CHAPTER I
BACKGROUND

Diarrheal disease is still a public health problem in


developing countries such as Indonesia, due to its
morbidity and mortality are still high.

Cutlery is one of the factors that play a role in transmitting


the disease, for cutlery were not clean and contain
infectious microorganisms through food (foodborne
diseases) especially diarrheal disease

Quality cutlery used in the management and presentation of


food is closely related to the washing process is done.

Pineapple fruit itself contains a proteolytic enzyme bromelain


which is more abundant in stems. The enzyme can break down
or break down proteins and anti-bacterial properties
