedmont by Elio Altare and his
friends – known as the “Barolo Boys”.
The “Barolo Boys” were a group of Italian winemakers
in the Barolo region who, beginning in the late 1950s,
revolutionised the areas winemaking methods and
culture. They worked to make Barolo less tannic and
more approachable, using new methods like reducing the
number of grapes harvested and using a new type of
barrel.

Palette is an ancient enclave of viticulture whose vine holdings were developed in the
Middle Ages around Château Simone when it was a Carmelite monastery. The estate
was acquired by the Rougier family in 1830 and it almost quali ed as a monopole
