WHICH CAME FIRST –
THE CHICKEN OR THE
EGG?'
IT’S A SIMPLE QUESTION.

But if the egg came

first, then who laid it?
After all, eggs come
from chickens. And if
the chicken came first
then where did it come
from? Because chickens
hatch from eggs. So
which came first?
from: Discover Wildlife

It's pretty safe to say that the egg came first,

because if there had been no egg, there would have
been no chicken. Chickens are birds, and we know
that birds evolved from reptiles, so we can say that
the first bird hatched from an egg that was laid by a
reptile that was very similar to, but not quite, a bird
itself.
from: Discover Wildlife
In fact, any animal that is multicellular and practises
sex produces what are properly called eggs. Though
their name means ‘first animal’, protozoans are not
animals and don’t produce eggs.
Exactly what the first true animal was is unknown.
What we do know is that it lived around one billion
years ago deep in the Precambrian – and it produced
eggs.

PHYSICAL STRUCTURE
OF AN EGG
Introduction
We normally distinguish 3 parts of an egg:
the shell, the egg white and the egg yolk,
but a closer scrutiny reveals a much more
detailed structure of an egg.
SHELL
the egg’s outer covering. The shell,
accounts for about 9 to 12% for its
total weight depending on egg
size. The shell is the egg’s first line
of defense against bacterial
contamination.
AIR SHELL
this is the empty space between
the white and shell at the large end
of the egg which is barely existent
in newly laid egg.
ALBUMEN/ EGG WHITE
Albumen, also called egg white,
accounts for most of an egg’s liquid
weight, about 67%.
CHALAZA
This is the ropey strands of egg
white at both sides of the egg.
Which anchor the yolk in place
in the center of the thick white.
GERMINAL DISC
This is the entrance of the latebra, the
channel leading to the center of the yolk. The
germinal disc is barely noticeable as a light
depression on the surface of the yolk.
GERMINAL DISC
When the egg is fertilized, sperm enter by
way of the germinal disc, travel to the center
and a chick embryo starts to form.
YOLK
The yolk or the yellow to yellow-orange potion
makes up about 33% of the liquid weight of the
egg, The egg yolk is formed in the ovary. On the
surface of the yolk, there is small white spot about
2mm.

• Ash is composed of minerals and because
they are elements they will always exist
in the exact form as they are.
• Once our body digests the carbohydrates,
proteins, vitamins and fats and they burn
out physiologically, ash is what is left

are the minerals (Calcium, Potassium,

many minerals.
EGG
QUALITY
Egg Quality
Egg Quality has two general
components:

• SHELL QUALITY (EXTERIOR QUALITY)

2. INTERIOR EGG QUALITY
HOW DO SAY IF THE SHELL
OF AN EGG IS GOOD OR
BAD?
While the egg is still in its shell, check that
the shell is not cracked, slimy, or powdery.
Sliminess or cracks
can indicate the presence of bacteria,
while a powdery appearance on the shell
may indicate mold.

Digital Haugh
tester
HAUGH (HAA) UNIT

• The Haugh unit is a measure of the internal

quality of an egg.
• The test was introduced by RAYMOND
HAUGH in the year 1937
HAUGH UNIT
• It is considered to be one of the most
significant measures of egg quality next to
other measures such as eggshell thickness
and eggshell strength
• When calculating Haugh unit, one should
measure the height of the thick albumen
that immediately surrounds the yolk.
EGG
GRADING
Egg Grading
Grading is a form of quality control used
to classify eggs for exterior and interior
quality
Egg Grading
In the PHILIPPINES,
the grade designations are A,B,C,and D.

WHY ARE EGGS
DIFFERENT SIZES?
AC C O R D I N G T O :
THE NELLIES KINDNESS CREW
• Hen age: When hens are still learning how to lay, they often produce eggs
that fall into the peewee and small weight classes. However, young hens
have also been known to lay jumbo eggs (sometimes with double yolks!).
When hens are in the prime of their laying days, they usually produce
medium and large eggs.

• Hen breed: Some hens are bred to lay larger eggs, while other
breeds tend to lay very small eggs. In general, the larger the hen's
body, the larger the eggs she'll lay.

• Time of year: When the weather cools down and the days
get shorter, a hen's production naturally slows. During the
coldest months of winter, her eggs may be slightly smaller
than usual.
