5.2 Read the following extract below:

In a shooting accident the abdomen of a person was shot away.


He recovery but was left with a hole in his stomach.

To prevent that food and juices pour out, he had to wear a


bandage. A scientist investigated the digestion process in the
stomach. He tied a string around a piece of meat and inserted it
through the hole in the stomach. At frequent intervals, the meat
was removed to find out how long it would take for the meat to be
digested. Other food products were also used in the investigation.

In a series of investigations with different food sources, the gastric


juices from the stomach were used and were placed into test tubes
and covered with gastric juice at 38oC.

The digestion time of the different food sources were compared


with the digestion time in the stomach.

The results are presented in the table below.
