Spicy Bacon-Chicken Mac & Cheese Green Beans Meal 2 Grill Option
INGREDIENTS: Side dishes are in ITALICS 1.5+ lb pkg boneless chicken breasts, halved 12 slices bacon Pickled jalapeo slices 6 slices pepper jack cheese (Salt/pepper) 1 box mac & cheese 1 lb green beans, trimmed 11 lbs ground beef 1 small onion, chopped ( c breadcrumbs, 1 large egg beaten) 2-3 T salsa (1 t salt, 1 t prepared mustard) 4-6 burger buns 16 oz strawberries 1 bag tortilla chips Salsa 2 - 3 split chicken breasts, cooked and chopped 10 oz pkg frozen seasoning blend 10 oz can cream of chicken soup, undiluted 10 oz can cr of mushroom soup, undiluted 10 oz diced tomatoes and green chiles (1 t chili powder, t garlic salt) 10 corn tortillas, 6 inch 8 oz shredded cheddar, divided 16 oz broccoli cuts 16 oz ziti 1 onion, chopped 1 lb Italian sausage taken out of casings (2 t minced garlic, 2 t Italian seasonings) 2 24 oz jars pasta sauce 6 oz sliced provolone cheese 1 c sour cream 8 oz shredded mozzarella 1 bag salad (Favorite dressing) (1 T cornstarch, 1 T cold water, c sugar) ( c soy sauce, c cider vinegar) (1 t minced garlic, t ground ginger) 8 10 chicken thighs 16 oz pkg Japanese blend veggies (Oil, soy sauce, salt/pepper) White rice enough for your family. 10 oz yellow rice mix 2 -15 oz cans black beans 6 T lime juice (2 t chili powder, t ground cumin) 3 T chopped fresh cilantro Sour cream 2 - 3 tomatoes chopped 1 cucumber, peeled & chopped (2 t olive oil, 2 t red wine vinegar, salt, pepper) 24 white dinner rolls 1 pkg deli-sliced ham 6 oz pkg Swiss cheese slices, ( c mayo, c Miracle Whip) (1 T poppy seeds, 1 T mustard) ( c butter melted, 1 t dried onion flakes) ( t Worcestershire sauce) 1 bag potato chips 16 oz bag baby carrots (Ranch dressing)
INSTRUCTIONS: Side dish ingredients are in ITALICS Lay out 2 slices bacon & top with cheese then jalapeo. Top with chicken. Wrap bacon around chicken and place seam-down in o baking dish. Repeat for remaining chicken. Bake @ 350 for 30 min until cooked through. Prepare mac & cheese according to pkg directions. Steam green beans and season to taste. Combine all ingredients except buns. Shape into patties. Grill outside or in grill pan until done. Place on buns and top as desired. Serve fruit and chips & salsa on the side.
To cook chicken breasts: In a sauce pan, cover chicken in water. Bring to a boil; cook 20 min. Drain; cool. Pull meat off and chop. Stir together first 7 ingredients, through garlic salt. Tear tortillas into 1 inch pieces; layer one-third of tortilla pieces in bottom of a lightly greased 13 x 9 inch baking dish. Top with one-third of chicken mixture o and c cheese. Repeat layers twice. Bake at 350 for 32 minutes or until casserole is thoroughly heated and bubbly. Steam broccoli & season to taste. Prepare pasta according to pkg directions. In large skillet, brown onion & sausage. Add garlic & cook 1 min. Add sauce & Italian o seasonings; simmer 15 min. Preheat oven to 350 . Grease 9x13 dish. Layer ziti, sauce, Provolone cheese, sour cream, remaining ziti, remaining sauce & top with mozzarella. Bake 30 min until cheeses are melted and slightly browned. Toss salad with favorite dressing and serve on the side.
Meal 6 Black Beans and Yellow Rice Tomato and Cucumber Salad
Combine cornstarch, cold water, sugar, soy sauce, vinegar, garlic, & ginger in small saucepan over low heat. Let simmer, stirring frequently, until sauce thickens and bubbles. Place thighs in lightly greased 9x13 dish. Brush chicken with sauce on both sides. Bake o @ 425 for 30 min. brushing with sauce remaining sauce every 10 min. Turn pieces and bake an additional 30 min, or until cooked through, continuing to brush with sauce every 10 min. Stir fry veggies in hot oil in frying pan until crisp-tender and drizzle with soy sauce. Serve with white rice. Cook rice according to package directions; keep warm. Drain beans, reserving 4 T liquid. Combine beans, reserved liquid, lime juice, chili powder and cumin in a saucepan. Cook over medium heat until heated through; stir in 2 T cilantro. Serve beans over rice and sprinkle with remaining cilantro. Garnish with sour cream. Toss tomatoes and cucumber in oil and vinegar. Season with salt and pepper to taste. Serve chilled.
Meal 7 Ham & Cheese Sliders Potato Chips Carrots & Ranch
Combine mayo & Miracle Whip. Spread on both sides of the center of each roll. Place a slice of ham & slice of Swiss on each roll. Close rolls & place on large jelly roll pan. Whisk together remaining ingredients and pour evenly over sandwiches. Let sit 5 o 10 min until butter sets slightly. Cover & bake @ 350 for 12 15 min; uncover and cook 2 more min. until crisp. Serve warm. Serve potato chips, carrots & ranch on the side.
