MENU WRITING

A MENU

A menu is the list of


dishes to be served at
a meal.
Types of Menu
The two main types of menu are
A la carte
Table d’ Hote
An a la carte refers to food that can be ordered
as separate items, rather than part of a set meal.
Table d’ Hote refers to foods that are served as
a complete meal at a fixed price.
Examples
Examples of restaurants with these menu include

A la carte - school cafeteria/ lunch prices are different


from drink

Table d’ hote- KFC one set cost for a meal consisting of


chicken, fries and drink
Writing a table d’ hote menu
Step 1
List the food in order in which they should be served.

A meal usually follow the order:


Appetizer
Main course & accompaniment
Dessert
Beverage -(is not a course)
Example of the Table d’ hote menu
Appetizer - Chicken Broth

Main course- Roasted Chicken -Protein


Rice and Peas- Starch/ carbohydrates
Sauteed Bok/Pak
Choy & Baby Carrots-Cooked vegetables
Tossed Vegetables -Raw vegetables

Dessert- Chocolate Mousse

Beverage- Lemonade
Next step
Mention the dish by its specific name.
Example: Omelette
Bread

State the method of preparation.


Example: Boiled Eggs

Meals in courses
A one- course meal usually has a main course only.
◦ PARTS OF THE MAIN COURSE
Protein dish – this is the main dish. It is the main of the meal and consists of a protein rich food
such as meat, fish or poultry.

Carbohydrate dish- This is usually an accompaniment for the protein dish and consists of any
types of staple food.

Vegetable dish- Cooked Vegetables


Raw vegetables or salad.

The Dessert

A dessert is a sweet dish of cake,


pudding, fruits, pastries etc., usually
served with an accompanying sauce,
cream or ice cream to make it more
moist.
An Appetizer

An appetizer consists of small pieces of tasty


food, such as, stuffed eggs, meatballs, shrimp
cocktail, or soups to stimulate the appetite and
make digestion of the meal easier.
The three-course meal

A three course meal usually includes

Appetizer
Main course
Dessert
