Grape Composition, Blending, Pricing, and Oak Usage for Our Wine

1. Grape Composition and Blending

 Grape Varieties:

 Cabernet Sauvignon (35%): Provides structure, depth, and dark fruit


flavors.

 Shiraz (35%): Adds richness and spice, enhancing complexity.

 Marselan (30%): Emphasized for its vibrant fruitiness and freshness.

 Production Practices:

 Grapes are produced under low yield conditions, carefully sorted with
green harvesting practices to ensure high quality.

 Given the extreme weather conditions in Xinjiang, drip irrigation may be


necessary for some vintages.

 Cold Soaking and Fermentation Techniques:

 All components will undergo a 5-day cold soak prior to fermentation to


enhance color extraction and preserve fresh fruit aromas.

 Marselan will utilize semi-carbonic maceration, where 20% of the


grapes are kept as whole bunches and fermented with destemmed grapes
to generate distinctive fruitiness.

 Blending Process:

 the blending process is carefully executed to achieve a harmonious


balance between the different grape varieties. Each varietal is fermented
separately to preserve its unique attributes before being blended in
optimal proportions. This approach allows us to create a wine that
showcases complexity while remaining approachable.

 Aging in Oak: The duration of oak aging is carefully monitored to achieve


the desired balance between fruit expression and oak influence.
Depending on the vintage and grape composition, wines may be aged in
oak for anywhere from 12 months to 18 months.

 25% of Cabernet Sauvignon, 25% of Shiraz, and 20% of Marselan


will age in 100% new French oak barrels for 18 months.

 The remaining wine will be blended together in used French oak


barrels (previously used for two years) for 12 months.

 Integration with Wine Profile: The use of oak barrels complements the
grape composition by adding layers of flavor while allowing for micro-
oxygenation during aging. This process softens tannins and enhances the
overall mouthfeel of the wine.

 Aging Process
 After aging in oak for 12-18 months, the wine will be bottled and rested
in our cellar for an additional 24 months. This extended maturation
period ensures that the mouthfeel is very approachable while softening
tannins, resulting in a smooth and balanced final product.

2. Pricing and Cost Structure

 Cost Analysis:

 Production Costs: The cost of producing our wine includes vineyard


management, harvesting, fermentation, aging, bottling, and labeling. Key
factors influencing production costs include labor, equipment, and raw
materials.

 Cost of Grapes: Sourcing high-quality grapes is essential. The cost varies


based on the grape variety and quality, with indigenous Xinjiang grapes
typically being more cost-effective due to local cultivation.

 Pricing Strategy:

 Retail Pricing: Our pricing strategy aims to position our wine


competitively within the premium segment. The retail price will reflect the
quality of the wine while remaining attractive to consumers.

 Distributor Margins: We consider distributor margins when setting


prices to ensure that our partners can achieve profitable sales while
maintaining market competitiveness.

 Bulk Buyer Discounts: Importers should set retail prices that allow
discounts for larger buyers to facilitate bulk sales.

 Middleman Commission: To ease our entry into the U.S. market, we will
provide a 5% commission to middlemen who successfully introduce us to
suitable partners.
